2 large eggs
1/4 cup heavy whipping cream
1/4 cup cornmeal
2 tablespoons sliced green onions
2 tablespoons all-purpose flour
1/4 teaspoon baking powder
Pinch pepper
1/2 teaspoon salt, optional
1 can (14-3/4 ounces) salmon, drained, bones and skin removed
1 to 2 tablespoons butter

Steps:

  • In a small bowl, beat eggs. Stir in the cream, cornmeal, green onions, flour, baking powder, pepper and, if desired, salt. Flake salmon into bowl; blend gently. , Melt butter in a large nonstick skillet or griddle over medium heat. Drop salmon mixture by 1/3 cupfuls into butter. Fry in batches for 5 minutes on each side or until lightly browned. Serve warm.

14.75 oz. salmon, canned
2 eggs (beaten)
1/4 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup cracker crumbs, fine
6 Tablespoons olive oil or butter

Steps:

  • Drain salmon and remove bones and skin.
  • Flake salmon with fork.
  • Mix eggs and milk, and then add salmon.
  • Add salt, pepper and cracker crumbs.
  • Form into large patties.
  • Melt olive oil or butter in skillet over medium heat.
  • Brown patties on first side.
  • Flip, and brown on the second side.
  • Serve on a bun or eat with a fork (with ketchup).

1 egg, beaten with a tablespoon of water
breadcrumbs with a dash of salt and pepper
about 2 cups (14 oz) of mashed potatoes with salt, butter and milk added, fresh or leftover (use dairy free spread and non dairy milk if on a dairy-free diet)
leftover cooked salmon or tinned salmon (about 12 to 14 oz)
1 egg
about 1/2 tsp salt and pepper to taste
2 tbsp chopped fresh Italian parsley
olive oil or grapeseed oil

Steps:

  • Put the mashed potatoes, salmon, egg, salt, pepper and parsley together in a bowl.
  • Mix all the ingredients together using a fork to break up the fish, then form into patties (if the mixture is too soft, refrigerate for an hour or so before shaping).
  • Dip patties into beaten egg, then coat in the breadcrumbs.
  • Place on a baking sheet, and continue until the remaining mixture is finished.
  • Fry gently over medium heat until golden brown on both sides, adding oil as needed.
  • Place on paper-towel lined sheet to absorb the excess oil. Serve as desired.

1 egg
¼ cup chopped onion
½ cup seasoned dry bread crumbs
1 tablespoon olive oil

Steps:

  • Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
  • Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
  • In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

I grew up on fried potato patties and salmon patties and I fix those all the time. One day I decided to combine the two and this recipe is the end result. Absolutely delicious, the whole family loved them.

1 c leftover, seasoned mashed potatoes
5 oz can skinless, boneless salmon, drained
1 large egg
2 green onions, chopped
1/4 c. + 1 t. all purpose flour
1/4 tsp smoked paprika
1/4 tsp garlic powder
1/4 c shredded colby jack cheese
veg. oil for frying

Steps:

  • 1. Combine all the ingredients in a bowl. Heat about 1/4" of oil in a skillet. Drop the mixture by spoonfuls and slightly flatten out. Cook till golden brown on both sides, about 2-3 minutes per side. Drain on a paper sack or paper towel lined plate. Approx. 14-16 patties.

2 (14 3/4 ounce) cans red salmon
1 cup Italian breadcrumbs
2 raw eggs
3 dashes black pepper
1 dash salt
1 dash red pepper
3 ounces vegetable oil

Steps:

  • Dump the ingredients of the two cans of salmon onto a large plate then pick out all the bones (it is nasty, but necessary).
  • In a large bowl add all ingredients except the oil and mix very well. Make sure it is fairly smooth (you want it less chunky than chicken salad, almost a paste).
  • Using a large spoon or just your hands roll large lumps into firm balls. As for the size of the balls, that is completely up to you. I make mine a little larger than a golf ball.
  • Flatten the balls till they are about the thickness of a pancake.
  • Pour oil into a skillet over medium heat. Add the patties, making sure they are not touching in the skillet. DO NOT turn them too often, they will crumble. I cook them about 5 minutes then carefully flip them over and cook another 5 to 7 minute on the other side.
  • My family likes to eat them plain with ketchup or hot sauce. Sometimes I serve them on sesame seed buns with a slice of tomato and a leaf of lettice.

POTATO'N SALMON CAKES

Quick easy recipe to make after a hard day's work. For the mashed potatoes use plain cooked potatoes mashed with no added ingredients. Just cook extra potatoes the night before and take out what you will need for this recipe. If you want a little spice add 1/2 tsp hot pepper flakes I like a bit of Tartar sauce and a green salad along side or a couple of steamed vegetables. Great summer dish. This recipe goes a long way from one small can of salmon. I would like to stress use leftover cooked potatoes not left over mashed potatoes that already have got a lot of extra ingredients in them!

1 (213 g) can salmon, skin & bones removed (I prefer sockeye but in this recipe pink is fine too)
1 1/2 cups left over mashed potatoes
1 egg, beaten
1/2 cup flour

3 tablespoons parsley, chopped
4 tablespoons onions, minced
3/4 cup fresh breadcrumb (Panko are best)
vegetable oil cooking spray, for frypan (or if you wish use butter mixed with oil for really crisp cakes but watch the calories go up)

Steps:

  • Mix all the ingredients except the bread crumbs, stir well.
  • Form into 6 cakes.
  • Coat with crumbs.
  • Fry until nicely browned on the outside and heated through, apprx 5 minutes each side Serve.
