powdered sugar, dusting of
1 tablespoon cream

Steps:

  • Spread jam on 1 slice of bread, top with other slice.
  • combine egg and milk, dip sandwich in, then fry both sides in butter until crisp.
  • Dust with powdered sugar, top with cream and topping.

This is basically a jam sandwich cooked like french toast. You can use any jam you like but raspberry is my fave so for the sake of this recipe that's what I'm listing. Lovely!

1 large egg
2 teaspoons caster sugar
1/4 teaspoon vanilla extract
2 slices white bread
2 tablespoons raspberry jam
butter

Steps:

  • Beat the egg, sugar and vanilla in a shallow dish.
  • Make up your jam sandwich with the bread and jam. Cut the crusts off if you wish (I do!).
  • Soak the sandwich in the egg mixture until it has all been absorbed into the sandwich.
  • Heat a knob of butter in a frying pan over a medium heat.
  • Fry for 1 - 2 minutes on each side or until lovely and golden.
  • Serve immediately.

1-1/2 cups half-and-half cream
3 large egg yolks
3 tablespoons brown sugar
2 teaspoons vanilla extract
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
8 slices day-old brioche bread (1 inch thick)
Optional toppings: Butter, maple syrup, fresh berries, whipped cream and confectioners' sugar

Steps:

  • In a shallow dish, whisk together the first 7 ingredients. Preheat a greased griddle over medium heat., Dip bread in egg mixture, letting it soak 5 seconds on each side. Cook on griddle until golden brown on both sides. Serve with toppings as desired.

8 slices bacon, cut into 1/4-inch lardons
Extra-virgin olive oil
1 small onion, cut into 1/4-inch dice
Kosher salt
Pinch of red pepper flakes
1 medium beefsteak tomato, seeded and cut into 1/2-inch dice
2 sprigs oregano, leaves finely chopped
For the French toast:
4 large eggs
1 cup whole milk
Pinch of cayenne pepper (optional)
8 slices white bread
1 cup grated Gruyere or monterey jack cheese
For the eggs:
2 tablespoons chopped fresh chives

Steps:

  • Make the filling: Toss the bacon into a large skillet with a few drops of olive oil. Bring the pan to medium heat and cook the bacon until brown and crisp, about 13 minutes. Spoon off about half of the drippings. Add the onion to the pan and season with salt and the red pepper flakes. Continue to cook, stirring occasionally, until the onion is soft and very aromatic, 8 to 10 more minutes. Add the tomato, season with more salt and cook another 8 to 10 minutes, or until the tomato is soft and mushy and most of the liquid has evaporated. Taste and reseason if needed. Stir in the oregano and let cool.
  • Make the French toast: Preheat the oven to 200 degrees F. In a wide dish, combine the eggs, milk, cayenne (if using) and a pinch of salt. Beat until smooth and homogeneous.
  • Lay 4 slices of bread on a work surface. Sprinkle each piece of bread lightly with cheese (use about half of the cheese). Spoon a quarter of the bacon filling onto each piece of bread, then sprinkle with the remaining cheese. Top each slice with another piece of bread and press to secure. Working in batches, soak each "toast" in the egg mixture, about 1 minute; flip and soak the other side.
  • While the toasts are soaking, coat a large saute pan with olive oil and bring the pan to medium heat. Working in batches so you don't crowd the pan, cook the toasts for 2 to 3 minutes per side. The toasts should be golden brown, lovely and crisp-YUM! Transfer the toasts to a baking sheet and place in the oven to keep warm.
  • Make the eggs and assemble: Coat a large nonstick skillet lightly with olive oil and bring to medium heat. Add the eggs to the pan, working in batches if necessary. Cook until the whites are cooked through and the yolks are warm and runny, 3 to 4 minutes. Remove the toasts from the oven and top each with a perfectly fried egg. Sprinkle with chives and serve immediately.

1 tablespoon powdered sugar
1/2 teaspoon grated orange peel
8 slices French bread (sliced 1/2 inch thick)
8 teaspoons strawberry preserves
1/2 cup fat-free cholesterol-free egg product
1/2 cup fat-free (skim) milk
1/2 teaspoon vanilla
1 tablespoon powdered sugar, if desired

Steps:

  • In small bowl, mix cream cheese, 1 tablespoon powdered sugar and the orange peel until well blended. Spread 4 slices of the bread evenly with cream cheese mixture.
  • Spread 2 teaspoons preserves on each remaining slice of bread. Top each with 1 bread slice spread with cream cheese, making 4 sandwiches.
  • In shallow bowl or pie pan, mix egg product, milk and vanilla until well blended.
  • Heat 10-inch nonstick skillet or griddle over medium heat or to 375°F. Dip each sandwich into egg mixture, turning to coat both sides. Cook in hot skillet 3 to 4 minutes on each side until golden brown. Sprinkle each sandwich with powdered sugar.

This is a nice change from ordinary French toast. I make this more than the standard recipe. Although this is my family's favorite version, it is very versatile. You can substitute peanut butter for the cream cheese, use different jams or preserves, different extracts or spices - the options are practically limitless! Serve with maple syrup and sprinkle with powdered sugar.

½ (8 ounce) package cream cheese, softened
½ cup seedless raspberry jam
5 eggs, beaten
¼ cup milk
1 ½ teaspoons almond extract
1 tablespoon butter
