This dish is light and so tasty! It has a mexican-like flavor. Its versatile enough that you could change up ingredients, adding more veggies, maybe red and yellow peppers, adding cheeses, but its really yummy as is too! Great for a dinner party, presentation is beautiful! Enjoy!

Number Of Ingredients 20

4 boneless skinless chicken breasts (sliced to pane thinness, slice each breast to make thinner slices)
2 potatoes (sliced, medium, no-too-thick thickness)
1 large onion, finely chopped
1 large onion, sliced thin in circles
1 jalapeno pepper (or any hot pepper of your choice, finely chopped)
3 garlic cloves (finely chopped)
2 -3 teaspoons tomato paste
1 large tomatoes (chopped)
1 dash fresh lemon juice
1 bunch fresh cilantro
4 -6 tablespoons butter
olive oil
2 tablespoons cream cheese
1 tablespoon heavy cream
salt and pepper
adobo seasoning, if you have- not necessary really (optional)
1 tablespoon cumin
2 -3 dashes red hot sauce (i.e. Franks Red Hot, any cayenne pepper sauce)
1 teaspoon turmeric
colored tortilla chips (for presentation)

Steps:

  • To prepare the sauce:.
  • Heat 2 tablespoons of butter and a bit of olive oil in a pan. Add chopped onions, pepper, garlic and sauté until tender. Add 2-3 teaspoons of tomato paste, stir around until all coated. Add chopped tomato, stir around, add a bit of water, like ½ cup or so to give some liquid. Add lemon juice. Add salt and pepper to taste. Add a tablespoon of cumin. Add a few dashes of Red Hot.
  • A tumeric and a dash of dry adobo spice if you are using. Add fresh, chopped cilantro, approx.1/2 cup or so, you can't go wrong on amount.
  • Cover and simmer until almost a liquid, approximately 30 minutes. If it gets too thick, you can always add some water.
  • When sauce is finished, it should be a semi-thick consistency. Add two tablespoons of cream cheese and stir until melted, stir in one tablespoon of heavy cream, cover and keep warm. (if too thick, add a little water to loosen).
  • To prepare chicken/potatoes:.
  • In a large frying pan, melt 2 tablespoons of butter and a bit of olive oil.
  • Add sliced, salt and peppered potato slices and fry on each side until golden brown.
  • Transfer to platter and cover with foil to keep warm and to get a bit soft from the steam being covered.
  • In same pan add sliced onions, brown in oil until done, spoon atop potato slices, cover to keep warm.
  • In same pan, add more butter/oil. Add chicken breasts and sauté on each side on low heat, keeping covered, then uncovering when almost done to brown nice.
  • Transfer these to platter and arrange on top of potato/onion slices.
  • Drizzle the sauce atop these and around the platter.
  • Serve extra sauce in a dish on top of a plate decorated with colored tortilla chips.
  • Garnish chicken platter edges with sliced tomatoes and springs of fresh cilantro if you like.

4 (6 ounce) chicken breasts
3 garlic cloves, minced
1/2 onion, diced
2 cups fresh tomatoes, diced
1/4 cup balsamic vinegar
1/4 cup white wine
4 cups spinach, washed and dried
1 teaspoon basil, dried
extra virgin olive oil, for pan
salt and pepper, to taste

Steps:

  • Heat a large skillet and coat the bottom with just enough olive oil (about 2 Tbsp).
  • Saute garlic, dried basil, and onion until fragrant.
  • Flatten chicken breasts to 1/2 inch thick. Sprinkle with salt and pepper, sesar each breast side for about 6 minutes or until done.
  • When you have about 5 minutes left, add the tomatoes, vinegar and wine.
  • Allow to cook down for last 5 minutes.
  • Place a cup of spinach onto a plate, followed by the tomato reduction and then top off with the chicken.
  • Alternatively, toss spinach in the pan and stir for a minute or two, and serve skillet contents on top of egg noodles (our favorite way to eat it!).

1 teaspoon Italian seasoning
4 boneless skinless chicken breasts (about 1 lb)
6 medium plum (Roma) tomatoes, chopped (2 cups)

1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In large reasealable food storage plastic bag, mix dressing and 1 teaspoon Italian seasoning.
  • Add chicken; turn to coat with marinade. Seal bag and refrigerate, turning chicken occasionally, at least 1 hour but no longer than 24 hours.
  • Heat coals or gas grill for direct heat. Remove chicken from marinade; reserve marinade. Place chicken on grill over medium heat. Cover grill; cook 10 to 12 minutes, turning halfway through grilling and brushing with marinade from plastic bag, until juice is clear when center of thickest part is cut (165°F).
  • In medium bowl, stir together tomatoes, olive oil, 1/2 teaspoon Italian seasoning, salt and pepper. Serve chicken topped with fresh tomato salsa.

