- Generously grease a 9x13-inch glass baking dish with softened butter. Stir together flour and mustard powder. Place ham and Cheddar cubes in a large mixing bowl, sprinkle with flour mixture, and toss until evenly coated. Add bread cubes and toss to mix. In a separate bowl, whisk together eggs, milk, and hot pepper sauce.
- Pour 1/3 of the bread mixture into the prepared baking dish and smooth out to form a layer. Drizzle with 1 tablespoon of butter, and sprinkle with 1/3 of the Parmesan cheese. Repeat twice more to form three layers. Pour egg mixture overtop, cover with plastic wrap, and refrigerate 8 hours to overnight.
- The next morning, remove casserole from refrigerator, remove plastic wrap, and allow to stand at room temperature for 30 minutes. Preheat oven to 350 degrees F (175 degrees C).
- Bake uncovered in preheated oven until the eggs have set, and the top is golden brown and crispy, about 1 hour.

- Make crepe batter: In a large bowl, combine all ingredients and whisk until very smooth. This can also be done in a food processor. Set batter aside to rest for about 15 minutes before using. Batter can also be covered and refrigerated for up to two days.
- Add some butter or nonstaick spray to a large frying pan (about 12-inches) and heat over high heat. Pour about 1/3 cup crepe batter into the pan and tilt the pan to swirl it around and coat it with a single, even layer. Once the first side cooks, flip the crepe.
- Crack an egg right on top of the crepe. Use a fork to gently break the egg yolk, give the egg a gentle whisk and spread it evenly all over the crepe. If you're worried about hitting the crepe during this step, you can scramble the egg in a bowl and pour it into the center of the crepe, the spread it around. Allow crepe to continue cooking until egg is set. Season with pepper, if desired.
- Spread 2 oz cheese over half the crepe. Allow to melt for 30-60 seconds. Add 2 oz of ham on top of the cheese. Fold crepes in half, covering the ham and cheese side of the crepe with the side that only has egg on it. Fold crepe in half again, making a finished crepe that is 1/4 circle in area and packed with many layers of crepe, cheese, ham and egg.
- Repeat with remaining batter, cheese, and ham.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- Cut a slit in each slice of bread almost all the way through, leaving the bottom connected. Stuff each slit with slices of ham and cheese.

Just a little note. The French call this sandwich a Mr. or a Mrs. Croque Monsieur due to the fact that there is a fried egg on top of the sandwich. Fried egg is a Mrs. & no fried egg is a Mr. I prefer mine as a Mr. This is very quick to make if you prepare everything in advance. Hope you enjoy it.

- 1. SOUP: In a heavy large pot heat 3T of veg oil and add the onions. Caramelize the onions for about 20 minutes with. Don't forget to stir in the 20 minutes. When the onions are caramelize add the beef stock, bay leaf, garlic, dried thyme and bring to boil for another 20 minutes. While it comes to a boil get your bowls ready and the broiler ready. Make sure that the bowls you use are clay or even metal. NEVER USE PLASTIC!! Place the bowls on a heavy duty baking sheet lined with foil. Turn on your broiler, over 500 degrees. When the soup comes to a boil. Stir and add black pepper and salt to taste. Ladle into the prepared bowls. Heat a frying pan big enough to hold all the slices on french bread. Add the one buttered side to the hot pan. Toast till lightly brown & place on the soup in the bowls, toast side up. Add the cheese as much as you want. Repeat till all the bowls of soup are done. Place in broiler for about 5 minutes till cheese it melted. Bring out, carefully to not to spill. Let sit for another 5 min. Ready to serve. Enjoy!!
- 2. SANDWICH: Place both slices, buttered side down, on a heated frying pan. Layer each side with your choice of cheese and place 4 slices of ham on both sides. Heat for about a minute, then fold over to make the sandwich. Place on a small baking sheet, spread Aioli over the top and add the fried egg (opt) with more cheese. Place in broiler for about 5 min, till cheese in melted. Serve. Enjoy.
- 3. Aioli 2 egg yolks 2 T dijon mustard salt & pepper extra virgin olive oil, about 1/2 C - 3/4 C Add all the ingredients to a steal bowl, except the oil. Whisk till frothy. The easiest way to whisk so the bowl does not move is to wet a dish towel and twist and make into a circle. Place the bowl in the middle of the circle and press down. The bowl should not move. With the oil in one hand and the whisk in another, drizzle oil into bowl and whisk at the same time to make the sauce thicken. This is a basic recipe for mayonnaise. At this point you can add anything.... wasabi, hot mustard, herbs, roasted onions, roasted garlic, horse radish, gherkins....... the list is endless.

- Line up 8 slices of bread on a work surface.
- Heat a small saucepot over medium heat. Add 2 tablespoons butter and melt. Add flour to the butter and whisk together. Cook flour and butter together for 1 to 2 minutes, then whisk in half-and-half or milk. Bring sauce to a bubble and thicken another 1 or 2 minutes. Season sauce with salt, then whisk in prepared Dijon mustard.

OOOH LA LA! FRENCH SAVOURY HAM, CHEESE AND OLIVE CAKE
Another one of my savoury "cake" recipes from France. This recipe is slightly more substantial than my Recipe #316039, as this recipe contains ham with white wine and port! Serve this as alternative sandwich bread or as a light snack spread with cream cheese or butter. This cake recipe will also make fantastic little appetisers if the loaf is cut into small cubes and served with olives, cubes of cheese and savoury spreads. Please note that the texture of this savoury cake is NOT like a sweet dessert cake - it will be slightly holey with a robust and slightly chewy texture, almost like sourdough.

- Cut four 3cm-thick slices from loaf. Cut a pocket lengthways through the centre of each slice of bread (do not cut all the way through). Spread inside of pockets with mustard. Fill with cheese and ham.

- 1. In cup, stir marmalade and mustard until mixed; set aside.
- 2. Cut ham slices to fit on half of the bread slices; cut cheese slices to fit on top of ham, then top with a dollop of marmalade mixture and another bread slice.

- Butter a 13 x 9 inch baking dish.
- Using 3 tablespoons butter, lightly butter all the bread slices on one side.
- Spread the mustard on top.
- Arrange half of the bread slices, mustard side up, in the baking pan in one layer; cut to fit if necessary.
- Heat 1 tablespoon butter in a skillet over med-low heat; add in the onion; saute for 25-35 minutes, stirring often, until the onion is softened.
- Spread the onion evenly over the bread slices.
