Steps:

  • Dip chicken livers in milk-egg wash (blended together).
  • Roll or toss in seasoned flour; shake off excess.
  • Preheat oil to 375F and deep fry around 7 minutes or until done.
  • The remaining milk-egg wash and seasoned flour are good for cut up chicken, cooked by your favorite method (panfried or ovenfried).

1 large yellow onion
1/4 cup olive oil
2 tablespoons Worcestershire sauce

Steps:

  • Take the chicken livers you are preparing and dredge them in sifted salt, pepper, and flour. Shake off excess. Slice yellow onion in rings and add livers and onion slices to cast iron skillet. Fry until nicely browned and crisp. Then add Worcestershire sauce.
  • This was the "secret" ingredient that set them apart from ordinary fried chicken livers. Fry them in olive oil, and be sure the oil and skillet are VERY hot before adding the livers and onions.

  • Place chicken livers in buttermilk and let stand 10 minutes.

1 lb fatty smoked bacon
1 lb chicken liver, rinsed and drained (do not pat dry)
1 cup all-purpose flour
2 teaspoons salt
1 teaspoon black pepper
1 large yellow onion, peeled and sliced thin
1 tablespoon olive oil
1 tablespoon butter (the real stuff)

Steps:

  • Heat butter and olive oil in a large pan over medium heat.
  • add onions and 1 tsp salt.
  • Cook, stirring occasionally until onions are deep brown and caramelized.
  • While onion is cooking, fry up bacon in a large skillet.
  • Cook all the bacon and drain on a paper towel, leave drippings in the pan.
  • Mix flour, 1 tsp of salt and 1 tsp pepper.
  • Dredge livers in flour, making sure to coat evenly.
  • Cook livers in bacon fat until all sides are brown and crispy. You may have to do this in batches.
  • Serve with bacon and onions.

This recipe is a mix between the fried chicken livers they sold at the state fair in Michigan growing up, and the fried chicken livers I had in New Orleans. Very good! Even people who HATE liver have drooled over these spicy little gems.

1 lb chicken liver
2 cups buttermilk
1 teaspoon louisiana hot sauce
2 tablespoons Worcestershire sauce
1/2 cup cornflour
1/2 cup all-purpose flour
1 teaspoon fresh ground pepper
1 teaspoon Old Bay Seasoning
1 teaspoon creole seasoning
1/2 teaspoon cayenne pepper
1 cup peanut oil
1/4 cup mayonnaise
2/3 cup sour cream
2 tablespoons lemon juice
2 large garlic cloves, finely minced
1 teaspoon Old Bay Seasoning
2 teaspoons Worcestershire sauce

Steps:

  • Soak chicken livers in mixture of buttermilk, hot sauce, and worcestershire sauce for at LEAST 2 hours in the fridge.
  • For the sauce you want to mix mayo, sour cream, lemon juice, garlic, old bay seasoning and worcestershire sauce in a bowl until fully incorperated. You want to make it before you fry the livers to give the flavors time to mingle. Place in fridge until just about to serve.
  • In a bowl combined corn flour, all purpose flour, black pepper, cayenne pepper, old bay and creole seasoning.
  • Add your peanut oil to a large sauce pan. Make sure it's large enough to fit the livers, but leave enough room in between so they are not too crowded. Or you can do them in batches.
  • Roll the livers in the dry seasoned mixture and place in the hot pan. Try to keep the heat between Med-high to Med.
  • Cook about 8-10 minutes on each side. It depends on the size of the livers. Turn down the temp if they start getting too brown too fast.
  • If not sure on their being done, you can just brown them on each side and then pop them in a 350F for about 10 minutes.
  • Once done, serve immediately with a generous spoon full of dipping sauce.

