Recipe video above. Crispy seasoned chicken, topped with a mandatory slice of melted cheese and piled onto soft rolls with onion, avocado, lettuce, tomato and garlic mayo. The key to juicy chicken is to cook it hard and fast! You can eyeball the Seasoning - it will be tasty as long as you use "around" the right amounts. :)

Number Of Ingredients 19

1/3 cup /80g flour ((any white))
1 tsp salt
½ tsp black pepper
¾ tsp paprika
1 tsp thyme
½ tsp garlic powder
½ tsp onion powder
2 tbsp olive oil
2 large onions (, halved them sliced (white, brown or yellow))
400 - 500g / 14 oz - 1 lb chicken breast (2 pieces) (, cut in half horizontally into 2 thin steaks)
4 - 8 slices Swiss or other melting cheese slices ((Note 1))
4 soft rolls ((I used brioche burger buns))
1 avocado
Lettuce
2 large tomatoes
½ cup mayonnaise ((I use whole egg))
1 large garlic clove (, minced)
French fries
Baked potato wedges

Steps:

  • Mix Garlic Mayo ingredients in a small bowl, set aside for 20+ minutes.
  • Mix Seasoning in a flat bowl / dish.
  • If required, pound chicken to about 1 cm / 2/5" thick. If wanting to be exact, trim to shape of rolls BUT ensure it is about 15% larger (it shrinks) (Note 2).
  • Heat 1 tbsp oil in a skillet over high heat (if doing on BBQ, drizzle flat plate).
  • Add onion and cook, turning regularly, for 5 minutes until golden. Season with salt and pepper, toss, then remove.
  • While cooking the onions, preheat oven to 160C/320F. Split rolls, then lightly toast / warm the rolls (if using BBQ, just toast the cut side until crispy). Leave in turned off oven with door ajar while you cook chicken.
  • Heat 1 tbsp oil into the same skillet, still on high heat.
  • Dredge chicken in Seasoning, shake off excess, then place in skillet. Repeat.
  • Cook for 2 ½ minutes until golden, then flip.
  • Top with cheese then leave for 1 1/2 minutes. When the underside is golden, if the cheese is not yet melted, place lid on for 15 seconds (or tray or foil).
  • Remove chicken from skillet onto plate. Cover loosely with foil while you start assembling the burgers.

These Chicken Sandwiches are crispy on the outside with a juicy center. We're sharing all of our best tips for making flavorful fried chicken breast with a thick and shaggy crust that crunches when you bite into it.

3 medium chicken breasts (boneless, skinless, halved into 6 cutlets)
1 1/2 cups low-fat buttermilk
1 Tbsp hot sauce ((we use Frank's Red Hot brand))
1 tsp salt
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
1 1/2 cups all-purpose flour
2 tsp salt
1 tsp black pepper (freshly ground)
1 tsp baking powder
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
Oil for frying - vegetable oil (canola oil or peanut oil)
6 burger buns (buttered and toasted)
6 green lettuce leaves
1 large tomato (sliced)
2 dill pickles (sliced into rings)
Mayonnaise (or your favorite sauce)

Steps:

  • Pound chicken cutlets between 2 sheets of plastic wrap and pound to an even 1/2" thickness so they cook more evenly.
  • In a large mixing bowl, whisk together marinade ingredients. Add Chicken, turning to coat then cover and refrigerate for 2-4 hours or overnight.
  • In a separate shallow bowl, whisk together breading ingredients: flour, salt, pepper, baking powder, paprika, onion powder and garlic powder. Remove a piece of chicken from the marinade, letting excess drip off and dip chicken into flour mixture, pressing it on with your hands to coat well. Transfer to a wire rack.
  • Heat 1 " oil in a soup pot or dutch oven to 350˚F. Just before frying chicken, dip it into the seasoned flour again for a thick and shaggy exterior.Add chicken, 2 pieces at a time for a smaller pot so you don't crowd and reduce the temperature of the oil too quickly.
  • Place chicken into the oil one by one. Adjust the flame to keep the oil temperature at 300-325˚F. Cook 3-4 minutes on the first side or until browned and crisp then flip and cook another 2-3 minutes on the second side or until cooked through and chicken is browned and crisp all over.
  • Transfer to a wire rack set over a baking sheet. The internal temperature will continue to rise as it rests. The final resting temperature of the chicken should reach 165˚F.
  • Lightly butter and toast the cut sides of your buns and build your crispy chicken sandwiches with desired toppings.

