FRITO BEAN SALAD

This recipe is made by my sister-in-law, Judy, for most family gatherings.

Number Of Ingredients 8

1 bunch(es) green onions, chopped
1 stalk(s) celery, chopped fine
1 - bell pepper, chopped fine
1 bag(s) frito regular chips, crushed
3 - tomatoes, chopped fine
16 ounce(s) ranch style beans, drained
1 - head lettuce, shredded
8 ounce(s) catalina salad dressing

Steps:

  • Combine all ingredients in a large bowl (except Fritos). Refrigerate.
  • Just before serving, add the crushed Fritos. Mix well.

Some people like to use Doritos instead of Fritos for this salad. Whichever chip you use, this salad goes great with Mexican food or barbecue.

1 head lettuce, torn in small pieces
1 (15 ounce) can ranch style beans, rinsed & drained (kidney beans)
chopped green onion
2 tomatoes, diced
1 cup grated cheddar cheese
2 cups Fritos corn chips
1 (16 ounce) bottle Catalina dressing

Steps:

  • Mix all ingredients together, except don't add Fritos and dressing until just before serving.
  • Enjoy.

3 cups cooked tricolor spiral pasta
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
1 large tomato, seeded and chopped
1/2 cup chopped onion
1/2 cup chopped green pepper
1 can (4 ounces) chopped green chilies
1/2 cup olive oil
1/4 cup cider vinegar
2 teaspoons sugar
1 teaspoon chili powder
3/4 teaspoon salt
1/2 teaspoon ground cumin

Steps:

  • In a large bowl, combine the first seven ingredients. In a jar with a tight-fitting lid, combine the oil, vinegar, sugar, chili powder, salt and cumin; shake well. Pour over pasta mixture; toss to coat. Cover and refrigerate for at least 1 hour or until chilled.

A wonderful side salad that would compliment any Mexican or Southwestern meal. To make it a main dish, you could add chopped cooked meat of your choice and some shredded Cheddar cheese.

1 (15 1/2 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (15 1/2 ounce) can garbanzo beans, rinsed and drained
2 celery ribs, sliced
1 medium red onion, diced
1 medium tomatoes, diced
1 cup frozen corn, thawed
3/4 cup thick & chunky salsa
1/4 cup vegetable oil
1/4 cup lime juice
1 1/2 teaspoons chili powder
1 teaspoon salt (optional)
1/2 teaspoon ground cumin

Steps:

  • In a bowl, combine beans, celery, onion, tomato and corn.
  • In a small bowl, combine dressing ingredients; mix well.
  • Pour over the bean mixture; toss to coat.
  • Cover and chill for at least 2 hours.

My mother gave me this recipe several years ago, and we have prepared it often ever since. It can be a meal in itself...or serve it along with a Mexican meal. I often take it to potlucks and watch it disappear in no time!

1 can (15 ounces) pinto beans, rinsed and drained
1 bunch green onions with tops, sliced
1 large tomato, seeded and chopped
1 medium ripe avocado, peeled and chopped
1 bottle (8 ounces) Catalina salad dressing, divided
2 cups shredded cheddar cheese
1 medium head lettuce, torn into bite-size pieces
4 cups corn chips

Steps:

  • In a large salad bowl, toss together the beans, green onions, tomato, avocado and half of the Catalina dressing. Top with cheese and then lettuce. Refrigerate. Just before serving, add corn chips to salad and toss. Serve with remaining dressing.

A friend of mine gave me this recipe once after she had brought it for one of our company monthly pot-luck lunches. Everyone loved it and I have made it many times since. It is a quick and easy recipe and even the kids love it.

1 head of leaf lettuce or ice berg lettuce, torn into small pieces
1 can(s) (15 oz) ranch style beans, rinsed & drained
2 chopped green onions
2 or 3 plum tomatoes, diced
1 c cheddar cheese, shredded
3 c regular frito corn chips
1 bottle (16 oz) catalina dressing

Steps:

  • 1. Mix first 5 ingredients together in a large salad bowl.
  • 2. Just before serving, add Fritos and dressing.
  • 3. Toss gently and serve immediately so the Fritos don't get soggy.
