1 cup chopped onion
2 cloves garlic, minced
1 ½ pounds fresh green beans, trimmed
2 large plum tomatoes, chopped
½ cup water
1 cup fresh basil leaves
salt and ground black pepper to taste

Steps:

  • Heat oil in a skillet over medium heat. Add onion and garlic. Cook and stir until onion is translucent, about 5 minutes. Add green beans, tomatoes, and up to 1/2 cup water. Cook until beans and tomatoes are tender, about 10 minutes. Sprinkle basil, salt, and pepper on top.

2 pounds small new potatoes, halved
5 tablespoons (about) extra virgin olive oil, divided
1 pound slender green beans, trimmed
1 12 oz container cherry tomatoes, halved
3 garlic cloves, finely chopped
1/3 cup chopped fresh basil

Steps:

  • Preheat oven to 400 degrees. Sprage rimmed baking sheet with non-stick spray. Toss potatoes and 2 tablespoons oil in large bowl. Scatter on prepared sheet; sprinkle with salt and pepper.
