1 shallot, minced
3 tablespoons red wine vinegar
1 tablespoon white balsamic vinegar
1 clove garlic, minced
1 tablespoon fresh lemon juice
1 tablespoon Dijon mustard
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh dill
½ cup extra-virgin olive oil, or more to taste
10 fresh asparagus spears, trimmed to 5 inches
2 ears corn, husked
2 zucchini, halved lengthwise
2 yellow squash, halved lengthwise
1 bunch green onions, tops trimmed a few inches
1 large red bell pepper, cut lengthwise into 4 sections and seeded
1 large red onion, sliced thickly
¼ cup olive oil, or as needed
salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk shallot, red wine vinegar, white balsamic vinegar, garlic, lemon juice, Dijon mustard, parsley, chives, cilantro, and dill together in a large bowl. Slowly stream olive oil into the mixture while whisking vigorously until the oil is incorporated into a smooth and creamy dressing.
  • Arrange asparagus, corn, zucchini, yellow squash, green onions, bell pepper, and red onion onto baking sheets. Brush olive oil onto all the vegetables to coat; season with salt and pepper.
  • Cook vegetables directly on preheated grill, turning frequently, until slightly charred and just tender, about 5 minutes for green onions, 8 minutes for asparagus, zucchini, yellow squash, bell pepper, and red onion, and 10 minutes for corn. Remove vegetables to the baking sheets used for preparation and cool.
  • Cut asparagus, green onions, zucchini, yellow squash, and red bell pepper crosswise into 1-inch pieces and put into a large bowl. Quarter red onion slices; add to bowl. Cut corn kernels from cobs; add to bowl. Let vegetables cool to room temperature.
  • Drizzle vinaigrette over the vegetable mixture and toss to coat.

¼ cup extra-virgin olive oil
¼ cup red wine vinegar
1 teaspoon honey

2 carrots, cut into bite-size pieces
½ cup diced celery

1 small red pepper, julienned thin

Juice of 1 orange
2 tablespoons rice wine vinegar
2 tablespoons peanut oil

Steps:

  • Combine the chiles, cilantro, orange zest, orange juice, rice wine vinegar, Mirin, salt, pepper, chicken and shrimp. Toss all to coat well. Cover and place in the refrigerator to marinate for 2 hours.
  • Meanwhile, to make the coconut peanut sauce: Heat a saucepot over medium heat and add the peanut oil. Add the chiles and garlic and toast until dark brown but not burnt. Add the rice wine vinegar and reduce by half. Add the coconut milk and bring to a simmer. Whisk in the peanut butter and mix well to combine. Season with salt, pepper, and red pepper flakes. Remove from the heat and set aside.
  • Preheat a grill or grill pan.
  • Grill the chicken for 3 to 4 minutes on each side and shrimp 2 minutes on each side, or until pink and opaque. Remove the chicken and shrimp from the grill. Let the chicken rest for a minute, then assemble the skewers with 2 pieces of chicken and 2 shrimp on each skewer. Serve the skewers over vegetable salad, with a bowl of coconut peanut sauce for dipping.
  • Just before serving, combine the cabbage, red pepper, yellow pepper, red onion, snap peas, cilantro, orange juice, rice wine vinegar, peanut oil, and red wine vinegar in a large bowl. Taste the salad, then season with salt, and pepper, to taste.

  • Drain, and place eggs in ice water for 10 minutes before peeling or cool running under continuously running cold water. Peel eggs, pat dry, and cut in half lengthwise. Remove yolks, and place in medium bowl, mashing with a fork to a fine crumble.
  • Add mayonnaise, mustard, lemon juice, salt and pepper to yolks and mix vigorously until well combined. Pipe or spoon filling into halves. Garnish with a sprinkle of paprika. Chill until ready to serve.
  • Season chicken tenderloins with kosher salt and black pepper. Spray nonstick skillet with nonstick spray, add olive oil and heat to medium high. Add seasoned chicken and sear until done turning once (6-8 minutes).
  • When ready to serve, divide prepared salad into 4 large salad plates. Spoon onto each serving plate the following: 1/2 cup cucumber and onion salad, 1/3 cup corn relish, 1/2 cup grape tomatoes, 2 thick slices of vine ripe tomatoes and 2 deviled eggs. 1 small English cucumber
1 small ripe cantaloupe
1 small ripe pineapple
1 small ripe mango
1 cup raspberries
2 to 3 tablespoons honey
2 limes, juiced
Zest of 1 lime
Kosher salt
Ground chile piquin

Steps:

  • Peel the jicama and cut into matchstick-size pieces. You should have about 1 cup. Peel alternating strips from the cucumber, then halve and slice one half into thin slices. Store the other half for another use. Halve the cantaloupe, discard the seeds and scoop out 1 cup melon balls. Reserve the rest for another use. Trim the peel from the pineapple and halve. Reserve half for another use. Halve the remaining half, remove the core, and thinly slice. Peel the mango, cut off the cheeks, and thinly slice.
  • Combine the prepped fruit in a bowl with the raspberries. Add the honey, lime juice, zest, some salt and chile powder to taste.

