ANGEL'S CHUNKY CHICKEN SALAD
I made up this recipe after a similar sandwich served at a diner. It's not the same, but just as good.

Steps:
- Combine the chicken, celery, mayonnaise, onion and pickle; mix well.
- Season with the garlic powder, salt and pepper. Serve with lettuce on fresh crusty bread or bun.

- Cook chicken.
- Chop coarsely.
- Wash all fruits and vegetables.
- Chop them all coarsely.
- Put all ingredients in a large Pyrex bowl.
- Toss ingredients with mustard and mayonnaise.

CHUNKY CHICKEN SALAD
Simple to prepare chicken salad that I make up for sandwiches. We never have left-over chicken, so I microwave chicken just to make this. Very basic but very good! P.S. Celery is listed as optional because my husband hates it...if I am only making this for him, I leave it out! :)

- In a medium bowl, combine mayo, onions, relish and 2 dashes or so of paprika.
- Add chicken and fold into mayo mixture until well combined.
- Taste and then add salt and pepper as needed.
- Chill well and serve over lettuce or on your favorite bread.
- Note: I microwave 2 boneless chicken breast halves sprinkled with salt, pepper, Italian seasoning, garlic powder and onion powder for 5- 6 minutes for this salad.
- If you are using left-over chicken, you may need to adjust the seasonings in the ingredients list.

Steps:
- Place chicken in saucepan and pour enough water over to cover. Set on medium heat and bring to a boil. Reduce heat and simmer until chicken is cooked through - (approx 10 mins).
- Drain and cut into 5cm/2-inch pieces.
- Meanwhile, in a large bowl, mix together mayo, red peppers, celery, parsley, mustard, oregano, and black pepper.
- Add chicken to mayo mixture and mix well.
- remove tops of buns and press down centre to create a bowl
- spoon chicken into prepared buns - 1/2 cup per bun.
- Enjoy!
