I have no idea where this recipe came from or if I've even tried it. It was in my old recipe book, but handwritten so I must have gotten it from someone.

1 (14 ounce) can sweetened condensed milk
1 (20 ounce) can crushed pineapple
1 (15 ounce) can whole cranberry sauce
1/2 cup lemon juice
1/2 cup pecans, chopped
1 (9 ounce) carton frozen whipped topping

Steps:

  • Combine all ingredients and freeze in a 9 x 13 dish.
  • Take out 10 minutes before serving.

This is a fresh, tart start to any Blue Ribbon meal... year 'round!

1 pkg fresh cranberries, chopped
1 c sugar
2 large oranges
1 medium tart apple, shredded
1/2 c dates, chopped
16 oz. pkg cream cheese, room temperature
1 tsp vanilla extract
1 c heavy cream
1/3 c pecans , chopped

Steps:

  • 1. Fill muffin pans with 15-20 paper liners.
  • 2. Chop cranberries fine put in a medium bowl, add sugar and let set till ready to combine ingredients.
  • 3. chop one orange fine put in medium bowl, reserving juice.
  • 4. Shred apple add to chopped orange.
  • 5. Squeeze remaining orange. Add to reserved juice to make a total of 1/2 C. juice. Combine orange juice, cream cheese and vanilla, beat with a rotary beater till fluffy.
  • 6. Stir the orange, apple, cranberries and dates into cream cheese mixture .
  • 7. Whip cream till soft peaks form. Fold whipped cream into cream cheese mixture.
  • 8. Fill paper lined muffin pans with mixture, sprinkle lightly with pecans and freeze.

2 (8 ounce) packages cream cheese, softened
1/4 cup confectioners' sugar
1 (6 ounce) package dried sweetened cranberries, divided
1 (15 1/2 ounce) can crushed pineapple, drained
1 (11 ounce) can mandarin oranges, drained
1 (3 1/2 ounce) can shredded coconut, divided
1 cup toasted pecans, chopped
8 pecan halves, toasted
gingersnaps, for serving

Steps:

  • Stir together cream cheese and sugar until blended. Reserving 1/4 cup cranberries, add remaining dried cranberries. Pat pineapple and oranges dry between layers of paper towels. Set oranges and pineapple aside separately.
  • Reserving 1/4 cup coconut, stir remaining coconut and pineapple into cream cheese mixture. Stir in chopped pecans. Spoon mixture into a serving bowl.
  • Sprinkle reserved dried cranberries around edges of bowll. Arrange orange sections around inside edges of cranberries Sprinkle reserved coconut in center and top with toasted pecan halves. Serve with gingersnaps.

3 cups fresh or thawed frozen cranberries, chopped
1 can (20 ounces) unsweetened crushed pineapple, drained
2 cups miniature marshmallows
1 medium apple, chopped
2/3 cup sugar
1/8 teaspoon salt
2 cups heavy whipping cream
1/4 cup chopped walnuts

Steps:

  • In a large bowl, mix first 6 ingredients. Refrigerate, covered, overnight., To serve, beat cream until stiff peaks form. Fold whipped cream and walnuts into cranberry mixture.