1 lb chicken liver (drained and rinsed thoroughly)
1 medium onion (cut into slivers)
3 sprigs green onions (cut into 1 inch-long sections)
2 tablespoons vegetable oil (or other cooking oil)
3 tablespoons oyster sauce
1 teaspoon black pepper
1/2 cup chicken broth

Steps:

  • Sauté both types of onions in the vegetable oil over low-medium heat for about 3-5 minutes.
  • Add the (drained and rinsed) chicken livers and turn the heat up to medium-high and sauté livers on each side (turning over once) until the livers darken in color and become opaque looking.
  • Add the chicken broth, oyster sauce and black pepper and stir thoroughly.
  • Then let simmer uncovered for approximately 10-15 more minutes (or until the livers are cooked just all the way through and sauce is thickened).

  • Place the chicken livers in a colander, and rinse with water. Drain the livers well. Whisk together the egg and milk in a shallow bowl until well blended. Place the flour, garlic powder, and salt and pepper in a resealable plastic zipper bag, and shake to combine.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

Where I live, there is absolutely no place to go out and eat chicken livers, so I came up with this recipe. My son just loves it!

2 Tbsp kosher salt
2 Tbsp paprika
2 tsp garlic powder
1 tsp cayenne pepper (optional)
slice flour for dredging
shortening for frying

Steps:

  • 1. Melt shortening in a 12-inch cast iron skillet or heavy fry pan over medium heat.
  • 2. Combine salt, paprika, garlic powder, and cayenne pepper. Liberally season livers with this mixture. Dredge livers in flour and shake off excess.
  • 3. Place livers into the pan and fry until cooked through, turning once.... dont overcook them, or they'll turn out chewy and bitter.

I have often had this dish for lunch along with Spanish yellow rice and Cuban black beans. This is my version of this tasty dish and it is easy to make.

1/2 cup chopped onion
2 tablespoons light soy sauce

  • Preparation:.
  • Clean the chicken livers by removing the fat and grizzle, if individual pieces are in two sections cut in half, rinse under cold water and drain, set aside.
  • Remove the core and seeds from the green pepper and coarse chop, set aside.
  • Remove the outer skin of the onion and coarse chop, set aside.
  • In a small dish add the soy sauce, sesame oil, rice wine (optional) and salt & pepper to taste, set aside.

  • Place the chicken livers in a broiling pan (Ok to use tin foil for easy clean up), broil for about 10-15 minutes on one side, then turn and continue broiling for about 10 more minutes on the second side (times will vary based on the type of broiler used), set aside.
  • In a wok add the peanut oil and when hot add the green peppers and onions, then stir-fry for 1 minute.
  • Add the soy sauce mixture and stir-fry for about 1 minute.
  • Add the chicken livers and stir-fry for about 1-2 minutes.
  • On individual serving plates place the chicken livers along with some yellow Spanish rice (optional) and Cuban black beans (optional).

1 carrot
2 stalks celery
1 clove garlic
2 slices fresh ginger root
1 tablespoon cornstarch
3 tablespoons sugar
1 tablespoon soy sauce
1/2 cup vinegar
1/4 cup water
2 to 3 tablespoons oils
1/2 teaspoon salt
dash pepper

Steps:

  • 1. Cut chicken livers in two. Boil water and pour over livers to blanch. Stir once or twice, then drain. Rinse quickly in cold water and drain again. 2. Peel cucumber and cut in half lengthwise then seed and slice crosswise in 1/2-inch sections. Slice carrot and celery in similar 1/2-inch sections. Crush garlic slice ginger root. 3. Combine cornstarch, sugar, soy sauce, vinegar and water. 4. Heat oil. Brown garlic and ginger root lightly. Add chicken livers and stir-fry gently to coat with oil. 5. Stir in vegetables, salt, pepper and cornstarch mixture. Simmer, covered, until done (3 to 5 minutes). Fried Chicken Livers, Mom's image

Number Of Ingredients 9

1/2 c flour
1 tsp salt
1/2 tsp pepper
2 lb chicken livers
6 Tbsp butter
2 Tbsp oil
2 medium onions
3 clove garlic
1 jigger sherry

Steps:

  • 1. In paper bag mix flour, salt and pepper. Place chicken livers, a few at a time, in bag and shake to coat. Cook them in a skillet in the butter and oil for about 10 min. Remove from skillet and add chopped onions and garlic cloves. When onions are transparent, return the livers to the pan and add the sherry. Cook on high flame for 1 min.
