4 flour tortillas
vegetable oil (enough for frying)
cinnamon-sugar (for garnishing)
honey (for garnishing)
chocolate syrup (for garnishing)

Steps:

  • Heat up enough oil for frying in a cast iron skillet over medium heat.
  • stack four flour tortillas evenly and cut them into four triangles.
  • Once oil is hot begin frying the sopapillas. Fry two at a time. Once the sopapillas begin to puff flip them over and fry until the bottom turns a golden color. Then transfer to a paper towel lined plate to drain.
  • Immediately sprinkle the sopapillas with cinnamon-sugar. Then drizzle with honey and chocolate syrup is desired.

10 small flour tortillas
1/2 cup white sugar
1 ½ teaspoons ground cinnamon
Vegetable oil, for frying

Steps:

  • In a large pot or skillet, add at least 1 inch of oil and heat over medium-high heat (350F if using thermometer). While the oil is heating, combine the sugar and cinnamon in a shallow dish and set aside. Fry tortillas 2-3 minutes, flipping about every 15 seconds until golden brown and crisp through. Remove from oil and let the excess oil drip back into the pan. Immediately dredge or sprinkle tortillas with cinnamon-sugar mixture. Serve immediately.

1 (21 ounce) can apple pie filling
6 (8 inch) flour tortillas
1 teaspoon ground cinnamon
⅓ cup margarine
½ cup white sugar
½ cup packed brown sugar
½ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spoon fruit evenly onto all tortillas, sprinkle with cinnamon. Roll up tortillas and place seam side down on lightly greased 8x8 baking pan.
  • Bring margarine, sugars and water to a boil in a medium sauce pan. Reduce heat and simmer, stirring constantly for 3 minutes.
  • Pour sauce evenly over tortillas; sprinkle with extra cinnamon on top if desired. Bake in preheated oven for 20 minutes.
  • Makes 6 large tortillas; may be cut in half to serve 12.
