2 heads fresh broccoli
1 red onion
½ pound bacon
¾ cup raisins
¾ cup sliced almonds
1 cup mayonnaise
½ cup white sugar
2 tablespoons white wine vinegar

Steps:

  • Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
  • Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, your favorite nuts and mix well.
  • To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.

1/2 cups sugar
1-1/2 teaspoons cornstarch
1 teaspoon ground mustard
1/4 cup white vinegar
1/4 cup water
1 large egg plus 1 large egg yolk, lightly beaten
1/2 cup mayonnaise
3 tablespoons butter, softened
SALAD:
4 cups fresh broccoli florets, 1-inch cuts
2 cups sliced fresh mushrooms
1/2 medium red onion, sliced in 1/8-inch-thick rings
1 can (11 ounces) mandarin oranges, drained
6 slices bacon, cooked and crumbled
1/2 cup slivered almonds, toasted
1/2 cup golden raisins

Steps:

  • In a large saucepan, combine the sugar, cornstarch and mustard. Combine vinegar and water. Stir into sugar mixture until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat., Stir a small amount of hot filling into egg and yolk; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in mayonnaise and butter. Cool to room temperature without stirring. Chill., In a large salad bowl, combine the broccoli, mushrooms, onion, oranges, bacon, almonds and raisins. Pour dressing over salad; toss to coat. Store in refrigerator.

1 tablespoon white wine vinegar
1 lemon, zested
1 tablespoon freshly squeezed lemon juice
2 teaspoons Dijon mustard
1 teaspoon kosher salt
Pinch freshly ground black pepper
1/4 cup olive oil
1 pound broccoli, rinsed, trimmed and sliced thinly on a mandolin
6 ounces cherry or grape tomatoes, halved
3 ounces coarsely chopped, toasted pecans or hazelnuts
2 tablespoons chiffonade fresh basil leaves

Steps:

  • Whisk together the vinegar, zest, lemon juice, mustard, salt and pepper in a medium mixing bowl. While whisking constantly, gradually add the olive oil. Add the broccoli and toss to coat. Cover and place in the refrigerator for 1 hour.
  • Stir in the tomatoes, hazelnuts and basil. Cover and allow to sit, at room temperature or in the refrigerator, for another 15 minutes before serving.

The possible addition of asparagus or tomato is intriguing. The marinated mushrooms had an especially wonderful taste and I wouldn't leave them out for anything. But you do what you like!

1 large head broccoli floret, cleaned and separated
broccoli stem, if desired peeled and sliced thinly
1/3 red bell pepper, sliced thinly
1/3 yellow bell pepper, sliced thinly (or use orange bell pepper)
1/2 cup red onion, sliced thinly
12 ounces mini bella mushrooms, halved
2 ounces mozzarella cheese, shaved
1/2 cup red wine vinegar
3 whole garlic cloves, peeled
1/4 cup fresh parsley
1/3 cup fresh basil leaf
1/2 teaspoon sugar
fresh ground black pepper
salt
3/4 cup olive oil

Steps:

  • Place prepared broccoli in bowl or pan and pour enough boiling water over it to almost cover. When broccoli turns bright green, drain and rinse in cold water. Set aside to drain.
  • Prepare all other vegetables and place in medium bowl. Add broccoli. Reserve cheese for serving.
  • In blender, put the vinegar, garlic, herbs and seasonings. Blend until smooth.
  • Add oil and blend quickly.
  • Pour over vegetables and stir. Cover and refrigerate. Stir again in about an hour.
  • Store overnight to serve the next day. Take out of refrigerator about 1/2 hour before serving, adding the shaved cheese. Stir and serve.

The cumin style dressing combined with the black beans marry nicely and I decided at the last minute to add chili pepper flakes, which raised the bar! Came up with this because I had the salad dressing already made and the salad ingredients on hand fresh from my garden.

  • Make salad dressing ahead if it's easier! I can keep this salad dressing for over a week, and just zap it in the microwave before using in the salad.
  • Put broccoli florets into a steamer basket and a large pot with about an inch of water. Steam til firm/tender.
  • While steaming broccoli, mince the onion and cut tomatoes in half. Sun Gold tomatoes are my very favorite from my garden, but cherry or other small tomatoes will work as a substitute.
  • Put dressing on the bottom and then add broccoli, beans, onion and tomatoes. Toss and add chili pepper flakes, salt and pepper to taste. I use Jacobsen's salt/pepper combo and add the chili pepper flakes last. Serve at room temperature and can be chilled for later! (The wine is for the chef!)

