EASY, DELICIOUS FRIED OYSTERS



Easy, delicious fried oysters image

I love fried oysters and this recipe makes it very simple.

oil for frying
1/2 c all purpose flour
1 tsp salt
1/2 tsp pepper
12 oz shucked oysters, i buy them already shucked at the seafood dept. of my supermarket
2 eggs, lightly beaten
3/4 c breadcrumbs, i used italian-style, which gave them a nice taste

Steps:

  • 1. Heat about 1/4" oil in deep skillet over high heat, until bubbly.
  • 2. In bowl, combine flour, salt & pepper. Place bread crumbs in another bowl. Dredge oysters in flour mix, then dip into eggs. Roll in breadcrumbs.
  • 3. Place about 5 oysters at a time into oil, fry for about 2 min, turning once. Drain on paper towels.

DEEP FRIED OYSTERS

This is a very simple recipe for fried oysters. You can use the same recipe for shrimp and scallops too.

2 quarts vegetable oil for deep frying
½ cup all-purpose flour
1 teaspoon salt
½ teaspoon ground black pepper
12 ounces shucked oysters, drained
2 eggs, lightly beaten
¾ cup fine bread crumbs

Steps:

  • Heat deep fryer to 375 degrees F (190 degrees C).
  • Combine flour, salt and black pepper. Dredge oysters in flour mixture, dip in egg and roll in bread crumbs.
  • Carefully slide oysters into hot oil. Cook five at a time until golden brown, about 2 minutes. Drain briefly on paper towels. Serve hot.

Peanut oil, for frying
3/4 cup buttermilk
1 teaspoon garlic powder
1 teaspoon paprika
Dash hot sauce, such as Tabasco
1 cup cornmeal
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
36 shucked oysters
Remoulade Sauce, for serving, recipe follows
1 cup mayonnaise
1 tablespoon Creole mustard
1 tablespoon paprika
1 tablespoon white wine vinegar
1 tablespoon Worcestershire sauce
Dash hot sauce
Kosher salt and freshly ground black pepper

Steps:

  • Heat oil in a deep fryer to 350 degrees F.
  • Whisk together the buttermilk, garlic powder, paprika and hot sauce in a casserole dish. Whisk together the flour, cornmeal, salt and pepper together in a separate casserole dish.
  • Add the oysters to the buttermilk and let soak. Then remove, letting the excess drip off, and dredge through the cornmeal mixture, tapping off the excess. Fry in the hot oil in batches, until golden and crisp, about 2 minutes. Remove to a paper towel-lined plate and sprinkle with salt and pepper. Serve hot with the Remoulade Sauce.
  • Mix together the mayonnaise, mustard, paprika, vinegar, Worcestershire sauce and hot sauce in a small bowl until well combined. Season with salt and pepper. Serve immediately or cover with plastic wrap and refrigerate until serving.

3 tablespoons vegetable oil
2 dozen shucked large raw oysters, drained
2 eggs, beaten
3 cups cracker crumbs
3/4 to 1 teaspoon salt
1/4 teaspoon pepper
Snipped parsley or paprika
Lemon wedges

Steps:

  • Heat the butter and oil in a skillet. Roll the oysters in the egg and crackers crumbs and sprinkle with salt and pepper. Saute the oysters, turning once, until golden brown. Sprinkle the parsley or paprika on top and garnish with lemon.

36 -48 medium oysters, shucked
peanuts (for frying) or canola oil (for frying)
1 1/2 cups cracker meal
4 1/2 cups flour
kosher salt
2 tablespoons unsalted butter
6 top-opening hot dog buns
1/4 cup chopped red onion
1/4 cup roughly chopped capers
1/4 cup chopped cornichon, plus 2 tablespoons of the juice
3 cups hellmann mayonnaise
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper

Steps:

  • For tartar sauce: In a large bowl, mix the ingredients thoroughly.
  • Refrigerate.
  • Makes about 4 1/2 cups- more than you will need.
  • Oysters: In a deep saucepan or pot, heat the oil (3 inches deep) to 350 degrees Fahrenheit.
  • Mix the cracker meal and flour in a large dish.
  • Drain the oysters in a strainer and drop them into the cracker meal mixture one by one, keeping them separated.
  • Coat each oyster well, then shake off the excess.
  • Drop each oyster gently into the hot oil and fry until they are golden brown, about 3 to 4 minutes.
  • It's important not to overfry them.
  • Drain them on paper towels and sprinkle with kosher salt.
  • Meanwhile in a large skillet over medium heat, melt butter.
  • Place rolls in the skillet on their sides.
  • Cook until browned, turn and cook other side.
  • Spread tartar sauce inside each roll, place oysters in roll and serve immediately.

6 bacon strips, chopped
2 cans (8 ounces) whole oysters, drained and patted dry
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1 tablespoon canola oil
1 tablespoon minced garlic
1 shallot, minced
1 teaspoon dried parsley flakes
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 teaspoon grated lemon zest
10 egg roll wrappers
1 large egg
Oil for deep-fat frying
Optional: seafood cocktail sauce and lemon wedges

Steps:

  • In a large skillet, cook bacon over medium-high heat, stirring often, until crisp, about 5 minutes; drain, reserving drippings in skillet. Place flour in a shallow dish. Sprinkle oysters with salt and cayenne pepper; toss in flour. Cook in reserved drippings until golden brown, 3-4 minutes; drain. , Wipe out skillet. In same skillet, cook shallot, garlic and parsley in canola oil over medium heat until shallot is tender, 2-3 minutes. Add spinach and lemon zest; cook, stirring occasionally, until heated through, 2-3 minutes. Transfer spinach mixture to a bowl; stir in oysters and bacon. , In a small bowl, whisk egg and 1 teaspoon water. Brush edges of an egg roll wrapper. Place ¼ cup oyster mixture in the center; fold bottom corner over filling. Fold sides over filling toward center; roll up tightly to seal. Repeat with remaining wrappers and filling. , In an electric skillet, heat ½ in. of canola oil to 375°. Fry egg rolls until golden brown, about 2 minutes on each side. Drain on paper towels. If desired, serve with cocktail sauce and lemon wedges.

ROLLED OYSTERS

My grandparents enjoyed these oysters at Mazzoni's in Louisville, Kentucky many, many decades ago. The restaurant is no longer there, but my grandparents were fortunate enough to charm this recipe out of the owners. Ever since, these little treasures have become a New Year's Eve tradition in my family. Memaw always formed extra "Mock Oysters" out of the cracker crumbs and batter for the kids who didn't like oysters (me!).

2 cups oatmeal
5 cups water
1/2 cup light corn syrup
2 pints oysters, drained, reserve the liquid
1/4 cup evaporated milk
1/2 cup self-rising flour
4 teaspoons baking powder
3 eggs, separated
32 ounces saltine crumbs, 2 boxes

Steps:

  • Cook the oatmeal in the 5 cups of water.
  • Add the corn syrup to the oatmeal and remove from heat.
  • Set the oatmeal mixture aside to cool and then add the evaporated milk and the reserved liquid from oysters.
  • Add the baking powder and flour, beat thoroughly, and then add the egg yolks into the oatmeal mixture.
  • Beat the egg whites until stiff and then fold the egg whites into the oat mixture.
  • Add a little more self-rising flour if the oat batter is too watery (it should have the consistency of wet mud).
  • Roll each oyster in cracker crumbs, dip it into the oat batter and then roll in the cracker crumbs a second time.
  • (At this point, the oysters can be placed on wax paper and stored in the freezer until you are ready to fry them, or fried immediately.) To prepare, deep fry until they turn a dark brown color.
  • They may also be pan fried.
