FRUIT AND CREAM PHYLLO PIE
This unique pie has a light and crispy phyllo crust. You can use the fruit of your choice.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium mixing bowl combine cream cheese, sugar, egg, and vanilla extract. Beat until light and fluffy. Set aside.
- Remove thawed phyllo from package and unroll. Keep stack covered with a damp towel at all times to prevent drying out and tearing. Separate one sheet of phyllo from stack, brush lightly with melted butter or margarine, and place sheet in a 9-inch pie pan. Let edges of dough hang over sides of pan. Continue this process with 4 more sheets of phyllo dough. Spread cream cheese mixture evenly into pan.
- Spread fruit filling over cream cheese layer. Fold overhanging phyllo dough over fruit layer. Brush another sheet of phyllo with melted butter or margarine and lay over top of pie. Continue this process with remaining 4 sheets of phyllo.
- Tuck edges of top phyllo sheets inside pie between pan and filling, sealing well. Cut small slits in top layers of dough to allow steam to escape.
- Bake in preheated oven for 45 to 55 minutes, ensuring that phyllo doesn't get too brown, just golden. Cool completely before serving. Refrigerate leftovers, if any ...

FRUIT AND CREAM PIE
I was surprised I couldn't find this recipe on 'Zaar. It's an old stand-by from a pamphlet called "More Jello Recipes". You can vary the flavour of this pie by changing the flavour of the Jello and matching it with an appropriate fruit. Example - strawberry Jello & strawberries - you get the idea. You can also subsitute sugar-free Jello. NOTE: Cooking time does not include chilling time.

- Mix cream cheese and sugar until blended. Stir in the Cool Whip. Spread in bottom of graham pie crust. Refrigerate.
- Mix Jello, pudding and water in a pan until smooth. Cook over medium heat, stirring constantly, until mixture just comes to a boil. Remove from heat and cool 5 minutes. Stir in fruit. Spoon over cream cheese layer.
- Refrigerate 4 hours, or until set. Garnish with additional Cool Whip.

A large pie with 2 types of fruit and a sour cream topping. Any combination of fruit fillings may be used in this pie. Apple, blueberry, peach or cherries all work well.

- Preheat oven to 375 degrees F (190 degrees C).
- Mix flour and salt together. Pour milk, sugar and oil into one measuring cup, and add all at once to flour. Stir until mixed. Pat dough onto the bottom and sides of a 2 quart casserole dish.
- Spread fruit filling over dough and sprinkle with cinnamon. In a medium bowl, combine eggs, sour cream and vanilla. Mix until smooth and pour over fruit filling. Sprinkle top with cinnamon.
- Bake in the preheated oven for 45 to 60 minutes, or until topping is set. Allow to cool and store in the refrigerator.

CREAM CHEESE AND FRUIT PIE
Cool treat for Summer. You can use various types of canned pie filling. Our family favorite is cherry. This goes into pie crust that is cooked. I have posted pie crust recipe that my family uses to make this great treat.

- Prepare Dream Whip according to directions and set aside.
- Blend cream cheese with sugar until fluffy. Fold in almost all of Dream Whip.
- Put banana slices on bottom of cooked crust. Pour creamy mixture into shell. Top with 1/2 can cherry (blueberry, flavor of your choice) pie filling. Top with reserved Dream Whip and chill 2 hours before cutting.

- 1. Carefully spread cherry or raspberry ice cream in crust. Sprinkle with half of almonds. Freeze at least 2 hours or until firm.2. Spread peach ice cream over almonds. Sprinkle with remaining almonds. Freeze at least 3 hours or until firm.3. Let stand at room temperature for 15 minutes before cutting. Garnish as desired. Store in freezer.*NOTE: To toast almonds, spread evenly on baking sheet. Bake at 350°F for 5 to 10 minutes or until light golden brown, stirring once or twice.
