1/2 cup canola oil
1 log fresh goats milk cheese
1 cup flour
2 eggs beaten
1 cup panko bread crumbs
Honey for dipping

Steps:

  • In a medium pot heat canola oil to at least 375 degrees. Using hot water to keep the knife clean cut the goat cheese log into 1-inch circles. Have 3 separate dishes, one with the flour, one with 2 eggs beaten, and 1 with the breadcrumbs. Dip one round first into the flour and shake off the excess. Next, dip the round into the beaten egg, and then into the breadcrumbs. Repeat process until all rounds are coated with the breadcrumbs. Carefully fry the rounds in the oil until golden brown, approximately 30 seconds. Drain rounds on paper towels. Serve rounds topped with a little honey.

1 tablespoon butter
2 cloves garlic, minced
4 ⅓ cups water
1 cup stone ground cornmeal
½ teaspoon salt
1 ⅓ cups fresh corn kernels
freshly ground black pepper
2 tablespoons grated Parmesan cheese
½ bunch kale
1 tablespoon olive oil
1 tomato, sliced
3 ounces goat cheese

Steps:

  • In a medium saucepan, heat the butter over medium heat. Add the garlic and stir constantly for 1 minute; don't let the garlic brown. Add 3 cups of the water, and bring it to a boil.
  • While the water heats, whisk together in a bowl the cornmeal, salt, and 1 cup water to make a smooth mixture.
  • When the water in the saucepan comes to a boil, pour the mixture into it. Whisk constantly for 3 minutes to prevent lumps from forming. Turn the heat to low. Cook for 40 minutes, stirring with a wooden spoon every 10 minutes. Stir in the corn kernels and cook the polenta 5 minutes more. Stir in the pepper and Parmesan cheese. Pour the polenta into a lightly oiled 8x8 inch pan and smooth the top with a spatula. Chill the polenta in a refrigerator for 1 hour.
  • While the polenta is cooling, cut away the stems and center stalks of the kale. Cut the leaves into 3-inch pieces.
  • Cut the chilled polenta into 4 large triangles. Heat the olive oil in a large non-stick skillet over medium-high heat. When the oil begins to smoke, carefully add the polenta triangles. Fry the polenta until it is golden brown on the underside, then turn the polenta over and cook it until it is golden brown on the other side. Arrange the polenta on a baking sheet.
  • Preheat the broiler on your oven.
  • Place the kale and 1/3 cup water into the skillet that was just used to fry the polenta. Cover the skillet and cook the kale over a medium-high heat for 4 minutes.
  • Place the tomato slices on top of the polenta triangles. Sprinkle the goat cheese on top of the tomato slices. Broil the polenta until the cheese melts and the tomatoes begin to cook.
  • Arrange the kale on a serving platter. Place the hot polenta triangles on top of the kale and serve immediately.

16 oz. goat cheese log
1 cup panko bread crumbs
2 tsp. dried parsley
1 tsp. dried thyme
1/2 tsp. granulated garlic
1/2 tsp. ground pepper
pinch of kosher salt
2 eggs, beaten
1/2 cup of flour
olive oil

Steps:

  • Put goat cheese the in freezer for about 15 minutes so it firms up for better slicing. While cheese is chilling, assemble other ingredients for breading the cheese. Put the panko in a medium-sized bowl. Add the parsley, thyme, granulated garlic, ground pepper, and kosher salt. Stir to combine. Set aside. Beat the eggs in another medium-sized bowl. Put the flour on a plate or in a shallow bowl. Line a sheet pan or plate with parchment paper. Remove cheese from the freezer. Using a sharp knife, slice it into 1/4 - 1/2-inch pieces. Between slices, use a paper towel dipped in warm water to wipe the knife clean. This will help the goat cheese to keep from sticking to the knife. Put the cheese in the flour. Flip it gently to coat on both sides. Place the floured cheese into the beaten egg. Flip it gently to coat with egg on both sides. Lastly, put it into the seasoned panko breadcrumbs. Flip it to coat on both sides. Put it on your lined pan or plate. Repeat with the rest of the cheese. This may be done an hour ahead of time. Keep the medallions of cheese chilling in the refrigerator. Coat the bottom of a shallow pan with olive oil. Set it on the stove over high heat. When the oil shimmers, it's hot enough to fry the cheese. Set the cheese down gently in the hot oil. It should start to bubble around the edges immediately. Repeat with the rest of the cheese. Depending on the size of your pan and how many pieces you're frying, you might need to fry in batches so you don't crowd the pan. Watch the cheese closely as it will fry quickly. When the cheese is brown on both sides, remove it from the pan and transfer it to a paper towel or paper bag lined plate. Serve warm.