This recipe was featured in this week's column, and I know of at least 4 people who were so intrigued (myself included) that we had to try it out. It's really good. You wouldn't think it would be, but it is.

3/4 small red onion, finely chopped
3/4 cup raisins (preferably golden)
1/2 cup shelled sunflower seeds
1 cup mayonnaise

This crisp delicious salad is a new summertime hit at our house. With just a few modifications, this tasty treat can be made Paleo or Vegan as it is delicious with or without the bacon. The first time I made it, I think I ate nearly a cup of it before the bacon was ready!

3 stalk(s) broccoli, fresh, cut into bite size pieces
1 head cauliflower cut into bite size pieces
4 stalk(s) celery cut into bite size pieces
1/2 c frozen peas, thawed
1/2 lb bacon, cooked and chopped (omit for vegan)
DRESSING INGREDIENTS:
1/4 onion chopped small
10 oz mayonnaise (i used whole 10 ounce jar of sir kensington's non-gmo organic) for vegan use vegenaise, for paleo use payo
1/4 c sugar (for paleo use honey or 1/8 cup agave syrup)
1/8 c white wine vinegar
1/4 c parmesan region cheese (for paleo or vegan use go veggie vegan cheese)

Steps:

  • 1. Start your bacon first. I use no-nitrite, sugar-free thick bacon and prepare it in the oven. If you've never done bacon in the oven, DO IT! On a baking sheet that has a lip all the way around it, (cover with foil for a quick, easy cleanup) lay 6-7 strips of thick bacon. Put in a COLD oven and turn on to 400 degrees. Bake for 20-23 minutes (thin sliced takes less time). You'll have perfect, crisp bacon and there is no need to stand over it so you're free to do other things till the timer goes off. Once done, remove bacon from baking sheet and lay on paper towels to drain.
  • 2. While the bacon is baking, place frozen peas in a colander and run hot water over them to thaw.
  • 3. Chop broccoli, cauliflower, and celery into small bite size pieces. You want the pieces small enough that you can get 2-3 in one bite. Place in a bowl. Add the thawed peas.
  • 4. Chop the onion into tiny pieces as they will be used in the dressing. I used one of those chopper tools.
  • 5. In a separate small bowl whisk together the sugar (or honey or agave), vinegar, parmesan and chopped onions. Then pour it over the bowl of veggies and stir thoroughly.
  • 6. When the bacon is done baking, draining and cooled, chop it into bite sized pieces and add to the salad.
  • 7. Cover the bowl and put in refrigerator until ready to serve. This can even be made a day ahead. Just be sure to give it a good stir before serving. I usually stir up from bottom for each serving put on the plate as the dressing will settle.

• 4 tablespoons red wine vinegar
• 2 (12-ounce) bags broccoli florets (about 8 cups)

• 1 (11-ounce) can Mandarin oranges, drained (optional)
• ½ cup coarsely chopped pecans, toasted
• ½ cup sliced green onion
• 12 pieces bacon, cooked crisp and diced

  • Bring 4 cups water to a rolling boil. Put the broccoli florets in a colander and pour the water slowly over them to blanch. When cool, break apart larger florets so they are all a similar size. Combine florets with Craisins and oranges, if using, and enough dressing to lightly coat. Cover and refrigerate until ready to serve. Just before serving, fold in pecans, green onion and bacon.

  • Cook, cool and crumble bacon. Cut broccoli into bite-sized pieces. Cut onion into thin bite-sized slices. Combine broccoli, onion, bacon, raisins, and almonds. Sprinkle with cheese and gently mix together. In a separate bowl, stir together mayonnaise, sugar and vinegar until smooth. Pour over broccoli salad and mix well. Chill and serve.

6 cherry tomatoes, cut in half
1/8 cup red onion slivers (Recommended: Ready Pac)
1/4 cup fresh pearl-size mozzarella(Recommended: Cantare)
1/4 cup red wine vinaigrette (Recommended: Briana's)
Pepper Mill

Steps:

  • In a large bowl, toss together all ingredients, except black pepper.
  • Divide among 2 chilled salad plates. Serve with freshly ground pepper.
