FRESH MANGO PAPAYA KIWI SALSA
This versatile salsa may be refrigerated for several days. It is deliciously refreshing served with grilled fish or shrimp. The serrano chili is a small (1 1/2 inch long) green chili pepper. It is available canned or fresh. If a milder flavor is desired, remove the seeds of the chili. If canned, rinse under cold water as most of the heat is in the liquid.

- Cut slices in half.
- Take 1/4 of the slices and dice, place in bowl.
- Drizzle the slices with a touch of lime and set aside.

- Arrange corn or jicama chips around the bowl of the salsa. Or top your favorite grilled chicken or fish.

- In a heavy pitcher, muddle together the lime slices, peppermint leaves, and sugar. You can use a muddler made specifically for the purpose or a sturdy wooden spoon.
- Add the pineapple, then pour the wine, rum, and pineapple juice over the top.
- Cover and place in the refrigerator for 4 - 5 hours.
- Remove from refrigerator and add the lemon lime soda. Add ice and a few chunks of the pineapple to your glass and pour sangria over. Garnish with additional mint leaves and pineapple wedge if desired. Serve (with a straw, if you like).