Olive oil, for drizzling

1 cup pecans
6 to 8 cups mixed greens
1 ripe pear, such as D'anjou, cored and sliced into 1/4-inch slices
1/4 cup champagne vinegar
1/4 cup freshly squeezed orange juice
1 teaspoon honey
1 teaspoon country Dijon mustard
1 small shallot, finely chopped
1/2 cup olive oil
Kosher salt and freshly ground black pepper
3/4 cup vegetable oil
One 8-ounce log goat cheese
1/4 cup all-purpose flour
1 large egg, slightly beaten
3/4 cup panko breadcrumbs

Steps:

  • For the salad: Place the tomatoes on a baking sheet, drizzle with some olive oil and sprinkle with salt and pepper. Roast until tender and starting to brown, about 20 minutes. Let cool.
  • Meanwhile, toast the pecans in a large skillet over medium heat, tossing occasionally, until fragrant, 3 to 4 minutes. Let cool, then chop.
  • For the vinaigrette: Whisk together the champagne vinegar, orange juice, honey, Dijon and shallot in a medium bowl. Slowly whisk in the olive oil; season with some salt and pepper.
  • For the goat cheese croutons: Heat the vegetable oil in a medium skillet over medium-high heat. Slice the goat cheese into 8 equal rounds. Add to 3 shallow dishes, the flour, egg and panko. Coat each goat cheese round with flour, then egg and then panko, shaking off excess, and fry until golden on both sides, about 1 minute per side. Transfer to a paper-towel lined rack or plate.
  • To assemble the salad, toss the greens, pear, pecans and tomatoes in a large bowl. Drizzle with some vinaigrette and gently toss to fully combine. Divide the salad among 4 salad plates, top each with 2 goat cheese croutons, and serve.

3/4 cup panko breadcrumbs
1/2 teaspoon dried oregano
1/3 teaspoon dried thyme
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper (optional)
1 pinch salt and pepper
1 egg, beaten with a little water
1/3 cup flour
1 1/2 cups olive oil
1/3 cup honey, for drizzling
2 roasted red peppers, minced, for garnish
12 slices baguette

Steps:

  • 1. Slice the goat cheese log into 1/2-inch to 3/4-inch medallions. (For easier slicing, make sure the cheese is well chilled. You may place it in the freezer for 10 minutes before slicing. Use unflavored dental floss instead of a knife to get sharp slices.).
  • 2. In a bowl, combine the Panko crumbs, oregano, thyme, garlic powder, cayenne pepper, salt and pepper.
  • 3. In another bowl, lightly beat the egg with a little water.
  • 4. In a third bowl, place the flour.
  • 5. In a shallow sauté pan, heat about 1/2 inch of olive oil over medium-high heat.
  • 6. Dredge the cheese slices in the flour, then dip in egg, and coat with the Panko mixture.
  • 7. Gently place the breaded medallions into the heated olive oil in pan. Fry until golden brown on each side, about 1 1/2 to 2 minutes.
  • 8. Remove from the oil and drain/blot on a paper towel.
  • 9. To serve, place medallions on a serving platter/plate or wooden board. Drizzle each with a little honey and garnish with the peppers. Serve with sliced baguette.
  • These medallions would also be great served atop a green salad.

1/4 cup finely diced red onion
Juice of 1 lime

1/4 cup soft goat cheese
Freshly ground black pepper
4 medium green tomatoes, sliced 1/2-inch thick

1 cup all-purpose flour
3 large eggs, whisked
2 cups yellow cornmeal
Few dashes hot sauce
Canola oil, for frying
12 soft mini buns, such as Martin's, split and lightly toasted

Steps:

  • For the relish: Combine the tomatillos, onions, lime juice, cilantro and oil in a bowl. Let sit at room temperature for 30 minutes. Stir in the bacon just before serving.
  • For the mayo: Whisk the mayonnaise and goat cheese together in a bowl until well combined. Season with pepper.
  • For the fried green tomatoes: Set a cooling rack over a baking sheet. Season the green tomatoes on both sides with salt and pepper. Put the flour, eggs and cornmeal in separate shallow dishes. Season all three with salt and pepper, and the eggs with the hot sauce.
  • Heat a few inches of oil in a cast-iron skillet over medium heat until beginning to shimmer (drop in a few grains of cornmeal -- they should sizzle) or a deep-frying thermometer registers 350 degrees F. Dredge the green tomatoes in the flour, tap off the excess, then dip in the egg wash. Let the excess drip off, then dredge in the cornmeal.
  • Fry the green tomatoes in batches until golden brown on both sides, 1 to 2 minutes per side. Drain on the prepared rack and season with a bit more salt.
  • Spread a teaspoon of goat cheese mayo on the top and bottom buns. Place a fried green tomato on the bottom buns, top with relish and serve.