1 teaspoon salt

½ teaspoon cayenne pepper
8 boneless, skinless chicken thighs
1 ½ cups plain greek yogurt
3 tablespoons fresh dill, chopped
1 teaspoon garlic powder
2 tablespoons lemon juice
¼ cup grated parmesan cheese
2 cups all-purpose flour
1 tablespoon salt
2 teaspoons black pepper
1 ½ teaspoons cayenne pepper
1 tablespoon garlic powder
peanut or vegetable oil, for frying
softened butter, for buns
8 brioche burger buns
1 head butter lettuce
2 tomatoes, sliced

Steps:

  • Make the buttermilk marinade: In a medium bowl, combine the buttermilk, salt, pepper, and cayenne. Toss in the chicken thighs in the marinade to coat. Marinate for at least 1 hour in the refrigerator, or overnight.
  • Make the dill dressing: In a small bowl, combine the yogurt, dill, garlic powder, lemon juice, and Parmesan cheese. Cover and let sit for at least 1 hour in the refrigerator to chill.
  • Make the seasoned flour: In a medium bowl, combine the flour, salt, pepper, cayenne, and garlic powder. Dip the marinated chicken in the flour mixture until the chicken is completely covered.
  • Heat the oil in a deep pot until it reaches 350˚F (180˚C). Do not fill more than halfway with oil. Carefully fry the chicken for 7 minutes, or until cooked through.
  • The internal temperature should reach 165˚F (75˚C), and the chicken should be golden brown and crispy. Drain on a paper towel-lined plate or wire rack.
  • Heat a large skillet over medium heat. Butter the cut sides of the burger buns, then toast on the hot skillet until browned and crisp. Build the sandwiches with the toasted buns, lettuce, fried chicken, tomato slices, and dill dressing.

4-6 large chicken breasts, boneless and skinless
COATINGS
2 c corn flake crumbs
1 c flour
1 1/2 tsp each: sea salt, black pepper, cayenne pepper, garlic powder
3 large eggs
1/4 c water
OIL FOR FRYING
1/3 c vegetable oil
BREAD
1 large loaf of bread (any kind you like, i used an old world french bread, pre sliced)
SANDWICH FILLINGS
2 large tomatoes (sliced)
1 bag(s) romaine lettuce leaves (or any lettuce)
1 jar(s) mayonnaise (or other topping like ranch dressing, bbq sauce, sour cream)

Steps:

  • 1. Butterfly cut each chicken breast, or pound it gently but firmly with the side of a saucer as in this photo. You will be making the meat thinner and larger.
  • 2. Put corn flake crumbs, flour and spices together in bowl. Mixing well.
  • 3. Beat the eggs and water together in a separate bowl.
  • 4. Coat the chicken with the corn flake mixture.
  • 5. Dip coated chicken into the egg mixture.
  • 6. Coat with the corn flake mixture again. Then put in Skillet with vegetable oil to fry.
  • 7. Fry the chicken about 7 minutes on each side, until chicken is browned, cooked and juices are clear.
  • 8. Place two slices of desired bread on a plate. Spread each slice with mayonnaise (or other desired topping).
  • 9. Put lettuce on one slice of bread and a chicken breast on the other slice of bread.
  • 10. Put sliced tomato on top of one side.
  • 11. Put both sides of sandwich together.
  • 12. Cut sandwich in half on the diagonal (I am so fussy about this!)
  • 13. Serve! *** If you are having guests, let them help by assembling their own sandwiches with toppings of choice!

4 tablespoons olive oil
½ red onion, diced
½ red bell pepper, diced
1 jalapeno pepper, diced
2 cloves garlic, diced
1 ½ pounds ground chicken
¼ cup diced artichoke hearts
4 tablespoons diced black olives
1 large egg
2 tablespoons seasoned bread crumbs
1 tablespoon minced fresh parsley leaves
1 teaspoon dried oregano
½ teaspoon Hungarian paprika
½ teaspoon chili powder
½ teaspoon red pepper flakes
½ teaspoon ground cumin
½ teaspoon celery salt
¼ teaspoon ground sage

Steps:

  • Heat 2 tablespoons oil in a medium saute pan over medium heat. Add onion, bell pepper, jalapeno pepper, and garlic. Saute until onion is translucent and vegetables are soft, 5 to 7 minutes. Remove from heat and let cool, about 10 minutes.
  • Add cooled vegetables to chicken and mix thoroughly. Add artichokes, olives, egg, bread crumbs, parsley, oregano, paprika, chili powder, red pepper flakes, cumin, celery salt, and sage. Thoroughly mix all ingredients and form into 4 patties. Cover and refrigerate for 30 minutes.
  • Heat remaining olive oil in the same pan over medium-high heat. Cook patties until no longer pink in the centers, 2 to 3 minutes per side.
