Green Chile-White Corn Casserole image

A creamy corn side dish with a little kick! My niece begs me to make this with pork chops and applesauce whenever she comes over for dinner, and it makes for great leftovers!

1 (8 ounce) package cream cheese, softened
¼ cup butter, softened
3 tablespoons all-purpose flour
¼ cup milk
3 (11 ounce) cans white (shoepeg) corn, drained
1 (7 ounce) can chopped green chilies
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Melt cream cheese and butter in a saucepan over medium heat. Mix well. Add flour and milk; stir well. Cook, stirring constantly, until thickened, 6 to 8 minutes.
  • Remove saucepan from heat; add corn, green chiles, salt, and pepper. Mix well. Pour into a casserole dish.
  • Bake in the preheated oven until bubbly, 30 to 40 minutes.
