1 can (14 ounces) sweetened condensed milk
1 can (21 ounces) peach or cherry pie filling
1 can (15 ounces) mandarin oranges, drained
1 can (20 ounces) crushed pineapple, drained
2/3 cup chopped pecans or walnuts
1 carton (8 ounces) frozen whipped topping, thawed
Lettuce leaves, optional

Steps:

  • In a large bowl, combine milk and pie filling. Add oranges, pineapple and nuts. Gently fold in whipped topping. Spread in a 13-in. x 9-in. pan. Cover and freeze. Remove from the freezer 15 minutes before serving. Cut into squares; serve on lettuce-lined plates if desired.

1 (6 ounce) can frozen orange juice concentrate, thawed
1 (6 ounce) can frozen lemonade concentrate, thawed
4 bananas, sliced
1 (20 ounce) can crushed pineapple with juice
1 (10 ounce) package frozen strawberries, thawed

Steps:

  • Dissolve sugar in the water. Add orange juice, lemonade, bananas, crushed pineapple with juice, strawberries and mix well. Pour into 9x13 inch glass pan. Freeze until solid. When ready to serve, let it sit out for about 5 minutes before attempting to cut.

1 (8 ounce) package cream cheese, softened
1 cup sour cream
¼ cup white sugar
¼ teaspoon salt
1 (8.5 ounce) can crushed pineapple
1 banana, diced
1 (16.5 ounce) can pitted dark sweet cherries, drained
1 (15 ounce) can mandarin oranges, drained
1 cup miniature marshmallows
cooking spray

Steps:

  • Beat cream cheese in a large mixing bowl using an electric mixer until fluffy. Add sour cream, sugar, and salt; mix well.
  • Drain pineapple, reserving the juice. Dip banana pieces into the pineapple juice and place in a bowl. Add cherries, oranges, and the pineapple.
  • Add marshmallows to the cream cheese mixture; fold in the fruit mixture. Grease a fluted tube pan with cooking spray and turn the fruit salad out into the pan.
  • Cover and freeze salad for at least 8 hours. Unmold and let stand at room temperature at least 10 minutes before cutting.

After all the times I've made it, though, I almost always forget to bring it out early as a salad. Sooo, once the meal is over I present it as dessert!!

1/4 cup cherry juice
1 (8 ounce) package cream cheese, softened
1 (20 ounce) can crushed pineapple
1 (11 ounce) can mandarin oranges, drained
2 1/2 cups mini marshmallows
1 (8 ounce) container whipped topping

Steps:

  • Drain cherries, reserving 1/4 cup juice; set aside.
  • Combine cream cheese and pineapple with juice in medium bowl; mix on medium speed 3-4 minutes.
  • Stir in oranges, cherries, and cherry juice.

Any time I use canned fruits, I use them in their own juice, and you can substitute sugar free pudding as well.

1 container (16 ounces) frozen sweetened sliced strawberries, thawed and drained

  • In a food processor, chop apricots. In a bowl, combine the apricots, strawberries, bananas, pineapple, orange juice and water. Ladle into muffin cups that have been sprayed with cooking spray.   • Cream sugar, cream cheese and extract together. Fold in whipped cream and fruit cocktail until blended; then spoon into a mold or bowl or ice cube trays. (I use cupcake papers filled to about 1/2 to 2/3 full in a cupcake pan). Place Maraschino cherries on top to decorate, or you can fold them into the salad at the same time you fold in the fruit cocktail. Freeze until ready to serve/eat.

1/2 c nuts

1 dash salt
1 cup boiling water
1 (8 3/4 ounce) can pineapple tidbits

1/4 cup diced maraschino cherry
1/4 cup chopped nuts

  • Dissolve Jell-O Gelatin and salt in boiling water. Drain pineapple, measuring syrup; add water to make 1/2 cup, if necessary. Stir into gelatin with lemon juice.
  • Blend in mayonnaise. Chill until very thick. Whip cream. Fold fruits, nuts, and whipped cream into gelatin.
  • Pour into 2 freezing trays or a 9x5x3-inch loaf pan. Freeze until firm-at least 3 to 4 hours.
  • To serve, cut in squares or slices. Makes about 4 1/2 cups, or 8 servings.
