ROSE ICE CREAM
This rose ice cream is a delicious treat that's delicately flavored with rose water and vanilla. A simple recipe that can easily be made in your ice cream maker.

Steps:
- Combine the milk and sugar in a large bowl using a hand mixer until the sugar is dissolved (about 2 minutes).
- Add the remaining ingredients and continue mixing until combined. The concentration of rose water can vary, so it's a good idea to build up to the 1/4 cup (4 tablespoons) a tablespoon at a time so you can give it a taste and add more without adding too much.
- Pour the mixture into the bowl of your ice cream maker and run the machine for about 30 minutes or until it reaches the consistency you like.
- Serve immediately or transfer to a container and freeze until it's more firm.
FRESH FRUIT WITH ROSé WATER SYRUP

Steps:
- Stir 1 1/2 cups water and sugar in heavy medium saucepan over medium-low heat until sugar dissolves. Increase heat to medium-high. Add cinnamon; boil until syrup is reduced to scant 1 cup, about 10 minutes. Mix in rose water; cool.
- Using small sharp knife, cut off peel and white pith from oranges. Working over large bowl, cut between membranes to release segments into bowl. Add grapes, berries and pear; toss to combine. Mix in syrup. (Can be prepared 2 hours ahead. Cover and refrigerate.)
- Spoon fruit and syrup into 6 bowls.

- In a serving bowl, mix together the non-dairy whipped topping, sugar, and rose essence. Lightly fold in the fruit, leaving some visible for a garnish. Sprinkle the pistachios on top and serve.VARIATION: For a more authentic version, substitute 1 pint heavy whipping cream for the non-dairy whipped topping.
