15-MINUTE CREAMED CORN - FROM FROZEN CORN!
This easy and delicious creamed corn can be thrown together in just 15 minutes, thanks to the use of convenient frozen corn kernels.

Steps:
- Melt butter over medium heat and cook onions, stirring occasionally, 5 minutes or until very soft. Sprinkle with flour and cook, stirring constantly, 2 minutes.
- Meanwhile, prepare the frozen corn kernels according to package directions. I prefer the type that you can steam in the bag, in the microwave.
- Add the milk, broth and cooked corn and bring to a boil over medium heat.
- Reduce heat to low and simmer, stirring occasionally, 5 minutes or until sauce is thickened. Season with salt and pepper.

- In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted. Serve hot.

FROZEN CREAMED CORN
Mom gave me this recipe after I tried hers and loved it. I don't really like corn that much, but this is good!

- 1. Place corn in uncovered roaster. Add margarine and half and half
- 2. Cook in 325 degree oven for 1 hour, stirring occassionally
- 3. Cool by placing pan in ice water in sink stirring frequently. Package and freeze quickly. You can add salt and sugar to taste. No need to add liquid when you cook your portion.

- Set oven to 325 degrees F.
- Butter an extra large baking dish (make certain that the baking dish is large enough to hold all the corn).
- Place half of the corn in a food processor; cover and process until creamy.
- Pour into large baking pan.
- Add milk, butter, sugar, salt and remaining corn.
- Cover and bake for 1 hour and 30 minutes, stirring frequently.
- Cool then freeze in small plastic containers.
