This is a yummy summer salad that uses an interesting combination of fruits, vegetables and meats. Before you decide you won't like it, try it. You'll be pleasantly surprised. You can add an extra head of broccoli, if you like.

- Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.

I created this salad for Thanksgiving 2009 with a dressing based on a recipe I already had. This is a make-ahead salad. You can certainly change up some of the vegetables here. The possible addition of asparagus or tomato is intriguing. The marinated mushrooms had an especially wonderful taste and I wouldn't leave them out for anything. But you do what you like!

- Place prepared broccoli in bowl or pan and pour enough boiling water over it to almost cover. When broccoli turns bright green, drain and rinse in cold water. Set aside to drain.
- Prepare all other vegetables and place in medium bowl. Add broccoli. Reserve cheese for serving.
- In blender, put the vinegar, garlic, herbs and seasonings. Blend until smooth.
- Add oil and blend quickly.
- Pour over vegetables and stir. Cover and refrigerate. Stir again in about an hour.
- Store overnight to serve the next day. Take out of refrigerator about 1/2 hour before serving, adding the shaved cheese. Stir and serve.

This salad is filling and really simple and quick to make! The cumin style dressing combined with the black beans marry nicely and I decided at the last minute to add chili pepper flakes, which raised the bar! - Make salad dressing ahead if it's easier! I can keep this salad dressing for over a week, and just zap it in the microwave before using in the salad.
- Put broccoli florets into a steamer basket and a large pot with about an inch of water. Steam til firm/tender.
- While steaming broccoli, mince the onion and cut tomatoes in half. Sun Gold tomatoes are my very favorite from my garden, but cherry or other small tomatoes will work as a substitute.
- Put dressing on the bottom and then add broccoli, beans, onion and tomatoes. Toss and add chili pepper flakes, salt and pepper to taste. I use Jacobsen's salt/pepper combo and add the chili pepper flakes last. Serve at room temperature and can be chilled for later! (The wine is for the chef!)
DELI-STYLE FRESH BROCCOLI SALAD
Delicious variation of this favorite deli salad. Honey is absorbed more slowly than cane sugar, so this may be better tolerated by those who are more sensitive to 'sugar highs.' FRESH BROCCOLI CAULIFLOWER SALAD
This crisp delicious salad is a new summertime hit at our house. With just a few modifications, this tasty treat can be made Paleo or Vegan as it is delicious with or without the bacon. The first time I made it, I think I ate nearly a cup of it before the bacon was ready!

- 1. Start your bacon first. I use no-nitrite, sugar-free thick bacon and prepare it in the oven. If you've never done bacon in the oven, DO IT! On a baking sheet that has a lip all the way around it, (cover with foil for a quick, easy cleanup) lay 6-7 strips of thick bacon. Put in a COLD oven and turn on to 400 degrees. Bake for 20-23 minutes (thin sliced takes less time). You'll have perfect, crisp bacon and there is no need to stand over it so you're free to do other things till the timer goes off. Once done, remove bacon from baking sheet and lay on paper towels to drain.
- 2. While the bacon is baking, place frozen peas in a colander and run hot water over them to thaw.
- 3. Chop broccoli, cauliflower, and celery into small bite size pieces. You want the pieces small enough that you can get 2-3 in one bite. Place in a bowl. Add the thawed peas.
- 4. Chop the onion into tiny pieces as they will be used in the dressing. I used one of those chopper tools.
- 5. In a separate small bowl whisk together the sugar (or honey or agave), vinegar, parmesan and chopped onions. Then pour it over the bowl of veggies and stir thoroughly.
- 6. When the bacon is done baking, draining and cooled, chop it into bite sized pieces and add to the salad.
- 7. Cover the bowl and put in refrigerator until ready to serve. This can even be made a day ahead. Just be sure to give it a good stir before serving. I usually stir up from bottom for each serving put on the plate as the dressing will settle.

- Bring 4 cups water to a rolling boil. Put the broccoli florets in a colander and pour the water slowly over them to blanch. When cool, break apart larger florets so they are all a similar size.
