1/3 c vegetable oil ..add 1 egg
1/2 c fresh seeded tomatoes, coarsly chopped...or pureed
1/2 tsp vanilla extract
1-1/2 c whole wheat flour, sifted
1/2 tsp baking soda
1 pinch salt, ...sea salt if you have it
1/8 tsp nutmeg
1/4 tsp cinnamon
1/2 c chopped nuts...this is optional
2-3 fresh tomatoes, seeded & chopped
whipped cream

Steps:

  • 1. Pre-heat oven to 325 F. Butter and flour a 9 inch cake pan. Set aside. In a bowl whisk together oil and egg. Add tomatoes and vanilla. Set aside. In a second bowl, mix remaining ingredients, exceptwhipped cream.
  • 2. In a second bowl, mix remaining ingredients, except the whipped cream! Fold into first mixture. Pour into baking pan. Bake in oven 50 minutes. Garnish and serve wth whipped cream... Enjoy the cake..... From a box of saved recipes......Nancy 7/5/12

Nonstick cooking spray, for spraying loaf pan
1 pound vine tomatoes (about 3)
1 cup light brown sugar
6 tablespoons butter, at room temperature
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
1 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Spray a loaf pan with nonstick cooking spray.
  • Puree the tomatoes in a blender and measure out 2 cups for the cake. Reserve any remaining juice for the glaze.
  • In the bowl of a stand mixer, cream the brown sugar and butter together until light and fluffy. Beat in the eggs one at a time, and then mix in the 2 cups tomato puree. Sift together the flour, baking soda, cinnamon and salt in a bowl. Add the dry ingredients to the tomato-butter mixture and mix to combine.
  • Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, 45 to 50 minutes. Let cool slightly, and then remove from the pan and transfer to a rack to cool completely.
  • To make the tomato glaze, mix together the confectioners' sugar and 2 tablespoons of the reserved tomato juice until the mixture reaches a glaze-like consistency. Drizzle over the top of the cake.

In August and September, when tomatoes are at their ripest, make a batch of fresh tomato sauce. At the market, look for the cracked, slightly bruised tomatoes sold at a discount. The flesh of the tomato should be dense, sweet and blood red. This makes a very fresh- and bright-tasting sauce in a manageable small batch. Take advantage of good tasty tomatoes and fill a few zip-top bags for the freezer.

5 pounds tomatoes
3/4 teaspoon salt
2 tablespoons olive oil
1 tablespoon tomato paste
1 garlic clove, halved
1 basil sprig
1 bay leaf

Steps:

  • Cut tomatoes in half horizontally. Squeeze out the seeds and discard, if you wish. Press the cut side of tomato against the large holes of a box grater and grate tomato flesh into a bowl. Discard skins. You should have about 4 cups.
  • Put tomato pulp in a low wide saucepan over high heat. Add salt, olive oil, tomato paste, garlic, basil and bay leaf. Bring to a boil, then lower heat to a brisk simmer.
  • Reduce the sauce by almost half, stirring occasionally, to produce about 2 1/2 cups medium-thick sauce, 10 to 15 minutes. Taste and adjust salt. It will keep up to 5 days in the refrigerator or may be frozen.

4 cups chopped green tomatoes
1 tablespoon salt
½ cup butter
2 cups white sugar
2 eggs
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon baking soda
¼ teaspoon salt
½ cup raisins
½ cup chopped walnuts

Steps:

  • Place chopped tomatoes in a bowl and sprinkle with 1 tablespoon salt. Let stand 10 minutes. Place in a colander, rinse with cold water and drain.
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • Cream butter and sugar. Add eggs and beat until creamy.
  • Sift together flour, cinnamon, nutmeg, soda and 1/4 teaspoon salt. Add raisins and nuts to dry mixture; add dry ingredients to creamed mixture. Dough will be very stiff. Mix well.
  • Add drained tomatoes and mix well. Pour into the prepared 9 x 13 inch pan.
  • Bake for 40 to 45 minutes in the preheated oven, or until toothpick inserted into cake comes out clean.
