2 cups flour, sifted
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon clove
1/2 teaspoon nutmeg
1/2 cup butter
1/2 cup milk
1 1/3 cups light brown sugar, packed
1 egg, beaten
1 cup nuts, chopped
1 cup raisins, chopped
1 cup apple, finely chopped, unpared

Steps:

  • Sift together flour, salt, baking soda and spices.
  • Cream sugar and butter.
  • Add egg and mix well.
  • Stir in half of dry ingredients.
  • Add nuts, raisins, and apples.
  • Mix in milk and rest of dry ingredients.
  • Drop by spoonfuls on greased cookie sheets. Cookies should be placed about 2 inches apart.
  • Bake at 400 degrees from 12 to 14 minutes.

1 cup light brown sugar
1/2 cup shortening
1 egg
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon nutmeg
1 cup apple, unpeeled, and chopped
1 cup walnuts, chopped

Steps:

  • Cream together sugar and shortening.
  • Beat in egg.
  • Sift together dry ingredients, and add to mixture. Beat until well blended.
  • Stir in apples and nuts.
  • Drop in the shape of a ball on a greased cookie sheet.
  • Bake at 375, for 12-15 minutes.

1 cup sugar
1/2 cup shortening
1/2 teaspoon vanilla
1 large Red Delicious apple, peeled & grated
2 cups flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees.
  • Cream together sugar, shortening & vanilla.
  • Add in grated apple.
  • Sift together dry ingredients.
  • Add gradually to creamed mixture, combining thoroughly.
  • *If dough appears slightly dry and doesn't come together, let it sit for a few minutes to allow the sugar to pull the juice from the apples.
  • Roll in walnut-sized balls and roll in mixture of 2 Tbsp sugar, 1/2 tsp nutmeg and 1/4 tsp cinnamon.
  • Bake 8-10 minutes on aluminum foil or parchment, until cookies are golden brown and appear crackled.
  • Let cool on cookie sheet 4-5 minutes before transferring to cooling rack.

1 1/2 cups all-purpose flour
1/3 cup old-fashioned oats
1 teaspoon baking soda
1 teaspoon baking powder

1 teaspoon ground cinnamon
1/2 cup (1 stick) unsalted butter, softened
2/3 cup honey or agave nectar
1 large egg
1 teaspoon pure vanilla extract
1 apple, peeled, cored, and diced into small cubes (about 1 cup)
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine the flours, oats, baking soda, baking powder, salt, and cinnamon.
  • Using a stand mixer or hand mixer, beat the butter and honey on medium speed for 1 minute, or until creamy. Add the egg and vanilla and beat on medium speed until smooth, about 1 minute.
  • Slowly add the dry ingredients to the wet, mixing to incorporate as you go. Stir the apple and walnuts into the batter.

2 ½ tablespoons half-and-half cream

Steps:

  • Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
  • Stir together flour, baking soda, salt, cinnamon, cloves and nutmeg.
  • Stir half the dry ingredients into creamed mixture. Stir in nuts, apple and raisins, then stir in remaining half of dry ingredients and milk. Mix well.
  • Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet. Bake in a preheated 400 degree oven for 10-12 minutes. Remove cookies to racks and while still warm, spread with glaze.
  • To make Glaze: Combine powdered sugar, butter, vanilla and enough cream to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies.
