FROGGIES AKA NEW YORK DELIGHT
This is a recipe that my DH grew up loving, and I grew to love them. I got the recipe from a good friend of their family. They are easy to make and are yummy to eat. I'm not sure were the name "froggies" came from as their real name is New York Delight. Cook time also requires 1 hour cooling time.

- Press into lightly greased 8x8 square pan.

MEXICAN DELIGHT
This is a recipe my mother has made for years that she had gotten from a friend. If I knew where she had gotten it I would certainly give them credit! I wasn't sure about how many servings, but it makes a good amount. As far as the amount of toppings, I just estimated...everyone likes a different amount of lettuce, olives and cheese etc. I look forward to hearing what you think of it or what you did differently!

Steps:
- Combine garlic clove, chopped onion and ground beef. Brown and drain in large skillet.

- Add 1 cup cooked white rice, stir.
- Layer Frito's on a plate (a little will go a long way!) and top with meat mixture, then cheese and so forth with additional toppings (lettuce, tomatoes, green onions, avacado, sour cream).
- Enjoy!

CINNAMON APPLE DELIGHT
This recipe came about when I was fooling around with an apple one day. I tried this once, and had others sample it, and the reaction I got was great. This is a relatviely fast and tasty little treat that I can imagine would be perfect for small gatherings or just something for yourself at home.

Steps:
- First, core the apple.
- After the apple is cored, separate the pieces into two equal groups (if your corer makes 6 slices, separate them into groups of 3 pieces each, etc).
- Chop the pieces of one group into 1/4ths.
- Slice off the skin from each little piece, and keep the skin.
- Mix 3/4 of the chopped up pieces of apple with the sugar and water in a blender.
- On its highest setting, blend the mixture for about 1 second.
- In a small bowl, place the other 1/4 of the chopped up pieces at the bottom of the bowl.
- Pour half of the apple mush evenly over the pieces.
- Chop the rest of the other group into very tiny pieces.
- Put these tiny pieces on top of the mush, and then pour the rest of the mush on top of them.
- On top of the bowl, line the top layer of mush with the apple skin pieces you saved from before.
- In the middle of the top of the mush, pour the cinnamon evenly.
- Optional- Microwave on high for 20 seconds.
- Enjoy your cinnamon apple delight!

MAMA'S FAVORITE
I was raised by a single mother who never had a lot of time to cook. She would make this "concoction" a lot and I grew to love it so much. Now I make it for myself and my husband.