4 bone-in chicken breast halves (about 10 ounces each), skin on
2 teaspoons chili powder
Kosher salt
Juice of 2 limes
2 tablespoons honey
1/4 cup chicken stock
2 Tablespoons butter
3 medium tomatoes, roughly chopped
1/2 to 1 jalapeno, stemmed and minced with seeds
1/2 medium red onion, grated
1 teaspoon kosher salt
1 clove garlic, peeled

1/2 cup chopped fresh cilantro, leaves and stems, divided

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a large ovenproof skillet over medium-high heat. Add the oil and heat until shimmering. Season the chicken with chili powder and salt, to taste. Lay the chicken in the skillet skin side down and cook until brown, about 4 minutes. Turn the chicken, transfer the pan to the oven, and cook until firm, basting occasionally with the pan drippings, 15 to 20 minutes.
  • While the chicken cooks, make the fresh tomato salsa: Toss the tomatoes with the jalapeno, onion, and the 1/2 teaspoon salt. Smash the garlic clove, sprinkle with the remaining salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Stir the paste into the salsa with the olive oil and 1/4 cup of cilantro.
  • When chicken is cooked through, transfer the pieces to a plate and cover with foil to keep warm. In the meantime, add the lime juice to the pan. After 1 minute, add the honey along with the chicken stock to heat through. Remove pan from heat and stir in reserved 1/4 cup cilantro and butter.
  • To serve, divide the chicken among 4 plates, drizzle with pan sauce, and spoon some salsa over and around.

Steps:

  • Bring 3 cups chicken broth to a boil in a saucepan.
  • While the stock is coming to a boil; heat a large nonstick skillet over med-high heat with the olive oil.
  • Season the chicken with salt, pepper, and red pepper flakes; add chicken to the hot skillet and cook 3-4 minutes or until the chicken is lightly browned.
  • Scoot the chicken over to the edges of the skillet, then add in the onions and garlic; continuing to cook for 3 more minutes.

  • Preparation: Season both sides of the chicken with salt and pepper. Heat a skillet on medium-high heat, and add the olive oil until just smoking. 3 tablespoons extra virgin olive oil
2 cups white rice
6 plum tomatoes, quartered
1 teaspoon cumin

3 tablespoons white wine vinegar
3 tablespoons brown sugar, packed

Steps:

  • Bring the chicken broth and a drizzle of EVOO to a boil in a pot. Add the rice, reduce to a simmer, and cover. Cook the rice, stirring occasionally, for 17-18 minutes, or until tender. Fluff with a fork.
  • Heat a skillet over high heat with a tablespoon of the EVOO. Add the tomatoes, cumin, coriander, jalapeno pepper, shallots, garlic, and salt and pepper. Cook, stirring frequently, for 3 minutes. Add the vinegar, brown sugar, and water. Turn the heat down to medium-low and simmer for 10-12 minutes or until the water has evaporated and the tomatoes have broken down and are slightly thickened.

1 cooked chicken breast, cubed
1 avocado - peeled, pitted, and cubed
10 Kalamata olives, pitted and quartered

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).

  • Remove the eggplant from the skillet to a plate and cover with foil to keep warm.
  • Return the skillet to the stove; add in the remaining 2 tablespoons oil; add in the chicken and cook to lightly brown, about 4-5 minutes.
  • Add in the onions and garlic; return the eggplant to the skillet, season with salt, pepper, and crushed red pepper flakes; continue to cook 3-4 minutes.
  • Add in white wine and chicken stock; bring to a simmer; cook for 3-4 minutes.
  • Add in the cherry tomatoes and pasta water; cook until the tomatoes begin to burst.
  • Add in the parsley and cooked pasta; toss to coat, and cook for 1-2 minutes or until the sauce tightens up around the pasta.
  • Turn off the heat; add in grated Parmigiano-Reggiano; toss to coat the spaghetti.
  • Serve warm with crusty bread.

