This simple recipe for Cinnamon Muffins is done in under 30 minutes - and the result is moist, delicious and packed with cinnamon flavor. Great as they are or as a base for cupcakes - and with a few simple tricks to ensure your muffins come out perfect.

2 cups flour
1.5 Tbsp cinnamon
1 tsp vanilla sugar (or vanilla extract)
2 tsp baking powder
1 cup salted butter (at room temperature)
1 cup sugar
2 eggs (at room temperature)
1 cup milk (at room temperature)
1 Tbsp sugar
1 tsp ground cinnamon

Steps:

  • Preheat the oven to 200°C (400°F) and place muffin liners in a muffin tin or on a baking sheet.
  • In one bowl, mix together all dry ingredients: flour, vanilla powder, baking powder and cinnamon.
  • In another, large, bowl, mix sugar and butter with an electrical mixer until fluffy.
  • Add the eggs and mix well.
  • Add the dry ingredients and mix to combine, but not more.
  • Add in the milk and mix until smooth, but not more than necessary.
  • Using two spoons, scoop your batter into the muffin liners, filling them to about ⅔. Use a spoon to even out the top.
  • In a small bowl combne the cinnamon and sugar for the topping. Then sprinkle the cinnamon sugar on top of the muffins.
  • Bake in the middle of the oven for 16-18 minutes. Test with a cake tester or tooth pick - it should come out with no or very little cake batter when they are done. Enjoy!

2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder*
1 tablespoon cinnamon
1/2 teaspoon salt
1 cup milk
1/2 cup vegetable oil
2 eggs
2 tablespoons sugar
1 teaspoon cinnamon

Steps:

  • Preheat the oven to 375ºF. Grease 18 muffins cups.
  • In a bowl, combine the flour, sugar, baking powder, cinnamon and salt.
  • In another bowl, beat together the milk, vegetable oil, and eggs. Make a well in the center of the dry ingredients and add the wet ingredients. Stir just until combined - don't over mix.
  • Divide the mixture evenly between the prepared muffin cups.
  • In a small bowl, combine the 2 tablespoons sugar and 1 teaspoon of cinnamon. Sprinkle the cinnamon sugar mixture over the tops of the batter filled cups.
  • Bake the muffins until a toothpick instead in the center comes out clean, 13-15 minutes.

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1 egg, beaten
1/2 cup milk
1/3 cup butter, melted
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 cup butter, melted

Steps:

  • Mix flour, sugar, baking powder, salt, nutmeg and allspice.
  • Add egg, milk and butter.
  • Stir into dry ingredients until moistened.
  • Spoon into greased or paper-lined muffin cups.
  • Bake at 400 degrees for 20 minutes or until done.
  • For topping combine sugar and cinnamon.
  • Brush top of warm muffin in butter and dip top of muffin into sugar/cinnamon mixture.

1 box (14.8 oz) Betty Crocker™ Cinnamon Toast Crunch™ Coffee Cake Mix
Water, vegetable oil and eggs called for on coffee cake mix box
1/3 cup Betty Crocker™ Cinnamon Toast Crunch™ Frosting (from 16-oz container)
1/2 cup Cinnamon Toast Crunch™ Cereal

Steps:

  • Heat oven to 425°F (400°F for dark or nonstick pan). Place paper baking cup in each of 12 regular-size muffin cups.
  • In medium bowl, stir coffee cake mix, water, oil and eggs with spoon just until blended (batter may be lumpy). Divide batter evenly among muffin cups (about 3 tablespoons each). Sprinkle Streusel over batter in each cup; press lightly.
  • Bake 15 to 19 minutes or until golden brown and toothpick inserted in center comes out clean. Cool in pan on cooling rack 5 minutes. Carefully remove from pan, and place on cooling rack. Let stand 5 minutes.
  • Place cooling rack with muffins over cookie sheet or waxed paper. In small microwavable bowl, place frosting. Microwave uncovered on High 10 to 15 seconds or until frosting is thin enough to drizzle. Dip fork into warmed frosting, and drizzle half the frosting over muffins. Sprinkle cereal pieces on top. Drizzle remaining frosting over cereal pieces.
