Cake:
2 1/2 cups all-purpose flour
1 3/4 cups sugar
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup vegetable oil
1 cup freshly squeezed orange juice
zest from the oranges
3 large eggs
1 cup sour cream (Lite is okay)
Optional: 1/4 teaspoon pure orange oil
Optional: 2 teaspoons Loranne's Buttery Sweet Dough Emulsion
Frosting:
1 stick butter, softened
3 8-ounce packages cream cheese, softened
1/4 cup fresh orange juice
1/4 teaspoon pure orange oil (optional)
2-4 cups* confectioners sugar
Add up to 8 cups of sugar, if that's your cup of tea.

Steps:

  • Preheat oven to 350°F. Spray 3 9-inch cake pans with nonstick baking spray* and line with parchment. Spray parchment with baking spray. *NOTE: I used 2-9-inch cake pans, figuring I'd slice those in half. That was tricky, as the cake was so moist, that it took a miracle that transferring the layers didn't break! In a large bowl sift together flour, sugar, baking soda, baking powder, and salt. Add oil, orange juice, eggs and sour cream. Optional: I add 1/4 teaspoon of pure orange oil, for more flavor. Beat at medium speed with a mixer until smooth. Pour into prepared pans and bake for 20 - 25 minutes or until wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove from pans and cool completely on wire racks. Frosting: In a large bowl, beat butter and cream cheese at medium speed with a mixer until creamy. Add orange zest and orange juice, beating until combined. Gradually add confectioners sugar beating until smooth. (NOTE: You can add more confectioner's sugar, if you prefer a much thicker frosting.) Assembly: Spread frosting evenly between layers and on top and sides of cake.

  • Preheat oven to 350°. Grease the bottom of two 9-inch cake pans. Cut wax paper to fit the bottoms, and grease and flour the wax paper. Cream the butter and sugar until light and fluffy. Beat in egg yolks one at a time. Sift the flour, baking powder, and salt together. Add alternately with milk, beginning and ending with dry ingredients. Whip egg whites until stiff but not dry. Fold into the cake batter along with the grated orange rind. Pour the batter into the pans and bake at 350° for about 25 minutes or until a toothpick inserted in the middle comes out clean. Let the cakes cool in the pans for a few minutes, invert onto rack, and peel off wax paper. ----------------------- Slice the layers in half to get 4 thin layers, prick with a fork, and drizzle with the mixture of orange juice and rum. Set aside. ----------------------- In saucepan, blend sugar with salt and cornstarch until mixture is smooth. Gradually add orange juice and bring to a boil on top of stove. Boil 1 - 2 minutes, remove from heat, and stir in butter, orange rind, and lemon juice. Cool. Spread 1/3 of mixture on first layer; stack second and third layers, repeating process. Add fourth layer. ----------------------- Whip cream until soft peaks form and add rum and sugar. Continue to whip until stiff. Spread over cake and pat shredded coconut onto sides and top. Yields one 4-layer 9-inch cake.

2 ounces sliced almonds, finely chopped

Steps:

  • Preheat oven to 400 degrees F.
  • Grease 24 (1/2 cup) mini bundt pans (2 pans of 12 mini bundt tins).
  • In an electric mixer, fitted with paddle attachment, combine the butter and sugar.
  • Beat until smooth.
  • Add the eggs and yolks, 1 at a time, and continue to beat until incorporated.
  • Add the orange zest and vanilla.
  • Add the flour and salt, 1/2 cup at a time until the batter is smooth.
  • Spoon 1/3 cup of the batter into the prepared pans.
  • Bake for 15 to 20 minutes or until the top of the cake domes are slightly golden.
  • Remove from the oven and cool slightly.
  • Unmold the cakes onto wire racks.
  • In a small mixing bowl, combine the confectioner's sugar and orange juice together.
  • Whisk until smooth.
  • Place the wire racks over a baking sheet, lined with parchment paper.
  • Drizzle the glaze over each cake.

1 cup unsalted butter, at room temperature
1 cup granulated sugar
2 tablespoons finely grated orange zest
3 large eggs, 2 of them separated, all at room temperature
1 cup pumpkin puree, homemade or pure canned solid-pack pumpkin (not "pumpkin pie filling")
1 1/2 cups all-purpose flour
1/2 cup cake flour (not self-rising)
2 teaspoons baking powder
1/4 teaspoon salt
Juice of 1 large juice orange, such as Seville
1/2 cup granulated sugar
Additional unsalted butter, at room temperature, for greasing the pan
Thick vanilla yogurt or vanilla ice cream, to serve