FRESH TOMATO AND BASIL CHICKEN OVER SUPER CREAMY POLENTA



Fresh Tomato and Basil Chicken over Super Creamy Polenta image

4 cups chicken stock or broth
2 tablespoons extra-virgin olive oil (EVOO) (twice around the pan)
4 6-ounce boneless, skinless chicken breast halves
Salt and freshly ground black pepper
1/4 teaspoon crushed red pepper flakes
1 large red onion, thinly sliced
5 garlic cloves, chopped
1 cup quick-cooking polenta (found in Italian or specialty foods aisles)
1/2 cup mascarpone cheese
1/4 cup grated Parmigiano-Reggiano (a handful)
1/2 pint yellow grape tomatoes
1/2 pint red grape tomatoes
20 fresh basil leaves, chopped or torn

Steps:

  • For the super creamy polenta, bring 3 cups of the chicken stock to a boil in a sauce pot. If the chicken stock is at a boil before you are ready to add the polenta, just turn it down to low and let it wait for you.
  • While the stock is coming to a boil, start the fresh tomato and basil chicken. Heat a large nonstick skillet over medium-high heat with the EVOO. Season the chicken with salt, pepper, and red pepper flakes, add to the hot skillet, and cook for about 3 to 4 minutes, or until the chicken is lightly browned. Scoot the chicken over to the edges of the skillet, then add the onions and garlic, continuing to cook for 3 minutes more. Add the remaining cup of chicken stock and cook until reduced by half, another 3 to 4 minutes.
  • While the sauce is reducing, whisk the quick-cooking polenta into the boiling chicken stock in the sauce pot until it masses. Stir in the mascarpone cheese and the Parmigiano and season with salt and pepper. You want the polenta to be slightly loose. If it gets too tight, stir in some more stock to loosen it up a little.
  • To finish the chicken, add the yellow and red grape tomatoes, stir to combine, and continue to cook for about 1 to 2 minutes, or until the tomatoes are heated through and starting to burst. Add the basil and toss with the chicken and tomatoes.
  • Serve the polenta in shallow bowls and top with the fresh tomato and basil chicken.

SUNDAY CHICKEN IN FRESH TOMATO AND VINEGAR SAUCE



Sunday Chicken in Fresh Tomato and Vinegar Sauce image

3 pounds fresh ripe tomatoes, peeled, seeded and chopped
3 1/2 pound chicken, cut into 8 pieces
4 tablespoons vegetable oil
4 unpeeled cloves garlic
1/2 cup good red wine or sherry vinegar
1/2 cup good Rioja or French red wine
1 cup (packed) Italian parsley leaves, roughly chopped
Watercress for garnish
Polenta as side dish

Steps:

  • Set peeled tomatoes in a saucepan. Bring to a simmer and cook until mixture has broken down and has reduced to a 1 cup of puree. Pat chicken dry; salt each piece lightly. Heat oil over medium heat. When hot, add thigh and drumstick pieces and unpeeled garlic and sear in hot fat for 3 minutes a side. Add breast and wing pieces and sear those as well until golden brown, about 3 minutes a side.
  • Remove breast and wing pieces and continue to saute leg and thigh pieces so flesh continues to brown as it cooks, about 10 minutes, add reserved breast and wing pieces and cover. Continue to cook, over gentle heat for another 15 minutes or until juices of the chicken run clear when the thigh piece is pricked.
  • Remove chicken to a platter and keep it warm, loosely covered with foil. Discard all but 1 tablespoon of fat and add 1 tablespoon of butter (if all the fat is too dark, replace it with fresh butter). Mash garlic against the sides of the pan and skins should slide off easily; discard skins. Add vinegar, fresh cup of reduced tomato puree and red wine.
  • Bring liquid to a boil. Reduce it over high eat until only 1 cup remains, mashing garlic into sauce; season with 1 teaspoon of salt and freshly ground black pepper. Remove skin and fat from chicken pieces and return them to sauce and turn chicken in sauce (*recipe can be made ahead of time up until this point). Reheat chicken, over gentle heat for 4 minutes. Stir in parsley and turn the chicken over in the sauce to ensure pieces are well coated. Garnish with watercress

This is a really quick quick dish. It does benefit from a long marinade but can cope without it. I like the pantry aspect of it, in that I almost always have all of the ingredients required.