FRIED ZUCCHINI BLOSSOMS WITH GOAT CHEESE AND ZUCCHINI PESTO

1/2 cup goat cheese
11/2 quarts olive oil
1 cup all-purpose flour
2 cups chilled seltzer water or ice water
Sea salt to taste
Cayenne pepper
1 medium zucchini (about 8 ounces)
2 tablespoons Parmesan cheese, grated
2 tablespoons pine nuts
30 basil leaves (approximately 3/4 cup loosely packed)
1/4 teaspoon finely chopped garlic
6 ounces extra virgin olive oil
Sea salt and freshly cracked black pepper to taste

  • For the Blossoms: Carefully stuff each zucchini blossom with 1 teaspoon of the goat cheese. Fold over the petals to form an envelope. In a deep skillet or deep fryer, heat the oil to 375 degrees. Meanwhile put the flour in a mixing bowl. Pour in the seltzer a little at a time, whisking constantly to ensure a smooth batter. Season with salt and cayenne. When the oil is properly heated, dip a stuffed blossom into the batter to coat it evenly, scraping off any excess. Fry until crisp and golden, about 30 seconds per side. Remove to paper towels to drain. Repeat process with all blossoms, being careful not to overcrowd the skillet and maintaining the proper oil temperature. For the Pesto: Quarter zucchini and cut into 1 inch pieces. Blanch zucchini for 2 minutes in salted boiling water, and then shock in ice bath to preserve color. Drain well and pat dry with cloth. Place blanched zucchini, Parmesan cheese, pine nuts, basil leaves, garlic, in food processor and start to puree. With the motor running, pour the olive oil through the feed tube in a slow, steady stream until the pesto emulsifies. Season with salt and pepper taste.;

  • Pull off small pieces of goat cheese and roll into dime-sized balls.

1/2 cup panko bread crumbs
1 large egg, lightly beaten
1 pound bulk Italian sausage
2 ounces fresh goat cheese
1/2 cup red wine vinegar
1/4 cup sugar
1 cinnamon stick (3 inches)
2 whole cloves
1 whole star anise
1/2 cup dried figs, chopped
1/2 cup water
Chopped fresh chives, optional

Steps:

  • Preheat air fryer to 350°. In a large bowl, combine bread crumbs and eggs. Add sausage; mix lightly but thoroughly. Divide into 18 portions. Shape each portion around 1/2 teaspoon cheese to cover completely. in batches, place meatballs on a greased tray in air-fryer basket. Cook until cooked through, 25-30 minutes., Meanwhile, in a large saucepan, bring vinegar, sugar, cinnamon, cloves and star anise to a boil. Reduce heat; simmer 5 minutes. Discard cinnamon, cloves and star anise. Add figs; cook until softened, 8-10 minutes. Remove from heat; cool slightly. Transfer to a blender. Add 1/2 cup water; process until almost smooth.   • Sauté bacon in heavy large skillet over medium heat until brown and crisp, about 8 minutes. Using slotted spoon, transfer bacon to paper towels to drain. Pour off and discard all but 1 tablespoon drippings from skillet.

Steps:

  • Freshly ground black pepper Preheat grill to medium-high. Brush corn with 1 tablespoon olive oil and grill, turning often, until charred and tender, about 4 minutes. Set aside. In a medium bowl combine goat cheese, zest and parsley. Roll into 16 (1-inch) sized balls and put on a parchment-lined baking sheet. Freeze until firm, about 20 minutes.

10 walnuts
1 tablespoon brown sugar
150 g goat cheese, Woodside preferably
10 leaves sage
2 tablespoons butter
50 ml lemon juice
2 tablespoons olive oil
1 1/4 kg potatoes, royal blue
200 g plain flour
1 egg
1 teaspoon nutmeg
1 teaspoon salt

Steps:

