FROSTED CASHEW COOKIES
We savor these cookies every Christmas, but they're special year-round with coffee or tucked into a lunch box. I won a ribbon with these cookies at my county fair.-Sheila Wyum, Rutland, North Dakota

Steps:
- In a bowl, cream the butter and brown sugar. Beat in egg, sour cream and vanilla; mix well. Combine the flour, baking powder, baking soda and salt; add to creamed mixture and mix well. Stir in cashews. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 8-10 minutes or until lightly browned. Cool on a wire rack. , For the frosting, lightly brown butter in a small saucepan. Remove from the heat; add cream and vanilla. Beat in confectioners' sugar until thick and smooth. Frost cookies. Top each with a cashew half if desired.

- In a mixing bowl, cream the butter and brown sugar.

- Mix well.
- Combine dry ingredients and add to creamed mixture and mix well.
- Fold in cashews.
- Drop by rounded teaspoonfulls onto greased baking sheets.
- Bake at 375 degrees for 8-10 minutes or until lightly browned.
- Cool on a wire rack.
- Frosting:.
- Lightly brown butter in a small saucepan over low heat.
- Remove from the heat.
- Add cream and vanilla.
- Beat in confectioners' sugar until smooth and thick.
- Frost cookies.
- Top each with a cashew half if desired.

- 1. Preheat oven to 375 degree F. In a large mixing bowl, combine the brown sugar, butter, egg, and vanilla until light and fluffy. Add the flour, baking soda, and salt and mix until all is blended well into a soft dough. Stir in cashews. Drop dough, approximately 1 1/2 teaspoons in size, two inches apart on cookie sheets. Bake for approximately 9 minutes or just until cookies are light brown. Cool completely on a wire rack. For frosting, mix powdered sugar, butter, milk or cream and vanilla with an electric mixer until nice and smooth. Add more powdered sugar, if the frosting looks too runny. Frost each cookie, and let dry completely before storing.

- 1. Cream butter and brown sugar until fluffy. Beat in egg and vanilla. Add dry ingredients, alternating with sour cream; mix well. Fold in nuts, reserving some for the top of frosting. Bake at 400 degrees for 10 minutes on a greased baking sheet. Frost and top each cookie with a cashew. Yields: 4 doz.
- 2. Frosting: 1/2 c. butter, 3 T. cream, 1/4 t. vanilla extract, 2 c. powdered sugar. Lightly brown the butter in a pan. Remove from heat and add cream and vanilla. Gradually stir in powdered sugar. Beat until thick. DECADENCE!