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-inch fluted tube pan and set it aside. Cream the butter, sugar, and orange zest together until light and fluffy. Add the whole egg and the two egg yolks, one at a time, beating well and scraping down the sides of the bowl between each addition. Beat in the pumpkin puree.
  • Sift together the flours, baking powder, and salt. Add to the pumpkin batter in three or four stages, blending gently but thoroughly after each. Stir in the final addition of dry ingredients by hand if you have been using a mixer, so as not to overwork the batter. In a clean small bowl, whip the egg whites until they hold soft peaks. Fold into the batter, then scrape the batter into the prepared pan and smooth the surface. Bake in the center of the oven for 50 to 60 minutes, or until the top of the cake is springy when lightly touched, the sides are beginning to pull away from the sides of the pan and a wooden skewer inserted in the center of the cake comes out clean. Cool in the pan for 10 minutes, then invert onto a wire rack and cool completely. This cake keeps very well for several days, well wrapped, and it freezes beautifully for up to 2 months.
  • For the syrup, combine the orange juice and sugar in a small saucepan over low heat and stir until the sugar has dissolved. Increase the heat, bringing the syrup to a boil. Boil without stirring for 2 minutes, then use immediately, or allow to cool and refrigerate for up to 3 days (reheat gently).
  • To serve, place one slice of the pumpkin orange cake on each plate. Spoon a few tablespoons of the warm syrup over each piece, and accompany with a scoop of thick vanilla yogurt (for breakfast) or ice cream (for dessert).

2-1/2 c sifted cake flour
2 tsp baking powder
1/4 tsp salt
1 lemon, grated rind only
1 orange, grated rind only
2/3 c butter or shortening
1-1/2 c sugar

5 Tbsp orange juice
2 Tbsp water

  • 1. Sift flour once and then measure. Add baking powder and salt. Add lemon and orange rind to butter, and cream thoroughly, add sugar gradually, and cream together until light and fluffy.
  • 2. Add eggs one at a time, beating thoroughly after each addition. Add flour alternately with combined fruit juices and water, a small amount at a time. Beat after each addition until smooth.
  • 3. Bake in two greased 9 inch layer pans. In a moderate oven (375F.) 20-25 minutes till done. When cake is cool and out of the pans.

1 cup fresh orange juice
1/2 cup vegetable oil
1/4 cup sugar
1 teaspoon vanilla extract

  • Preheat the oven to 350. Lightly mist a 12 cup bundt pan with vegetable oil spray, then dust with flour. Shake out excess flour.
  • Place cake mix, orange juice, oil, sugar, vanilla and eggs in large mixing bowl. Blend with mixer on low speed for 1 minute. Stop machine and scrape down sides of bowl. 2 1/2 c cake flour
1 1/2 c granulated sugar
2 tsp baking powder
1/4 tsp soda
1 tsp salt
3 large eggs
1 stick butter, softened
1 tsp orange zest
1/2 c milk
1/2 c fresh squeezed orange juice
FROSTING
1/2 c fresh squeezed orange juice
juice of one lemon
1 c granulated sugar
3 large eggs, beaten
3 Tbsp flour
1/2 pt heavy cream

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour 3 9 inch round cake pans. Set aside. Cream butter and sugar; add eggs and cream together. Add dry ingredients that have been sifted together. Add milk and orange juice and zest. Bake for 25 or 30 minutes. Cool on baking racks after removing from pans.
  • 2. Frosting: Cook first five ingredients until thick. Beat cream until thick and swirly. Add to cooled, cooked mixture and spread on cake and in between layers. Sprinkle orange zest on top.

1 ½ cups white sugar
3 (.25 ounce) packages unflavored gelatin
⅓ cup lemon juice
⅛ teaspoon salt
1 cup heavy whipping cream
1 cup diced orange segments
1 (12 ounce) package ladyfingers
1 pint fresh strawberries

Steps:

  • Line bottom and sides of an 8 inch springform pan with split ladyfingers.
  • Combine 1 cup orange juice and sugar in saucepan; heat until sugar is dissolved. Remove from heat. Soften gelatin in 1 cup orange juice then stir in hot juice. Add remaining orange juice, lemon juice and salt. Chill until slightly thickened.
  • Whip the cream until stiff and fold into the gelatin mixture. Fold in orange sections and spoon into the prepared pan. Chill for at least 4 hours. Remove sides of pan and place on a serving plate. Garnish with fresh strawberries.

I have not tried this cake. I'm posting this for safe keeping. I found this recipe in The Cooking Of Greece kids cookbook. Ravani combines a delicate golden sponge cake made with farina and a fruit flavored syrup to create a memorable dessert.