  • Preheat oven to 200C and place butternut sqaush on a oven tray and roast until softened.
  • In hot frypan add walnuts and brown sugar until sugar disolves and walnuts caramelise. Set aside.
  • Cook potatoes, skin on in salted water until just cooked through. Drain and peel then mash (or use a mouli/spaetzle maker).
  • Weigh out 1kg of the cooked potatoes into a bowl (or on the bench) .
  • and make a well in the centre.
  • Mix in flour, egg, nutmeg and salt. Mix gently until combined, do not over knead.
  • Divide the mix into 4 and roll each quarter into a long thin sausage. Cut a roll into 1cm pieces, pressing each with a fork to make indentations. Repeat for other 3 rolls.
  • Cook in batches in boiling water until the gnocchi rises to the top. Drain and place in fridge for later.
  • Spoon roasted squash from skin and break into pieces. Heath olive oil in frypan, Add gnocchi and panfry on medium heat until golden brown, add squash, walnuts, butter and sage and continue to fry until butter has browned.
  • Deglaze with the lemon juice to cut butter. Serve on a hot plate and dollop goats cheese over the gnocchi.

  • Couldn't be easier: stuff a wonton wrapper with a little scoop of avocado and goat cheese. Seal with as little water as possible, and the fry in hot oil. Serve with cilantro aioli dipping sauce. These are easy to assemble in advance, and then fry when ready. They keep well in a covered container in the fridge. Infusing Aioli Aioli is very easy to make, all you need is a large bowl, whisk, and muscle power. Of course, a food processor or blender will do it for you. Cilantro Aioli Recipe Beat the egg yolk with the lemon. Toss it into a medium-sized bowl with the lemon juice & salt. Add the olive oil by the teaspoon and beat with a whisk until the olive oil is completely combined. The mixture should be yellow, frothy, and opaque. You want to beat it until all the droplets of olive oil have disappeared. Repeat this process-adding a teaspoon, then beating to emulsify it-until you've added about 1/4 cup of the oil. As you go, the mixture should begin to turn a creamy yellow, and become more and more opaque. When you've added 1/4 of a cup of oil by the spoonful, your emulsion should be off to a really good start. It should coat the back of a spoon, but should still be pretty thin. Start to drizzle the oil in, beating it as you go to incorporate it completely. Go slowly, and be patient. 3 tablespoons whole black peppercorns
4 filet mignon steaks, about 1 3/4-inches to 2-inches thick
1/2 cup balsamic vinegar
1 large beef tomato
1 package spreadable goat cheese
1/4 cup sugar
1 cup French fried onions

Steps:

  • Crush the black peppercorns coarsely and pack liberally on both sides of the beef.
  • Drizzle a few tablespoons of balsamic vinegar over the tenderloins and set at room temperature for 20 to 25 minutes to marinate. Grill tenderloins to likeness. While resting, slice the tomato into 1/2-inch thick slices and spread each slice with goat cheese. Spread it thick! Set the tomatoes aside.
  • Heat a saute pan and add the remaining balsamic vinegar and sugar. Reduce until halved. Set the filet atop the goat cheese tomato slices and drizzle with the reduced balsamic sauce. Top with the French fried onions and serve immediately.

Steps:

  • Mix the bread crumbs and grated cheese in a bowl.
  • Dip the cheese slices into the eggs, and then into the breadcrumb mixture.
  • Refrigerate for 1 hour.
  • Deep fry for about two minutes, or until the outside is golden.

1/2 cup chopped fresh parsley
1 egg
1 tablespoon minced garlic
1 1/2 tablespoons paprika
1/2 tablespoon salt
1/2 tablespoon pepper
24 wonton wrappers
1 egg, beaten
oil (for frying)

Steps:

  • Mix cheese, parsley, egg, garlic, paprika, salt and pepper.
  • Place a tablespoonful on each wonton wrapper, in a strip along one edge, leaving 1/4 inch edge.
  • Fold sides in and roll up.
  • Brush edge with egg and press to seal.
  • Heat 1/4 cup oil until hot.
  • Fry 6 at a time, until a deep golden brown, turning once, about 1 minute per side.
  • Add more oil to skillet as needed.
  • Serve hot.

For Fried Green Tomatoes:
18 1/4-inch-thick slices green tomatoes (about 6 tomatoes)
1 cup all purpose flour
1/2 cup yellow cornmeal
3 large eggs, beaten to blend
1 cup peanut oil (for frying)
For Corn Salad:
1/4 cup fresh lime juice
1/3 cup olive oil
1 clove garlic, minced
1/2 teaspoon salt (or to taste)
1/8 teaspoon ground cayenne pepper
1 15 ounce) can black beans, rinsed and drained
1 1/2 cups fresh corn kernels
1/2 red bell pepper, chopped finely
6 green onions, thinly sliced
Pepper Coulis:
1 1/2 cups roasted red peppers, (drained if using jarred peppers)
2 T. red wine vinegar
2 T. vegetable oil
pinch of sugar & salt to taste
Garnishes:
12 oz fresh chevre, (goat cheese)
6 T. pine nuts
12 fresh basil leaves, chiffonade

