HONEY MUSTARD PORK ROAST W/BACON image

1/4 c. Dijon Mustard
2 Tbsp Whole-Grain Mustard
2 Tbsp Honey
2 Garlic Cloves, minced
2 Tbsp Fresh Rosemary Leaves, chopped
1 (3-1/2lb) Center-Cut, Boneless, Pork-loin roast
12 Bacon slices (about 1 lb)
Kitchen Twine

Steps:

  • Place oven rack in lower 1/3 of oven. Preheat 350F. In a small bowl, add dijon mustard, whole-grain mustard, honey, garlic, and rosemary; mix together until smooth. Arrange the pork in a 9x13 baking glass dish. Spread the mustard mixture evenly over the pork. Starting on 1 side, lay bacon 2 strips at a time lengthwise on the pork. Lay another 2 strips overlapping the first. Continue until pork in fully covered in bacon. Using 3 pieces of kitchen twine, secure the bacon in place. Roast for 1 hour. Cover the pan loosely with foil and roast for another 10-20 min. until an instant read thermometer inserted into the thickest part of the pork registers 160F. Remove the pan from oven and transfer roast to cutting board. Cover with foil and allow to rest for 20 min. Remove the kitchen twine and slice the pork into 1/2" thick slices.
