These beans are one of my favorite side dishes. I serve them at our church steak dinner. A smattering of onions can be used to pep up the mild flavor of the beans.-Hope Meece, Ambia, Indiana

- In a large skillet, saute almonds in butter for 1-2 minutes or until lightly browned. Add beans and salt; cook and stir for 1-2 minutes or until heated through.

Steps:
- In a medium saucepan, heat margarine and water over medium heat until margarine melts, swirling to coat bottom.
- Add beans and cook for 1 to 2 minutes, separating them with a fork. Reduce heat to low and cook, covered, for 5 to 6 minutes, or until beans are crisp-tender.
- Stir in remaining ingredients and heat thoroughly.
- (Celery and onion should remain crisp.).

SALAD OF FRENCH-STYLE GREEN BEANS AND GOAT'S CHEESE
French-style green beans (which is NOT the same as French green beans!) are great for salads: they are slightly sweeter than "normal" green beans, and because they are so flat they are easy to blanch quickly without losing any of the goodness. This recipe is great for picknicks -- bring the cheese separately and add to the salad just before serving. If you want to add some colour, add a finely cut tomato.

- Juice the lemon. Cut the beans diagonally into broad diamond shapes (any shape will do, but this just looks pretty). Blanch them in boiling water in circa 2 mins and immediately rinse in cold water. Cut the olives into chunks. Mix beans, olives, oil, and lemon juice, and add salt and pepper to taste.
- Crumble the cheese over the salad.

- Preheat oven to 375 degrees F (190 degrees C).
- Heat 1 tablespoon butter and oil in an oven-proof skillet over medium heat until butter is melted. Add shallot and garlic; cook and stir until shallot is wilted, about 5 minutes.
- Place mushrooms, gill side up, into the skillet. Cook, flipping once, until liquid is absorbed, 2 to 3 minutes per side. Return mushrooms to gill side up.
- Arrange green beans around the mushrooms. Pour in wine; simmer until absorbed, 5 to 10 minutes. Reduce heat to low; cover. Cook until mushrooms release their juices and green beans are tender, about 10 minutes.
- Top mushrooms with ham slices; sprinkle evenly with Gruyère cheese. Add remaining 1 tablespoon butter to the green beans.
- Bake in the preheated oven until cheese is melted and bubbly, about 5 minutes.
