1-3/4 cups cold milk, divided
1 teaspoon instant coffee granules
1 package (8 ounces) cream cheese, softened
1 package (3.9 ounces) instant chocolate pudding mix
1 carton (8 ounces) frozen whipped topping, thawed
8 cream-filled chocolate sandwich cookies, crushed
Additional cream-filled chocolate sandwich cookies, optional

Steps:

  • In a microwave-safe dish, heat 1/4 cup milk and coffee granules for about 30 seconds; stir until coffee is dissolved. Add remaining milk; mix well. , In a small bowl, beat the cream cheese, pudding mix and milk mixture until thickened., In parfait glasses, layer half of the pudding mixture, whipped topping and crushed cookies. Repeat layers. Top with whole cookies if desired.

Dutch process cocoa is the secret to rich chocolate flavor in this recipe, which may be frozen and scooped like ice cream or enjoyed as a frosty spoon drink. Although it takes just minutes to make, start the recipe one or two days in advance to allow for freezing time.

1/2 cup (unsifted) unsweetened Dutch Process Cocoa
3/4 cup sugar
3/4 cup plus 1/4 cup water
4 teaspoons instant espresso powder or freeze dried instant coffee
2 cups low fat (2 percent) milk

Steps:

  • Combine cocoa and sugar in a medium saucepan. Whisk in 3/4 cup of the water, a little at a time. Bring the mixture to a simmer. Simmer for 2 minutes, stirring constantly. Remove from heat and stir espresso powder and milk. Strain into a shallow pan. Freeze several hours until hard.
  • Break the frozen mixture up with a fork and place the chunks in the bowl of a food processor. Add the remaining 1/4 cup of water and process until no lumps remain and the mixture is thick and slushy and lightened in color. Serve at once in goblets to be eaten with a spoon, or refreeze overnight and scoop like sherbet to serve.

CREAMY MOCHA CHOCOLATE AND RASPBERRY PARFAIT

Two 10 1/2-ounce containers Mori-Nu lite, silken tofu
3 tablespoons maple syrup
1/4 cup packed brown sugar
2 tablespoons Tia Maria or other coffee liqueur
1/3 cup plus 1 tablespoon good quality cocoa powder
2 teaspoons instant espresso
1/4 teaspoon ground cinnamon
2 1/2 cups fresh raspberries, well rinsed, or frozen, thawed
1/3 cup fresh orange juice
Juice of 1/2 lemon
2 tablespoons granulated sugar
1/2 cup raspberries
4 mint leaves

Steps:

  • To prepare the mousse, combine all ingredients in the bowl of a food processor and puree until creamy, about 2 minutes. Transfer the mousse to a bowl, cover, and refrigerate.
  • To prepare the raspberry sauce, combine 1 1/2 cups of raspberries and the remaining ingredients in the bowl of a food processor and puree until smooth. Strain the raspberry sauce through a fine strainer (rubbing with a rubber spatula to work through the mesh) into a small bowl. Mix in the remaining 1 cup of whole raspberries, cover, and refrigerate for about 15 minutes.
  • Spoon a 1-inch deep layer of mousse into long, narrow parfait glasses or small glass dessert bowls, spreading out evenly. Top with a layer of raspberry sauce. Repeat, ending with a layer of mousse. Chill for at least 20 minutes. Garnish with some whole raspberries and a mint leaf.

1 1/2 cups chilled very strong brewed coffee or espresso, or coffee concentrate, recipe follows
1 cup whole milk, or more to taste
1/2 cup semisweet chocolate chips, plus more for topping if desired!
1/4 cup sweetened condensed milk
1/4 cup chocolate syrup, plus more for drizzling
1 teaspoon vanilla extract
1/4 cup half-and-half, optional
Whipped cream, for serving
1 pound ground coffee (a good, rich roast)

Steps:

  • Add the coffee, milk, chocolate chips, sweetened condensed milk, chocolate syrup and vanilla to a blender. Top off the blender with ice and blend until smooth and icy, with tiny chocolate bits throughout. (Add some half-and-half if you'd like it to be a little richer and creamier.)
  • Serve in glasses with whipped cream on top, and drizzle the whipped cream with chocolate syrup or dot with more chocolate chips.
  • In a large container, mix the ground coffee with 32 cups (8 quarts) cold water. Cover and allow to sit at room temperature 8 hours or overnight.
  • Line a fine-mesh strainer with cheesecloth and set over a pitcher or other container. Pour the coffee/water mixture through the strainer, allowing all the liquid to run through. Discard the grounds. Place the coffee liquid in the fridge to chill. Use as needed.

1 tablespoon shaved chocolate, for topping

Steps:

  • To a blender, add the coffee, vanilla extract, pudding powder, chocolate syrups, chocolate chips and half-and-half. Add 1 cup ice and blend until incorporated and to your desired consistency.
  • Pour into your preferred glass and top with whipped cream. Drizzle with the syrups and top with the shaved chocolate.

1 cup semisweet chocolate chips, divided
1/2 teaspoon shortening
Chocolate jimmies
3 tablespoons half-and-half cream
2 large egg yolks, lightly beaten
2 teaspoons vanilla extract
1 teaspoon instant coffee granules
LATTE CREAM:
2 teaspoons instant coffee granules
1-1/2 cups heavy whipping cream, divided
1/3 cup confectioners' sugar

Steps:

  • In a microwave, melt 1/2 cup chocolate chips and shortening; stir until smooth. Dip rims of four parfait glasses in chocolate; sprinkle with jimmies. Let stand until set., In a small saucepan, combine the cream, egg yolks, vanilla, coffee granules and remaining chocolate chips. Cook and stir over medium heat until mixture reaches 160° or is thick enough to coat the back of a metal spoon. Cool, stirring several times., In a small bowl, dissolve coffee granules in 1 tablespoon whipping cream. Add remaining cream; beat cream mixture until it begins to thicken. Add confectioners' sugar; beat until soft peaks form. Fold 1-1/2 cups of cream mixture into cooled chocolate mixture. , Spoon about 1/4 cup chocolate mousse into each parfait glass; spoon or pipe about 1/4 cup cream mixture over mousse. Repeat layers. Refrigerate for at least 2 hours.
