Yes, I tell you this can be done and NOT be soggy when defrosted! I have been having my students make these for years now....nothing new....so I was surprised that it was not listed on Zaar! Cooking time is actually freezing time.

2 slices whole grain wheat bread
1 tablespoon butter, soften (not melted)
2 tablespoons peanut butter
2 teaspoons jelly (can use honey)

Steps:

  • Spread soften butter over inside of each bread slice. Cover to edges. This does not have to be thick.
  • Spread peanut butter over the butter but NOT all the way to the edge.
  • Spread jelly over the peanut butter.
  • Close sandwich. Do not cut!
  • Place into a sandwich bag. Close, place flat in freezer.
  • When frozen, (about one hour) remove from freezer, open small part of bag and squeeze out air. Reseal.
  • Place sandwich bag in a freezer bag, squeeze out air and return to freezer.
  • These sandwiches can remain frozen for some time. I have had then after four month and they tasted as good as freshly made.
  • My students usually make ten at a time. They pop them in their bags and it is defrosted by lunchtime!

My kids love uncrustables but I think they are too expensive. So I started making my own. I don't cut the crust off mine but it's the same concept. I make these during my OAMC session.

24 slices bread
1 (16 ounce) jar peanut butter
1 (12 3/4 ounce) jar jelly

Steps:

  • Apply peanut butter to one side of each slice of bread. Make sure you you spread the peanut butter out to the edges of the bread.
  • Apply the jelly to one slice of the bread but keep jelly about a half an inch away from the edge of the bread on all sides. By doing this, the peanut butter will "seal" the sandwich and it will not get soggy.
  • Put the sandwich together.
  • Wrap and place in freezer bags.
  • When ready to eat, pull amount of sandwiches needed and let thaw in fridge or in lunch box.
  • You can use whatever type bread, peanut butter and jelly you like. The combinations can be endless.

8 slices white bread (or your choice of cinnamon swirl, raisin, apple, etc.)
1/4 to 1/2 cup peanut butter
4 to 6 teaspoons grape jelly (or your choice of jelly, jam, or preserves)
1 1/2 cups all-purpose flour
3/4 cup cornstarch
41/2 teaspoons baking powder
12 ounces carbonated energy drink (recommended: Red Bull) or seltzer water, for carbonation
1 quart canola oil (approximately, as needed for deep-frying)
1 teaspoon ground cinnamon
2 tablespoons sugar

Steps:

  • Lay out the slices of bread and spread approximately 1 tablespoon peanut butter on each of 4 slices and approximately 1 teaspoon jelly on each of the other 4 slices. Pair them together to make peanut butter and jelly sandwiches.
  • Heat canola oil in a deep-fryer to 375 degrees F. Mix flour, cornstarch, and baking powder and add energy drink in a stream while whisking constantly. Dip sandwiches into the batter or ladle batter over them.
  • Deep-fry until golden brown. Drain on paper toweling. Mix cinnamon and sugar in a bowl and sift onto fried sandwiches while they are still hot. Slice the donut sandwiches into diagonal quarters while still warm, and serve.

2 teaspoons butter
2 slices white bread
1 teaspoon peanut butter
2 teaspoons any flavor fruit jelly

Steps:

  • Heat griddle or skillet to 350 degrees F (175 degrees C).
  • Spread butter on one side of each slice of bread. Spread peanut butter on unbuttered side of one slice of bread, and jelly on the other. Place one slice, buttered side down on the griddle. Top with other slice, so that peanut butter and jelly are in the middle. Cook for 4 minutes on each side, or until golden brown, and heated through.
