This frozen cranberry salad has been a staple on our Thanksgiving table for over 40 years. This creamy, frozen concoction made with crushed pineapple, cream cheese and walnuts, is that good!

Number Of Ingredients 6

1 bag fresh cranberries
1 1/2 c sugar
8 oz cream cheese
½ c walnuts or pecans, chopped
8 oz can crushed pineapple-drained
½ of a regular sized container Cool Whip or about 3 cups, though this is personal preference. If you want it creamier you can add more. Or about 3 c sweetened whipped cream.

Steps:

  • Chop cranberries finely in food processor. Empty into a big bowl. Add sugar to cranberries and stir well.
  • Chop nuts in processor. Add to cranberries.
  • Whip cream cheese in processor and add to bowl. Stir in drained, crushed pineapple. Fold in Cool Whip or whipped cream.
  • Freeze in lightly greased pans that have been greased with Pam or canola oil.
  • I use 1- 9 x 5 or 2- 8 x 4 loaf pans, or muffin tins that have been line with paper liners.
  • When ready to serve, let thaw for about 10 minutes before unmolding. Slice into pretty slices OR just serve the individual ones from the muffin pan on a rimmed tray.

1 cup fresh or frozen cranberries
1/4 cup sugar
1 can (8 ounces) crushed pineapple, drained
1/2 cup whipped topping
Chopped pecans
Additional cranberries and fresh mint, optional

Steps:

  • In a food processor or blender, process cranberries, sugar and pineapple until the cranberries are finely chopped. Pour into a bowl; let stand for 10 minutes. Fold in whipped topping. Spoon into four foil muffin cups; sprinkle with pecans. Freeze. Remove from the freezer 15 minutes before serving. Garnish with cranberries and mint if desired.

1/2 c canned cranberry sauce, whole-berry or jellied
2 Tbsp red wine vinegar
2 Tbsp water
1 Tbsp olive oil
1 tsp dijon mustard
1/8 tsp table salt, or to taste
1/8 tsp black pepper
8 c mixed baby greens
3 medium pear(s), ripe, cored and thinly sliced or apples
6 Tbsp honey-roasted almonds, walnuts or pecans
6 Tbsp parmesan cheese, shaved (use a vegetable peeler to get shavings)

Steps:

  • 1. In a medium bowl, whisk together cranberry sauce, vinegar, water, oil and mustard; season to taste with salt and pepper.
  • 2. Place greens in a large serving bowl. Add dressing, pears, cheese and nuts; toss to mix and coat. Scatter shaved Parmesan on top.

3 tbsp lemon juice
1 cup heavy whipping cream
¼ cup yogurt (Can also use mayonnaise)
¼ cup powdered sugar
1 cup chopped walnuts

Steps:

  • Crush the cranberry sauce with a fork. Add lemon juice. Spoon into a mold 3/4 full.
  • Whip the whipping cream and fold in the yogurt, powdered sugar, and walnuts.
  • Freeze for 6 to 8 hours.
  • Remove from the freezer and let thaw 4 to 5 minutes. Turn out onto a serving plate and serve. Using a thin knife makes it easier.

1 14 oz can whole berry cranberry sauce
1 20 oz can crushed pineapple
1 8 oz container cool whip
1/2 cup granulated sugar
4 diced bananas

Steps:

  • In a large mixing bowl, combine the whole berry cranberry sauce, sugar, and drained pineapple.
  • Stir until everything is combined. You may use a hand mixer at this stage.
  • Fold in the entire container of cool whip.
  • Dice your bananas. I prefer to slice the banana lengthwise to create ¼ pieces. You don't want your banana pieces too big.
  • Scoop the salad into individual cups and freeze for at least 3 hours.
  • Remove from freeze 5-10 minutes before serving.

1 (16 ounce) jar cranberry-orange relish (OR equal amount fresh or frozen cranberries OR 1 lg. can jellied cranberry sauce)
1 (8 ounce) can crushed pineapple, reserve juice
1/2 cup sugar
1 -2 cup miniature marshmallow
1/2 cup chopped nuts (Mom always uses pecans)
1 (9 ounce) container Cool Whip

8 oz pkg. cream cheese
2 Tbsp lemon juice
3/4 c granulated sugar
1 c walnuts, chopped
20 oz can pineapple tidbits
2 bananas--diced
8 oz tub of whipped topping

  • 1. Blend cream cheese,lemon juice and sugar in a mixing bowl. Add walnuts, pineapple tidbits and bananas, folding in gently. Fold in cranberry sauce and whipped topping
  • 2. Pour into a 9x9" Pyrex dish. Freeze
  • 3. Remove from freezeer about an hour before serving time to thaw enough to cut in to serving size. Serve on a lettuce leaf. Top with a dollop of whipped topping and a few sprinkles of walnuts. Enjoy

I found this recipe in one of my cookbooks and thought it sounded interesting. 3-25-12 I made this salad dressing today and I believe it is how they probably make marshmallow fluff because that is what it reminds me of. It is very thick but also very tasty with the orange and lemon zest mixed in. It is sweet and would be great served with any tart, tangy or sour type fruit. I had some frozen cranberries so that is what I served it with and added a few pecans on top. It is very delish and compliments the tartness of the cranberry or would any type of fruit like it.

FROZEN SALAD DRESSING
1 cup(s) sugar
2/3 cup(s) light corn syrup
1/2 cup(s) water
2 - egg whites
1/2 cup(s) mayonnaise
1 tablespoon(s) grated orange rind
1 teaspoon(s) grated lemon rind
1/8 teaspoon(s) salt
SERVE OVER THE TOP OF:
- frozen strawberries, blueberries, cranberries, kiwi, grapes or any type of frozen fruit mixture
GARNISH:
- pecans, walnuts or any other type of nuts

  • Combine sugar, corn syrup, and water; cook to thread stage (234 degrees).
  • Beat egg whites until stiff;
  • slowly add syrup while beating constantly. Cool.
  • Fold in remaining ingredients; freeze. (This does not harden when frozen.) Makes 2 cups dressing.
  • This is your finished frozen salad dressing. It is very thick like marshmallow fluff and would be great served on fruit that is more tart. I served it on some frozen cranberries, which normally I couldn't eat because they are so sour but with this dressing I certainly could. I added a few pecans on top too. This would be great with frozen grapes, kiwi, or just a mixture of frozen fruit. You can tast the lemon and orange zest in the dressing which I like too.
