• 1 lb baby red or Yukon gold potatoes
• 1 large onion, thinly sliced
• 1 packet dry Onion Dip mix (I used Lipton's)
• 1 tsp olive oil
• Salt & pepper to taste

Steps:

  • 1. Preheat oven to 425 degrees. Line a baking sheet with aluminum foil, and lightly spray with non-fat cooking spray. 2. Wash and scrub potatoes, and cut into quarters or bit sized pieces. 3. Place all ingredients in a large Ziplock bag, and shake well to evenly coat the potatoes and onions. 4. Pour onto baking sheet, and spread out evenly. Sprinkle with a bit of salt and pepper. Place in oven and cook for about 30 minutes, or until potatoes are browned well and soft.

12 small red potatoes, quartered
2 garlic cloves, coarsely chopped
1/3 cup Dijon mustard
1/4 cup butter, melted
1/8 cup fresh parsley, chopped

Steps:

  • Preheat oven to 350 degrees F.
  • Place potatoes and garlic in a lightly greased roasting pan; cover tightly with foil.
  • Bake for 45-60 minutes or until potatoes are just fork-tender.
  • In a medium bowl, blend mustard, butter and parsley; toss with hot potatoes.
  • Bake uncovered for 15 more minutes.
  • Serve immediately.

Something a little different from the usual oven fries. I first had these at a tiny restaurant in Montreal and really wanted to replicate their recipe; it's not exactly the same but fairly close. I hope that you enjoy them as much as I do.

2 medium russet potatoes
cooking spray
2 tablespoons dry white wine
2 tablespoons extra-virgin olive oil
½ teaspoon thyme
½ teaspoon garlic granules
½ teaspoon salt
freshly ground black pepper to taste

Steps:

  • Peel and cut the potatoes into 1/2-inch strips.
  • Fill a medium bowl with cold water and soak cut potatoes for 15 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with foil and spray with cooking oil.
  • Remove the potatoes from the water and dry well.
  • Combine white wine, oil, thyme, garlic, salt, and pepper in a bowl and mix well. Add potatoes and toss to coat. Spread out potatoes on the prepared baking sheet in a single layer without touching.
  • Roast in the preheated oven for 15 minutes. Turn and continue roasting, turning occasionally, until potatoes are golden brown, an additional 15 to 20 minutes.

24 small red-skinned potatoes, quartered
4 clove garlic,coarsely chopped
2/3 c dijon mustard
1 stick butter, melted
4 c chopped fresh parsley

Steps:

  • 1. Preheat oven to 350 degrees F. Place potatoes and garlic in a lightly greased roasting pan. Cover tightly with foil. Bake 60 minutes or until potatoes are just fork tender. In a medium-sized bowl, blend mustard, butter, and parsley; toss with hot potatoes. Bake, uncovered, an additional 15 minutes or until potatoes are crisp. Serve immediately.

This is a recipe from my best teenage French girlfriend, Francine... We have the same name and look alike and we have been friends for 40 years.... She would make these potatoes accompanied with a Roasted Beef. The secret ingredients is onion soup mix. Something I would never dare to think of...

4 large potaotes
1/2 cup(s) butter
1 package(s) onion soup mix
1 large yellow onion sliced

Steps:

  • Peel potatoes and cut into bite size pieces. Preheat the oven at 375 degrees. In a lightly greased baking pan, lay the potatoes and slice onions.
  • Take the onion mix dissolve with water but about 1/2 less than the directions on the package.
  • Add the onions, then add the melted butter to the broth that you just made and pour over the potatoes. Bake about 20-30 minutes according to the size of the potatoes.
  • At times I add fresh thyme, rosemary, parsley and crushed red pepper. It does add a kick of fresh herbs which inspires my spirit... Try it...you may fly!!
