FRESH APPLE SPICE CAKE

1 cup chopped pecans
1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
  • Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
  • Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

4 cups thinly sliced apples
1 cup water
2 tablespoons white sugar
1 ⅜ cups butter
2 ½ cups white sugar
4 eggs
3 cups all-purpose flour
2 cups whole wheat flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves
¼ teaspoon salt
1 cup raisins

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour one 10 inch tube pan.
  • Place apples, water and 2 tablespoons of the sugar in a saucepan. Cook, covered, over medium heat until tender. Approximately 5 to 10 minutes. Remove apple mixture from heat and set aside.
  • In a large bowl cream the butter with the remaining 2-1/2 cups white sugar. Beat in the eggs, then the apple mixture (including the liquid).
  • Stir the all-purpose flour, wheat flour, baking soda, salt, ground cinnamon, ground nutmeg and ground cloves together. Beat the flour mixture into the apple mixture until just thoroughly moistened. Stir in the raisins. Turn the batter into the prepared pan.
  • Bake at 325 degrees F (165 degrees C) for 1 hour and 30 minutes or until cake tests done. Let cake cool and turn out onto a rack.

When I was fresh out of High School I worked for Mortensen's Greenhouse in Ohio and the owners elderly mother would bring this and other treats down to us to feast on. As far as I can tell this is the recipe or as close as I could get. The copy she gave me all those years ago is buried in a box in my pantry. When I get to it I'll edit the recipe if necessary. I insist you try this one! Be careful not to overbake so it will be nice and moist.

1 cup oil
2 eggs
2 cups sugar
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
3 cups cooking apples, chopped
1 cup walnuts or 1 cup pecans

Steps:

  • In a mixing bowl combine oil,eggs and sugar and mix well.
  • In a separate bowl mix together the dry ingredients except for the apples and nuts.
  • Add to the wet ingredients and mix well.
  • Stir in the apples and nuts.
  • Bake in a greased 13X9 inch pan or divide into 2 8X8 inch pans.
  • Bake at 350 degrees for 50 to 60 minutes.Toothpick inserted in center should come out mostly clean.
  • Do not overbake! The cake will continue to bake after removing from the oven.
  • Cool, cut into squares and enjoy!

4 - large granny smith apples
1 cup(s) sugar
1 cup(s) nuts, chopped
1 cup(s) dates, chopped ( mix with a small amount of flour to prevent sticking together)
2/3 cup(s) butter, melted
2 - eggs, beaten
2 teaspoon(s) vanilla extract
2 cup(s) all purpose flour
2 teaspoon(s) baking soda
2 teaspoon(s) cinnamon
2 teaspoon(s) allspice, ground
1 teaspoon(s) cardamon, ground
1/2 teaspoon(s) salt

Steps:

  • In a large bowl, sift all the dry ingredients and set aside
  • Grease and flour a 9x13 inch baking pan. Perheat oven to 350 degrees.
  • Peel, core and finely chop the apples place into a large bowl. Mix in: sugar, vanilla, beaten eggs, melted butter, nuts and dates.
  • With a wooden spoon, mix dry ingredients into the apple mixture. Mix only until moistened, do not over mix. Pour into prepared pan and bake at 350 degrees 50 to 60 minutes.
  • When cake is done remove from oven and cool 5 to 10 minutes. Turn out onto a serving plate. Let cool. Sprinkle with powered sugar or frost with an icing of your choice.
