How to Make a Tuna Melt image

This is dedicated to all those chefs who tell you to never, ever mix fish and cheese together; and yet there they are, at the diner at 2:00 in the morning. And you know what they eat? Tuna melts. And the reason they do is because it is delicious.

1 (6.5 ounce) jar oil-packed tuna, drained
1 tablespoon minced green onion
2 tablespoons finely diced celery
2 teaspoons capers, drained
1 teaspoon Asian chile paste (such as sambal oelek)
2 tablespoons mayonnaise, or more to taste
⅓ cup fresh mozzarella cheese
salt and ground black pepper to taste
2 tablespoons softened butter, divided
2 thick slices French bread
¼ cup shredded sharp white Cheddar cheese, divided
1 pinch cayenne pepper, or to taste

Steps:

  • Place tuna into a mixing bowl and lightly break apart with a fork. Add green onion, celery, capers, chile paste, and mayonnaise. Pinch small pieces from mozzarella cheese into the tuna salad and stir to mix. Season with salt and black pepper; refrigerate tuna salad until needed.
  • Heat oven's broiler. Line a baking sheet with aluminum foil.
  • Spread butter generously on both sides of French bread slices.
  • Broil buttered bread until golden brown on top, 2 to 3 minutes. Flip bread slices and broil other side until toasted, 2 to 3 more minutes. Remove from oven and turn bread slices over on the baking sheet so the darkest sides are on the bottom.
  • Gently spread tuna salad onto bread slices using 2 forks. Press the salad onto the bread and spread tuna all the way to the edges of the bread. Spread shredded sharp Cheddar over each sandwich. Dust tops with cayenne pepper.
  • Place sandwiches under broiler and cook until cheese is melted and bubbling, 5 to 6 minutes.

This is a very simple sandwich that I love. My mom would make this for the family for lunch or dinner. All of us kids loved it. It is now one of my fiance's favorite meals that he request for his birthday which is great because it is so easy to make. I hope you will try this and enjoy it as much as I do!

1 loaf French bread
2 (6 ounce) cans tuna
1/4 cup mayonnaise (I use miracle whip) or 1/4 cup Miracle Whip (I use miracle whip)
1/4 cup sour cream
1 tablespoon garlic powder
5 -6 slices swiss cheese

Steps:

  • Preheat oven to 350 degrees. Mix together tuna, mayo, sour cream, and garlic powder. Spread the mixture over the french bread that has been cut in half. Put swiss cheese over tuna (enough to cover) and put the top of the loaf over tuna and cheese. Wrap foil around the sandwich and bake for 30 minutes. Cut into individual sandwiches and enjoy!

Tapenade was not even a word in my vocabulary, much less my cuisine. I tried this recipe, however, from the Rachel Ray website and was delighted with the new flavor. I had grown tried of traditional tuna fIsh salad, but believe it or not, I enjoyed this variation so much that I added tuna fish into my diet again as a healthy food choice.

1/2 - french baguette, split lengthwise
2 - 6 oz cans solid white albacore tuna in water, drained and flaked
1/4 cup(s) store bought black olive tapenade
- juice of l lemon
2 tablespoon(s) extra-virgin olive oil (evoo)
1 - large shallot, finely chopped
1/4 cup(s) (a small handful) flat-leaf parsley leaves, chopped
3 - sprigs fresh thyme, leaves removed and chopped
- freshly ground black pepper
1 - plum tomato, thinly sliced
4 ounce(s) brie cheese, sliced/or variety of choice

Steps:

  • Preheat broiler to medium heat.
  • Remove most of the soft bread "guts" from each side of the baguette and place on a cookie sheet. Transfer the sheet to the oven and broil until golden, about 1-2 minutes.
  • Once the bread is toasted, combine the tuna, tapenade, lemon juice, EVOO, shallot, parsley, and thyme in a bowl and season with a little black pepper.
  • Spread the tuna mixture over the dug-out part of the toasted baguette. Top with the sliced tomatoes and Brie Cheese and place under the broiler until the cheese has melted.
  • Another variety of cheese such as Swiss or Mozzarella tastes great as a substitution, if Brie Cheese is not preferred.

1 (1 pound) loaf French bread
1 small sweet onion, peeled and diced
1 (12 ounce) can tuna, drained
2 cups mozzarella cheese, shredded
1 cup mayonnaise

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine sweet onion, drained tuna, mozzarella, and mayonnaise. Mix thoroughly.
  • Spread tuna mixture on slices of French bread to form a sandwich. Place sandwiches on a cookie sheet.
  • Bake in a preheated oven for 10 minutes.

2 English muffins, split, or 4 slices sourdough, rye, or whole wheat bread
2 tablespoons prepared mayonnaise (optional)
1 recipe Tuna Salad, recipe follows
1 cup shredded sharp farmhouse Cheddar cheese
Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole grain mustard
Freshly ground black pepper,
Freshly squeezed lemon juice, to taste (optional)

Steps:

  • Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
  • Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.