  • In a krudit jar, add the olive oil, parsley, vinegar, salt, ground mustard, pepper, and garlic.
  • Put on tight fitting lid; shake vigorously to combine ingredients.
  • Pour over salad and toss to coat.
  • Cover and refrigerate for at least 2 hours and up to 8 hours.
  • Serve with a slotted spoon.

2 large cucumbers
1 large green bell pepper
1 large tomatoes
1/2 sweet onion (a whole one if you prefer)
1/4 cup water
1/4 cup white vinegar
1/4 cup cooking oil
2 tablespoons sugar
1/4 teaspoon garlic powder
1/4 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
1/2 teaspoon mccormick 1 step sweet onion & pepper seasoning

Steps:

  • Wash and peel cucumbers.
  • Dice cucumbers into 1/2 inch cubes.
  • Wash green bell pepper and remove seeds.
  • Dice green bell peppers into 1/2 inch cubes.
  • Wash tomato and remove core.
  • Cut tomato into 1/2 inch pieces.
  • Peel onion and dice into 1/2 inch cubes.
  • Then mix all vegetables in a bowl.
  • In a separate bowl mix all the ingredents for the dressing.
  • Be sure to stir and mix well.
  • Pour dressing over the vegetables and let stand covered in the refrigerator for about one to two hours.
  • Then it will be ready to serve.

With summer here salads just seem to be what I crave with my meals. This is a colourful salad that can be prepared ahead of time using mainly ingredients that are locally available and be ready and waiting when you get home, or take it along for as part of a picnic. Try to use fresh tarragon. It has far more flavour than dried. The tomatoes to use are those wonderful large slicing tomatoes that are available in the summer.

1 lb French haricots vert, trimmed and halved
1/2 cucumber, thinly sliced
1/2 cup radish, sliced
1/2 cup red onion, thinly sliced then halved
2 large fresh tomatoes, chopped
1 cup feta cheese, crumbled
1/4 cup walnuts, chopped
3 tablespoons lemon juice, preferably freshly squeezed
3 tablespoons extra virgin olive oil
1 -2 tablespoon fresh tarragon, chopped or 1 teaspoon dried tarragon
1 teaspoon sugar (or to taste)
1 teaspoon Dijon mustard
1 -2 garlic clove, minced
salt & freshly ground black pepper, to taste

Steps:

  • Steam the Haricots verts beans until tender crisp (about 3 min).
  • Drain, run under cold water to stop cooking and drain again.
  • In a large bowl, combine the vegetables and feta cheese.
  • Prepare dressing by whisking together all ingredients.
  • Pour dressing over salad and mix well.
  • Sprinkle with chopped walnuts and serve.

A nice fresh summer salad. And so simple. It needs to marinate overnight. So its not quick but it is VERY easy. A friend recently asked for the recipe and I just had to laugh. You can easily do this from memory.

1 basket cherry tomatoes
1 bunch fresh broccoli
1 head cauliflower
1/2 bottle marzetti sweet italian salad dressing

Steps:

  • 1. Cut tomatoes in half. Cut broccoli and cauliflower into florets or bite sized pieces. Pour dressing on veggies and mix. Cover and refrigerate overnight. Serve cold as a side salad.
  • 2. VARIATION: Right before serving you can add chopped hard boiled eggs and/or cooked chicken meat to make a main dish sald. NOTE: Marzetti Sweet Italian Salad Dressing is available at Walmart and many grocery stores in the produce section.

3/4 pound carrots, trimmed and scraped
1/4 pound snow peas
Salt to taste
4 red ripe plum tomatoes, peeled and seeded and cut into 1/2-inch cubes
1 ear fresh sweet corn
Freshly ground pepper
3 tablespoons balsamic vinegar
3 tablespoons olive oil

Steps:

  • Cut the carrots into 3/8-inch chunks. Trim the snow peas and rinse well.
  • Place the carrots in a saucepan and add enough water to cover them and the peas when they are added. Add salt. Bring to a boil and simmer for about 4 minutes. Add the peas to the carrots and cook for 2 minutes more. The vegetables must remain crisp and tender. Drain well. Let cool.
  • Using a sharp knife, cut the corn kernels from the cob. Combine the carrots, peas, corn kernels and the remaining ingredients in a mixing bowl. Blend well and serve.

Grilled Vegetable Salad with Fresh Basil image

A nice side for grilled chicken or steak.

1/4 cup extra-virgin olive oil
1 garlic clove, minced
2 large Japanese eggplants, trimmed, quartered lengthwise
2 zucchini, trimmed, quartered lengthwise
2 yellow squash, trimmed, quartered lengthwise
2 large whole tomatoes
1 ear of yellow corn, husked
1 small white onion, quartered through stem end with some core still attached to each piece
1/2 cup thinly sliced fresh basil

Steps:

  • Prepare barbecue (medium-high heat). Combine oil and garlic in large bowl. Place vegetables on baking sheet. Brush with garlic oil; sprinkle with salt and pepper.
  • Grill vegetables until slightly charred and just tender, turning often, about 10 minutes. Transfer vegetables to work surface. Cut corn from cob. Cut remaining vegetables into cubes. Toss all vegetables and basil in bowl with garlic oil. Season with salt and pepper.
