- Combine beef, bread crumbs, onion, garlic, and soup mix in a large bowl. Knead the mixture with your hands until well blended; it will be quite dry. Add eggs and Italian dressing and mix. Allow mixture to sit in the refrigerator 10 minutes.
- Pinch off just enough of the meatball mixture to fit comfortably inside your palm, then roll to form a ball. Repeat with the remaining mixture.
- Cover the bottom of a skillet lightly with olive oil and heat to medium-high. Add meatballs. Cook on one side for about 4 minutes, then turn and continue to cook until browned and no longer pink in the centers, about 4 minutes more. You may need to cook these in batches depending on how large your skillet is.

- Preheat the oven to 350 degrees F (175 degrees C). Set a wire rack in a rimmed baking sheet.
- Combine egg, oregano, and 1 tablespoon water in a bowl and beat to combine. Add in panko and ground beef. Sprinkle 1/2 of the French onion mix on top and mix until thoroughly combined. Shape mixture into meatballs. Place meatballs on the prepared baking sheet.

- Preheat the oven to 400 degrees F (200 degrees C).
- Mix ground chicken, bread crumbs, egg, onion soup mix, and garlic together in a medium bowl until the ingredients are well incorporated. Roll into sixteen 1 1/2-inch meatballs.
- Melt butter in a saucepan over medium heat. Add onions and sugar; saute until onions are softened, about 12 minutes.
- Meanwhile, heat olive oil in an oven-safe skillet over medium-high heat. Add meatballs and cook, flipping occasionally, until edges are browned, about 4 minutes.
- Transfer skillet to the preheated oven and bake until meatballs are no longer pink in the center, about 15 minutes. Check the meatballs halfway through and flip if they are browning too much on the bottom.

- 2. If using Great Value Brand Frozen Homestyle Meatballs, remove from freezer and place in slow cooker. Stir together with sauce.

- 1.In a large nonstick pan over medium-low heat, saute onions and butter stirring occasionally until golden brown and caramelized. 2.Add the thyme, salt, water, bouillon, and wine. Cook over medium heat until reduced by half. Let cool. 3.Combine the milk soaked bread, ½ cup panko, parsley, pepper, salt, and egg in a bowl and mix together until everything is a happy gloopy mess. - In a large saucepan over medium heat, melt the butter and add the olive oil. Add the onions and cook for about 30-40 minutes, stirring occasionally, until very soft, medium brown and caramelized. Add the sugar about 10 minutes into the cooking to help the onions cook down.
- Stir in the garlic and dried thyme. Cook for about two minutes.
- Stir in the flour. Cook for another minute or so.
- Add the vegetable broth, Worcestershire sauce, salt, pepper, and bay leaf. Bring to a boil, then turn the heat to low and simmer, covered, for about an hour. Continue to simmer over low heat while preparing the meaty half of the soup. Skip to step 8 if you're not making the meaty half.
- Meanwhile, make the meatballs. In a medium bowl, using a fork, mix together the ground beef, bread crumbs, egg, garlic, Parmesan cheese, salt, and pepper until all ingredients are well-incorporated. Scoop out tablespoonfuls, roll into balls, and set aside (I place them on a sheet of wax paper).
- After the soup has cooked for an hour, into another large saucepan over medium heat, transfer two cups of the soup plus another 1/2 cup or so of the onions with a slotted spoon. Add the two additional cups of broth (either beef or more veggie). Bring to a boil then turn to a simmer.
- Carefully drop in the meatballs into the meaty soup and continue to simmer, uncovered, for 20 minutes until cooked through.
- Butter the French bread on both sides and place on a cookie sheet. Broil on high heat until golden brown; turn over and brown the other side. Remove from the oven, but keep the broiler on.
- Ladle the vegetarian soup into three oven-proof bowls, and ladle the meaty soup into three bowls as well. Reserve three meatballs to place on top of the soups with meat. Place one piece of French bread on top of each bowl of soup, then sprinkle each with 1/4 cup mozzarella and 1/4 cup Gruyere. Cut the meatballs in half, and place two halves on each bowl of meaty soup.
- Carefully place the bowls on a cookie sheet and broil on high until the cheese is melted and bubbly, then serve.

- In a bowl, mix all of the meatball ingredients except the olive oil together. Form mixture into golfball-sized meatballs.
- Add olive oil to a cast-iron skillet and heat to medium high heat. Sear meatballs on all sides, turning every few minutes, then set aside once finished.
- To make the broth, add a stick of butter to a cast-iron skillet on medium high heat. Then, add onions, olive oil, and salt and pepper to a skillet and cook down for ½ hour, stirring every few minutes.

- For the onions: Heat oil in a skillet over medium, add onions, salt & pepper, cook 15-20 minutes, stirring frequently or until caramelized. MA'S MEATBALLS & FRENCH ONION GRAVY
I came up with version of meatballs after reading several recipes and adapting my version of meatloaf. Same thing with the french onion gravy. We love mushrooms, black olives, garlic, onions, which are liberally used in this dish. No added salt besides what is already included in ingredients used. This makes a lot, I got 40 odd 1 1/2-2" meatballs. Good news: you can freeze any leftovers in a gallon freezer zip baggie for another meal should you be like we are, just the two of us now.

- Place both packages of ground meat in a large mixing bowl.
- Break the eggs into the bowl, and add the milk. I use my metal 'squiggle' shaped potato masher to mix the meats and liquids together using a slight twisting motion as I mash. This method really blends the meats together much better than trying to hand mix or use a cooking spoon.
- I used a flat grater that can be laid over the top of the bowl to grate the garlic clove[s] directly into the meat mixture using the fine grater section. Then used the bigger grater section to more coarsely grate the small onion into the meat mixture. This way both veggies juice goes right into the bowl, too.
- Add the muffuletta, parsley & black pepper. Mix in using the potato masher.
- Start adding the seasoned bread crumbs a bit at a time, and mix in with potato masher. Repeat the process unit the meat mixture is dry enough to hold a ball shape, but still has some moisture to it.
- I don't have a meatball maker, so used a soup spoon to scoop out the meat mixture and then rolled the balls. Mine ranged from 1 1/2-2" roughly.
- Brown the meatballs in a large non-stick skillet, I did this in stages so I could roll the meatballs around easier. Place browned meatballs in a large baking dish, you may need 2 smaller baking pans depending on the size of your meatballs.
- Bake the browned meatballs at 350 degrees for 30 minutes to cook them the rest of the way. Spray the baking dish with pan pal.
- While baking the meatballs, in a large pot, melt 1 stick of butter, add the onions and garlic and cook until onions are transparent. Add the sliced mushrooms and black olives. Let cook a few minutes, then sprinkle the flour over the veggies in the pan and stir to coat them well.
- Add both pouches of onion soup mix, and 5 1/2 C water or 4C water & 1 12 oz bottle of cooking white wine. Cook on med/high heat until gravy starts to thicken a little, add the baked meatballs, cover & simmer another hour or so.
