A great side dish for Thanksgiving dinner. It can be used as filling for cranberry/cream cheese tarts and also makes a great topping on bagels, corn bread, or cheesecake. Pour into a serving dish or jars and cover. The pectin in the cranberries will make the cranberry sauce gel as it cools. I usually use a fork to mix it up which will make it more pliable.

  • Bring water to a boil in a saucepan; add sugar and cook until sugar is dissolved, about 5 minutes. Mix cranberries into the sugar water; bring to a boil, reduce heat to low, and simmer until desired consistency is reached, about 10 minutes.

5 to 6-pound fresh ham
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
6 apples, split in 1/2
2 cups cranberries, (if not fresh, frozen is fine)
1 cinnamon stick
1 bay leaf
1 tablespoon pickling spice
1 tablespoon black mustard seeds
2 tablespoons sugar
1 (1-inch) piece ginger
1 1/2 cups apple juice
1/2 cup apple cider vinegar

Steps:

  • Preheat oven to 300 degrees F.
  • Score fat and put ham, fat side up, in a roasting pan. Rub with extra-virgin olive oil and season with plenty of salt and pepper all over. Cover loosely with foil and roast for 2 hours. Remove foil and roast for final hour uncovered.
  • In a large saucepan add all the sauce ingredients and simmer for 25 minutes until apples are almost falling apart and the sauce is fragrant. Remove cinnamon stick, bay leaf, and ginger then puree in a blender until completely smooth. Serve with baked fresh ham.

1 (8 pound) bone-in venison roast
1 pinch kosher salt and freshly ground black pepper to taste
½ cup butter
2 ½ cups finely chopped onion, divided
¼ cup chopped fresh cilantro
1 ½ teaspoons dried sage
1 ½ teaspoons dried basil
2 cups fresh orange juice
6 ounces fresh cranberries
3 cups beef stock
½ cup red currant jelly
¼ cup dry sherry (such as Oloroso)

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Spread garlic all over venison roast, season with salt and pepper, and place in a roasting pan.
  • Heat butter in a skillet over medium-low heat and cook and stir 1/2 cup onion, cilantro, sage, and basil until onion has softened and turned translucent, about 5 minutes. Spread the butter mixture evenly over the roast.
  • Roast in the preheated oven for 20 minutes. Add remaining 2 cups onion, orange juice, and cranberries to the roasting pan; reduce oven temperature to 325 degrees F (165 degrees C). Continue to roast, basting frequently, until a meat thermometer inserted into the thickest part reads 140 degrees F for medium rare, about 1 hour. Remove the roast from the pan; cover to keep warm while you prepare the sauce.
  • Pour beef stock into the roasting pan, and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Continue boiling until the liquid is reduced by half, about 10 minutes. Skim off any fat; stir in the jelly and sherry. Continue to boil until the sauce is slightly thickened and evenly coats the back of a spoon, about 3 minutes. Season with salt and pepper.

I've been making these cranberries for nearly 30 years. It's the first thing I prepare for Thanksgiving and Christmas. I make them the weekend before so they have lots of time to sit and have even better flavor! I hollow out fresh oranges for serving cups. Makes a beautiful presentation and I use the orange segments in my turkey brine. Cut the oranges in a zig-zag pattern around the center to make it even more holiday special! Make ahead several days before serving for best flavor. I suppose they could be served warm as well, but I find the coolness of the berries is a nice contrast with the other hot foods in the meal. You can use 2 to 3 cinnamon sticks in place of ground cinnamon, which will yield a lighter color.

2 granny smith apples, quartered
1 orange, peeled and separated

1 cup red seedless grapes
20 ounces crushed pineapple (with juice)
1 1/2 cups sugar
1 whole orange (WITH rind)
1 (6 ounce) box cherry gelatin or 1 (6 ounce) box raspberry Jell-O gelatin
1 1/2 cups boiling water

Steps:

  • Cut the orange into 8 sections, then place in a food processor, grind to small chunks.

  • With a vegetable peeler remove three 3-inch-long strips zest from 1 orange. In a saucepan of boiling water blanch zest 1 minute and drain in a colander. Chop zest fine and transfer to a large bowl.

2 12-ounce bags cranberries

Steps:

  • 1. Finely grind orange in processor. (Or chop orange finely.) 2. Combine orange juice, sugar, and lemon juice in large saucepan. 3. Bring to boil, stirring until sugar dissolves. 4. Reduce heat and simmer 5 minutes. 5. Add ground orange and cranberries and cook until berries begin to pop, stirring occasionally, about 8 minutes. 6. Remove from heat and cool completely. 7. Refrigerate. Serve cold. Can be prepared up to 4 days ahead.