Steps:

  • If preparing for 6: Slice goat cheese into 12 1 oz portions. Prepare corn salad: Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed. Place the corn, black beans, green onions, and red peppers in a bowl, dress with marinade, mix well. Refrigerate until ready to use. Prepare red pepper coulis: Blend peppers, oil, vinegar, sugar, and salt in a blender or food processor until very smooth. Adjust seasoning. Refrigerate until ready to use. Prepare fried green tomatoes: Preheat oven to warm. Sprinkle all green tomato slices with salt and pepper. Place 1/2 cup flour in shallow bowl. Mix remaining 1/2 cup flour with cornmeal in another shallow bowl to blend. Working with 1 green tomato slice at a time, coat with flour, then egg, then flour-cornmeal mixture. Transfer to plate. Line a baking sheet with paper towels. Heat oil in heavy large skillet over medium-high heat. Working in batches, fry no more than 4-5 green tomatoes until golden brown, about 2 minutes per side. Using slotted spoon, transfer to prepared baking sheet; sprinkle with salt and pepper. Keep warm in oven. To assemble: Place about 1/2 cup of the corn salad on each plate. Top with one fried tomato slice, then a layer of goat cheese. Repeat and end with a tomato on top. Drizzle about 1/4 cup of red pepper coulis on top of each stack, garnish with 1 T pine nuts, a little basil chiffonade, and approx 1 T. corn salad.

Ragout:
1/4 lb country ham, finely chopped
1/2 finely chopped onion
14 oz. can diced tomatoes
1/4 cup red wine
1/4 cup heavy cream
1/2 tsp. dried basil
1/2 tsp. coarsely ground black pepper
1/2 tsp salt
1/4 to 1/2 cup crumbled goat cheese
4 tbsp Olive Oil
One Fried green tomato. Sliced to 1/4 inch.
1/4 cup flour
1/4 cup bread crumbs
4 tbsp olive oil

Steps:

  • Coat the tomatoes w/ the bread crumbs and flour and fry them in a skillet with the oil until softened. Salt & pepper lightly if desired. Pat on towel. In a separate skillet, fry the ham until crisp. Add the oil, onions and spices and sautee until onions are clear. Add the tomatoes and add heat until bubbling. Add wine and continue to heat untill liquids reduced. Add cream, then cut heat to minimum and stir for a minute or two. Allow to cool for 3-4 minutes. Add goat cheese and toss. Serve ragout over Fried green tomato slices.

CARAMELIZED ONION & GOAT CHEESE TART WITH FRIED SAGE RECIPE



Caramelized Onion & Goat Cheese Tart with Fried Sage Recipe image

3 Tbsp unsalted butter
5 large yellow onions, sliced, about 1/8 inch thick
Salt
Pepper
1/3 cup white wine
16-18 oz box frozen puff pastry
1 egg
6 Tbsp goat cheese
5 Tbsp olive oil
20 fresh sage leaves

Steps:

  • Preheat oven to 400. In a large pot, heat butter on medium high. Add about half the onions and cook for 5 minutes. Add remaining onions and season generously with salt and pepper. Stirring occasionally to break up the rings and prevent burning, cook for about 10 minutes, until there is some browning at the bottom of the pan. Add wine, scraping up any browned bits. Reduce heat to medium low and remove puff pastry from the freezer to thaw. Cook the onions for about 30 minutes more, stirring every few minutes, until they are fully caramelized. Look for a rich brown colour and an almost sticky consistency. On a lightly floured surface, roll each sheet of dough into a 10 " by 10 " square. Lightly score them with a fork several times, leaving about a 1 inch border around the edges. Whisk the egg with a tsp of water to create an egg wash and brush it around the 1 inch border. Transfer the dough to parchment paper lined baking sheets. Divide the onions between the two sheets of dough, spreading them out evenly but leave the 1 inch borders. Dot each tart with 9 tsp of goat cheese. Bake until the dough is puffed and golden, about 20 minutes. In the meantime, heat the olive oil in a small saucepan until smoking. Working in batches of a few leaves at a time, fry the sage for about 15 seconds until the leaves start to brown. Use tongs to transfer to a paper towel lined plate to drain the excess oil. Top the finished tarts with fried sage leaves. Makes 2 tarts, about 8 appetizer portions or 4 entree portions.