8 chicken breasts
5 fresh tomatoes, diced or 1 (800 g) can tomatoes, drained and flesh diced
3 -4 cloves garlic, crushed
1 medium onion, chopped
1/2 teaspoon salt
1/2 teaspoon sugar
ground pepper
2 bay leaves
1 teaspoon ground cumin
1 teaspoon dried oregano or 1 tablespoon fresh oregano
1 teaspoon dried basil or 1 tablespoon fresh basil
3 tablespoons chopped fresh parsley
1/2 cup grated low-fat cheese (I prefer tasty)

Steps:

  • Arrange chicken in an ovenproof dish.
  • They should not overlap.
  • In a bowl combine everything else but the cheese.
  • Mix well.
  • Cover the chicken with the mixture.
  • Cover with foil.
  • Leave this until you want it, it works well if you do it in the morning but it is not necessary.
  • Bake at 180C for 45 minutes.
  • Remove foil.
  • Sprinkle with cheese and bake for 15 minutes.
  • The cheese does not need to brown unless you really want it to, I like it just oozy.
  • Serve one breast per person on rice or pasta or couscous.
  • Even mashed potato could be nice although I've never tried it.

1/2 lb. thin fresh asparagus spears, trimmed, cut into 1-inch lengths
1/2 cup chopped onions
1 tub (10 oz.) PHILADELPHIA Reduced Fat Italian Cheese & Herb Cooking Creme
2 cups hot cooked whole wheat penne pasta
1 cup cherry tomatoes, halved
2 Tbsp. KRAFT Shredded Parmesan Cheese

Steps:

  • COOK and stir chicken, asparagus and onions in large nonstick skillet on medium heat 7 to 8 min. or until chicken is done and asparagus is crisp-tender.
  • ADD cooking creme and pasta; cook and stir 3 min.
  • STIR in tomatoes; top with Parmesan.
  • Prefer a Thinner Consistency?
  • Add broth or milk, 1 Tbsp. at a time up to 4 Tbsp., until desired thickness is achieved.
  • Variation
  • Substitute 1 lb. uncooked deveined peeled medium shrimp for the chicken, cooking the asparagus and onions 5 min. before adding the shrimp, then cooking an additional 2 to 3 min. or until shrimp turn pink. Add cooking creme and pasta, then continue as directed.

1 lb. boneless skinless chicken breasts, cut into bite-size pieces

6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened

Steps:

  • Cook penne as directed on package, omitting salt.
  • Meanwhile, cook and stir chicken, asparagus and onions in large nonstick skillet on medium heat 7 to 8 min. or until chicken is done and asparagus is crisp-tender.
  • Drain pasta, reserving 1/2 cup cooking water. Whisk Neufchatel with Italian seasoning and 2 Tbsp. of the reserved cooking water until blended. Add to chicken mixture along with the pasta; cook and stir 3 min. Remove from heat.

4 boneless, skinless chicken breast halves, about 6 ounces each
1/2 cup all-purpose flour
1 1/2 teaspoons kosher salt, plus extra as needed
1/2 teaspoon freshly ground black pepper, plus extra as needed
3 tablespoons unsalted butter
1 small shallot, minced
1 garlic clove, minced
2 medium seeded and chopped fresh tomatoes or 2 cups store-bought fresh salsa
1 cup chicken stock, preferably homemade
1 tablespoon shredded fresh basil leaves

Steps:

  • Sprinkle a small amount of water on a large sheet of plastic wrap. Place 2 of the breast halves on top of the plastic and sprinkle again with water. Cover with another sheet of plastic wrap and pound with a rolling pin or meat pounder until about 1/4-inch thick. Repeat with the remaining 2 breast halves.
  • Mix the flour with the salt and pepper in a shallow pie plate. Heat half the butter in a large skillet over medium-high heat until hot. Working in 2 batches, place the chicken in the flour mixture and turn to coat on all sides. Shake off the excess flour and add to the skillet. Cook until lightly browned, 3 to 4 minutes per side. Transfer to a plate or platter and cover loosely with foil. Repeat with the remaining butter and chicken.
  • Add the shallot and garlic to the skillet. Cook, stirring, until fragrant, about 30 seconds. Add the tomatoes or salsa, stir in the stock, and simmer for 8 minutes. Return the chicken to the skillet and simmer, turning often, until the chicken is warmed through and the sauce is thickened, about 2 minutes. Transfer the chicken to warm serving plates. Stir in the basil and season the sauce with salt and pepper. Spoon over the chicken and serve at once.
