1/4 cup apple cider or juice
1 tablespoon snipped fresh dill or minced fresh tarragon
1 tablespoon olive oil
1 tablespoon spicy brown mustard
2 teaspoons brown sugar

8 cups chopped tart apples
1 can (20 ounces) pineapple chunks, drained-reserve juice
2 cups seedless green grapes
1 to 2 teaspoons poppy seeds
1-1/2 cups toasted pecans
DRESSING:
Reserved pineapple juice
1/4 cup butter
1/4 cup sugar
1 tablespoon lemon juice
2 tablespoons cornstarch
2 tablespoons water
1 cup mayonnaise or 1/2 cup reduced-calorie mayonnaise and 1/2 cup plain yogurt

Steps:

  • Make dressing first by combining the reserved pineapple juice, butter, sugar and lemon juice in a small saucepan. Heat to boiling. Combine the cornstarch and water to make a smooth paste; add to the hot mixture; cook until thick and smooth. Chill completely before stirring in mayonnaise/yogurt. 1 teaspoon Dijon mustard
1 stalk green onion, chopped
1 clove garlic, minced
salt and freshly ground black pepper to taste
5 ounces mixed salad greens
8 medium (blank)s fresh figs, halved
1 medium Granny Smith apple, chopped
4 tablespoons pomegranate seeds
4 tablespoons sliced almonds
4 tablespoons crumbled feta cheese

Steps:

  • Combine vinegar, olive oil, sour cream, and Dijon mustard in a small food processor or blender. Puree until dressing has begun to blend, about 30 seconds. Add green onion and garlic; process until smooth, 30 to 45 more seconds. Season with salt and pepper.