4 -6 oranges
2 lemons
1 1/4 cups confectioners' sugar
2 cups all-purpose flour
1 cup cream of wheat (not instant) or 1 cup farina
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 cup unsalted butter
1 cup granulated sugar
5 large eggs
1 cup Greek yogurt or 1 cup sour cream
1/4 cup confectioners' sugar, for dusting

Steps:

  • Using a potato peeler or shap knife, remove six 1-inch wide by 3-inch long strips from the orange peel and set aside. Be careful not to cut too deeply and remove any white part from the skin as it will add a bitter flavor. Cut the oranges in half. Use a fruit juicer to squeeze the oranges. Strain the juice through a small hand strainer to catch any seeds. Measure 1 1/2 cups juice and pour into a medium sized bowl. Repeat this step with the lemons, measuring 1/2 cup, and combine with the orange juice. Add three of the peeled orange strips to the juice and set aside. Lay the other three orange strips on top of each other and cut them into long thin strips. Then cut, or mince, the strips into tiny pieces and put in a small bowl and set aside.
  • Syrup: Put the confectioners' sugar, orange peel, and the citrus juices in a 2-3 quart saucepan and place over low heat. Stir well to dissolve the sugar and combine all the ingredients. Heat the mixture slowly and bring to a gentle boil. This will take 6-8 minutes. Reduce to a simmer and let it cook, uncovered, for 20 minutes while you prepare the cake.
  • Preheat oven to 350.
  • Butter a 12x18-inch ovenproof baking pan and set aside. Combine the flour, Cream Of Wheat, baking powder, and baking soda together into a medium bowl. Sift the combined ingredients into a separate bowl. Melt butter slowly over low heat, being careful it doesn't burn. In a large bowl, beat the eggs on high with an electric mixer for 2 minutes, or until light and foamy. Add granulated sugar and the minced orange pieces and contine to beat for another 1-2 minutes, or until eggs and sugar are smooth, golden, and creamy. Turn the beater to low and add about 1 cup of the flour mixture and blend well. Add a little of the melted butter and blend well. Add another cup of the flour mixture and then a little more of the butter. Continue until all the butter and flour are combined into a smooth batter. Turn off the mixer and remove the beaters. Using a rubber spatula, scape off any batter from the beaters into the bowl. Add the yogurt to the bowl. With a rubber spatula or wooden spoon, fold, or gently combine, the ingredients in the batter.
  • Pour the batter into the buttered baking pan. Place the pan on the middle rack of the oven and bake the cake for 45 minutes to 1 hour until golden brown and firm when pressed lightly in its center. Remove the cake from the oven and place on a wire rack.
  • Make several holes in the surface of the cake with a butter knife or a wooden chopstick. Remove the strips of orange peels from the syrup and discard. Now pour the syrup evenly over the top of the cake. Let the cake stand at least 2 hours to absorb the syrup. When you are ready to serve the cake, place the confectioners' sugar in a hand strainer and gently tap the side to sprinkle the sugar over the top. Cut into small squares and serve.

The initial recipe I had called for using a boxed cake mix but I would prefer a made from scratch cake so I pulled a couple of other recipes and came up with this one that combines them all. This just gives you a sunny orange cake with a wonderful glaze - so nice and light on a summery day.

2 cups cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1 3/4 sugar
1/2 cup non-fat powdered milk
1 cup fresh orange juice
1/2 cup canola oil
1 teaspoon pure vanilla extract
4 large eggs
1 cup confectioners' sugar, sifted
3 tablespoons fresh orange juice (from about 1 medium orange)
1 teaspoon orange zest, freshly grated (from about 1 medium orange)

Steps:

  • Preheat oven to 350F and lightly spray or grease a 12-cup Bundt style pan.
  • In a mixing bowl, sift together the cake flour, baking powder, salt, sugar and the non-fat dry milk. (This is your cake mix base. If you want to use a prepared box mix then skip this step and these ingredients and just place the mix in a large mixing bowl.).
  • Add to these dry ingredients, the orange juice, canola oil, vanilla and eggs.
  • On low speed mix the ingredients for about 1 minute until everything is incorporated and then raise the speed to medium and continue beating for 2 to 2 1/2 minutes more (your batter should be smooth and thick).
  • Pour the batter into the prepared pan and bake for approximately 45-50 minutes
  • Remove pan from oven and let stand on a wire rack for 20-25 minutes to allow the cake to cool before inverting it on a cake rack to cool completely (approximately 30 minutes more).
  • While cake is near finished cooling, prepare the glaze by mixing together the sifted confectioners' sugar, orange juice and orange zest until smooth.
  • Place the cake on a serving plate and drizzle the glaze over the top of the cake so it runs down all around the outside of the cake and a bit inside. Let the glaze set up at least 10 minutes before slicing to serve.

1 cup(s) butter, softened
1 cup(s) sugar
1 cup(s) packed brown sugar
1 large egg
2 1/2 cup(s) all-purpose flour
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1/2 teaspoon(s) ground cinnamon
1/2 teaspoon(s) ground cloves
1/2 cup(s) finely chopped pecans
1 tablespoon(s) aniseed

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg. Combine the flour, baking soda, salt, cinnamon and cloves; gradually add to creamed mixture and mix well. Stir in pecans and aniseed.
  • Shape into two 10-in. rolls; wrap each in plastic wrap. Refrigerate for 4 hours.
  • Unwrap; cut 1/4 in. off the ends of each roll. Cut dough into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake at 375° for 8-10 minutes or until golden brown. Remove to wire racks to cool.
