6 tablespoons butter, softened, divided
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
8 slices sourdough bread
4 ounces Brie cheese, rind removed and sliced
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
24 slices slices pepperoni

Steps:

  • Spread 3 tablespoons butter on 1 side of each slice of bread. Place bread, butter side down, in a large cast-iron skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with pepperoni; add sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

This elevated recipe takes everything you know and love about garlic bread and pizza, and combines it into a grilled cheese sandwich unlike any other. We slather the outside of the bread with an assertive garlic Parmesan butter to create a delicious golden brown, crispy exterior. Layers of melted mozzarella and pepperoni make up the inside.

1 stick softened butter
1/2 cup grated Parmesan cheese
1 clove garlic, grated
1 tablespoon minced fresh parsley
Kosher salt and freshly ground pepper
8 slices white bread
12 slices low-moisture mozzarella cheese
24 slices pepperoni

Steps:

  • Mash the butter with the Parmesan, garlic, parsley and a pinch each of salt and pepper.
  • On a work surface, lay out 4 slices bread. Top each piece of bread with 2 slices mozzarella, 6 slices pepperoni, 1 more slice mozzarella and another slice of bread. Spread some of the herb butter on each sandwich.
  • In a large nonstick skillet, cook the sandwiches in batches as needed over medium-low heat until browned and crisp, 3 to 4 minutes per side. Season with salt.

Love home made bread, pepperoni and grilled cheese sandwiches so decided the other day to do a spin on this childhood classic. If you can not find the pepperoni cheese in your deli section you can replace thin sliced pepperoni and sharp cheddar cheese! Mine comes from NJ and frozen cause I can not find it here in my area :-). This is so yummy had one 3 days in a row!! The pearl onion gives the bite a crunch but if you don't like onions you can omit it as I have had it both ways and both are just as yummy.

3/4 cup(s) water, warm
1 1/2 teaspoon(s) salt
6 tablespoon(s) vegetable oil
2 - eggs
4 tablespoon(s) sugar
3 cup(s) bread flour
1 package(s) fleischmann's rapid rise dry yeast
4 slice(s) capicola ham (deli)
2 slice(s) pepperoni cheese (deli)
1-2 small white pearl onion (sliced)
- blue bonnet margarine spread

Steps:

  • Put first 7 ingredients in bread machine in order listed.
  • Turn on and let machine make and bake the bread.
  • When cool slice and freeze remainder of bread not used as it will only stay fresh for 2 days.
  • Heat skillet on med while preparing sandwich to be grilled.
  • Butter 2 slices of bread. Lay one slice butter side down on hot skillet. Top with 2 slices of ham, 2 slices of pepperoni cheese, pearl onion and 2 slices of ham and other piece of bread butter side up.
  • Fry both sides of the sandwich, slice and Enjoy!

1 large egg
2 tablespoons milk
½ teaspoon salt
½ teaspoon onion powder
½ teaspoon garlic-pepper seasoning
⅓ cup Cheddar-Jack cheese
cooking spray
2 teaspoons butter, softened
2 slices bread
⅓ cup shredded mozzarella cheese, or more to taste

Steps:

  • Whisk egg, milk, salt, onion powder, and garlic-pepper seasoning together in a bowl until well combined and pale yellow in color. Dump in Cheddar-Jack cheese and stir until thick.
  • Spray a skillet with cooking spray and set over medium-low heat. Pour egg mixture into the skillet; cook and stir until eggs are set, about 5 minutes. Remove to a plate.
  • Lightly butter one side of each bread slice.
  • Spray the skillet again with cooking spray. Put one slice of bread, buttered-side down, in the pan. Top with 1/2 of the mozzarella cheese, the egg mixture, the remaining mozzarella, and the remaining bread, buttered-side up. Cook until bread is toasted and browned, 1 to 2 minutes. Flip and cook until the other side is browned and the cheese is melted, another 1 to 2 minutes.
  • Transfer to a plate and let cool for a minute before serving.

PEPPERONI PIZZA GRILLED CHEESE SANDWICHES



Pepperoni Pizza Grilled Cheese Sandwiches image

8 slices Italian bread (or bread of choice)
28 pepperoni slices
1/2 cup marinara sauce
8 slices fresh mozzarella
2 tomatoes (sliced)
1/2 cup fresh shredded Parmesan cheese
3 Tablespoons garlic butter (or plain butter works as well)

Steps:

  • Lay out 2 slices of bread.
  • Place 7 pepperonis on one slice of bread.
  • Top pepperoni with 2 Tablespoons marinara sauce.
  • Lay 2 fresh mozzarella slices over sauce, then place 2 tomato slices on mozzarella.
  • Sprinkle 2 Tablespoons Parmesan cheese over everything, then top with other slice of bread.
  • Spread garlic butter (or if you don't have garlic butter, regular unsalted butter will work great) on one side of the sandwich and place that side down on the preheated griddle.
  • Then butter the slice on top so it will brown when you flip it over.
  • Grill until golden brown on both sides and the cheese is melted (about 2-4 minutes per side).
  • Repeat all the steps for the other 3 sandwiches.
  • Serve with a side of marinara sauce for dipping.
