I first had this simple dish when I moved to Texas many years ago. It's still really popular with my grandkids.

Steps:
- Place 2 cups of corn chips in a baking dish.
- Arrange chopped onion and half of the cheese on the corn chips.
- Pour chili over onion and cheese, then top with remaining corn chips and grated cheese.
- Bake at 350 for 55-60 minutes.

FRITO CHILI PIE
A great quick meal that was a favorite in my family when I was growing up and that my kids love too! Recipe has been adjusted to 2 cans of chili as suggested by reviewers. I normally use one and don't use the entire bag of fritos. You can adjust the chili to frito ratio to your taste. More chili is always good.

Steps:
- Preheat oven to 350 degrees.
- Spray a square casserole dish with nonstick cooking spray.
- Line the bottom of casserole dish with tamales.
- Top tamales with a thin layer of corn chips.
- Spread 1 can of chili on top of corn chips.
- Top chili with 1 cup cheese and 1/2 cup of chopped onion.
- Add another layer of corn chips.
- Cover with remaining chili.
- Top chili with remaining cheese and onions.
- Bake 30 minutes.

I like my chili thick and mild with just a bit of zing and I hate the taste of pre-packaged seasoning mix so here's my own chili recipe served my favorite way...scooped over a layer of fritos corn chips and topped with shredded cheddar cheese! This reminds me of childhood! Enjoy.

Steps:
- Combine first 6 ingredients in a dutch oven or large pot.
- Cook until beef and sausage are browned and drain excess grease.
- Turn heat to medium and add remaining ingredients.
- Turn heat to medium low and simmer for 40 minutes.
- To Serve:.
- Pour a layer of Fritos onto a plate or into a bowl.
- Spoon chili over Fritos.
- Garnish with desired amount of shredded cheddar cheese.

FRITO PIE CHILI DOGS
Frito Pie ingredients on top of a hot dog! Can life get any better? I submit it cannot! These are great for the a Super Bowl party, BBQ or just a random act of gluttony There are only a few ingredients involved to make this recipe. Hot dogs are topped with chili, cheese and Frito corn chips (We're gonna throw on some onions and call it health food).

Steps:
- Heat outdoor grill to medium high heat. Add the hot dogs and cook until slightly charred and heated through.
- Toast the buns by turning the grill to low and placing the buns cut side down onto the grill until lightly toasted. Spread buns lightly with sour cream if using.
- In a medium sauce pan heat the chili over medium-high heat until hot.
- Add the hot dogs to the buns. Top with chili, shredded cheese (use restraint). If you want to melt the cheese you can bake the hot dogs in the oven at 350 degrees on a baking sheet until the cheese has melted. Top with Fritos & onions.

FRITO CHILI PIE
My Mom used to make this for us when we were kids. It's embarassingly easy and so kid friendly. You can use different types of chips like tortilla, but we always had it with Fritos. You could also add different types of cheeses, layer them in between instead of just on top and I'm sure there are alot of other options. This is just how my mom made it, plain and simple.

Steps:
- Layer 1/2 of corn chips on bottom of baking pan. (Size of pan will vary depending on how much chili you have left over - either 13x9 or smaller)
- Spoon chili over the chips spreading evenly over all.
- Add the remaining chips over the chili.
- Top with shredded cheese.
- Bake in 350 degree oven for about 10-15 minutes until cheese is melted and slightly bubbly.

- Brown ground chuck with garlic in a pot over medium-high heat. Add tomato sauce, Rotel, salt, oregano, cumin, and chili powder. Cover and reduce heat to low. Simmer for 30 minutes.
- Add drained and rinsed beans. Stir to combine, then cover and simmer for another 20 minutes.
- Mix masa with water, then add to the chili. Stir to combine and simmer for a final 10 to 15 minutes.
