8 ounces cream cheese, at room temperature
1/2 cup sour cream
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon lemon zest plus 1 tablespoon fresh lemon zest (from 1 lemon)
1 small clove garlic, finely grated
Kosher salt and freshly ground black pepper
6 ounces hot-smoked salmon, finely flaked with your hands or a fork
1 scallion, thinly sliced
Sliced carrots, celery, cucumbers and/or crackers, for serving

Steps:

  • Whisk together the cream cheese, sour cream, Worcestershire sauce, lemon zest, lemon juice, garlic, 1 tablespoon water and a large pinch of pepper in a medium bowl until completely smooth. Fold in the smoked salmon and scallions to combine well. Season to taste with additional salt and pepper if needed. Transfer to a small serving bowl and serve with vegetables and/or crackers.

1 (8 ounce) package cream cheese, softened
6 ounces smoked salmon, chopped
¼ cup capers, or to taste
2 tablespoons chopped green onion
1 ½ teaspoons chopped fresh dill
¼ cup heavy whipping cream
3 dashes Worcestershire sauce
3 drops hot pepper sauce
1 squeeze fresh lemon juice

Steps:

  • Process cream cheese in a food processor to soften completely; add salmon, capers, green onion, dill, cream, Worcestershire sauce, hot pepper sauce, and lemon juice. Process the mixture again until creamy and smooth.

100 g smoked salmon
cooking spray
1/4 cup shallot, sliced
1/2 teaspoon crushed garlic (in jar)
1 1/2 tablespoons cornflour
1 (375 ml) can evaporated skim milk
10 capers, chopped (in jar)
250 g philadelphia light cream cheese
1/2 teaspoon fish sauce
pepper
4 boneless fish fillets

Steps:

  • Cut salmon into bite sized pieces, leave to one side. Coat a medium sized saucepan with cooking spray, saute shallots and garlic for 30 seconds. Combine cornflour with evaporated milk, add to pan, stir continuously until boiled. Reduce heat, add salmon, capers, cream cheese and fish sauce, stir until cheese has melted. Pepper to taste. Lower heat and keep hot while fish is cooking. Generously coat a non stick frying pan with cooking spray, fry fish fillets for 2 to 3 minutes each side until just cooked and browned(turn only once to avoid drying out fish). Place fish on serving plates and pour sauce over the top.
