10 (4 ounce) fillets tilapia
salt and ground black pepper to taste
⅓ cup all-purpose flour
1 cup buttermilk
1 egg
½ cup all-purpose flour
½ cup yellow cornmeal
2 tablespoons seafood seasoning (such as Old Bay®)
½ teaspoon baking powder
½ teaspoon baking soda
vegetable oil for frying

Steps:

  • Season fillets with salt and pepper. Dust with 1/3 cup of flour.
  • Beat buttermilk and egg in a bowl. Combine remaining flour, cornmeal, seafood seasoning, baking powder, and baking soda in another bowl. Dip all flour-dusted fillets into egg mixture, then into seasoned flour mixture.
  • Heat oil over medium-high heat in a large frying pan or deep fryer. Fry fillets, working in batches if needed, until golden, about 2 minutes on each side. Season again with salt as soon as your take them out of the pan or fryer.

Easy pan-fried tilapia, lightly breaded and quickly fried in an equal amount of butter and olive oil. Then topped with a wine sauce and garnished with capers.

4 (4 ounce) fillets tilapia fillets, or more to taste
1 pinch Cajun seasoning, or to taste
salt and ground black pepper to taste
¼ cup all-purpose flour, or as needed
2 tablespoons salted butter
2 tablespoons olive oil
½ cup chopped onion
¼ cup white cooking wine, or more as needed
¼ cup capers

Steps:

  • Dry tilapia fillets and cut each in half. Season each fillet with Cajun seasoning, salt, and pepper. Dredge in flour to coat, shaking off excess.
  • Melt butter and oil in a large heavy skillet over medium-high heat. Pan-fry fish quickly, working in batches if needed, until edges appear white, 3 to 4 minutes. Flip and continue to cook until easily flaked with a fork, 3 to 4 minutes more. Remove to a plate and keep warm.
  • Heat the same pan over medium-high heat. Saute onion until soft, about 5 minutes. Pour white wine into the pan, reduce heat, and let simmer until reduced by about half, 5 to 7 minutes. Drizzle sauce over fish before serving and garnish with capers.

A homemade alternative to the Durkee® brand. I use these for casserole recipes. I will never buy store-bought French fried onions again. This recipe makes a lot! I often just use one onion and about 1/2 cup of milk and 1 cup of flour with seasonings if I just want to use them for one dish. Warning: You may have to make what the original recipe calls for because they are so yummy and you won't be able to stop eating them!

3 large onions, sliced into thin rings
2 cups milk
2 cups all-purpose flour
1 pinch garlic powder, or to taste
1 pinch onion powder, or to taste
1 pinch ground white pepper, or to taste
salt to taste
vegetable oil for frying

Steps:

  • Soak onions in milk for 5 minutes.
  • Combine flour, garlic powder, onion powder, white pepper, and salt. Add a handful of onions and toss to coat. Remove and repeat with remaining onions, one handful at a time.
  • Heat oil in a large skillet or deep fryer. Fry onion in batches, stirring as needed, until evenly browned, 2 to 3 minutes each. Drain on paper towels and season with more salt. Store in an airtight container.

4 (6 ounce) tilapia fillets
salt, to taste
pepper, to taste
2 tablespoons olive oil, divided
1/2 cup diced yellow pepper
1/2 cup diced red pepper
2 medium diced zucchini
1 cup half-and-half
5 wedges light laughing cow lite french onion cheese
3 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 350 degrees; prepare a baking sheet by spraying with non-stick cooking spray, rinse and dry fillets. Place on prepared baking sheet and season to taste with salt and pepper. Bake fish in oven until it flakes easily with fork, about 12 to 15 minutes.
  • While the fish bakes, warm 1 tablespoon olive oil in a large saute pan over medium-high heat; add diced peppers and zucchini; saute until crisp tender, season with salt and pepper, divide cooked vegetables among 4 plates and top with cooked fish fillet.
  • For the sauce; reduce heat to medium and add the remaining oil to pan. Gradually whisk in half-and-half and then cheese; stir until the cheese is melted and sauce begins to thicken, about 5 minutes. Stir in chives, season to taste with salt and pepper.
  • Drizzle with cheese sauce over plated fish; garnish with additional chives if desired.

3/4 lb tilapia fillet
1 cup onion, chopped
1 tablespoon olive oil
3 tablespoons herbs, chopped fine
1 cup plain breadcrumbs
2 eggs, beaten
olive oil (for frying)

Steps:

  • NOTE: Use any fresh herb such as basil, sage, rosemary or a combination.
  • Heat the oil in a heavy pan, add the onion and fry until caramelized (brown).
  • In a separate bowl, combine the bread crumbs and herbs.
  • Add the caramelized onions to the crumb mixture and combine well.
  • Sprinkle the fish with salt and pepper.
  • Dip fish into the beaten egg, then into the crumb mixture and pat lightly to help crumbs adhere to fillet. I usually refrigerate the breaded fish for 15 minutes or so, but this is just my preference.
  • Pan fry in olive oil til crust is golden and fish is of desired doneness, about 5 minute per side.
  • Serve with your favorite side dish. I like mine with plain steamed basmati rice and cold sliced cucumbers.

I served this over spaghetti squash. Put the pepper mixture on top, and the tilapia on the side. It was really good, and took only minutes to throw together. My dh ate 3 fillets, that's why I say this serves 2. This is called "french" because, the coating is made the way the French will coat chicken in flour first and then the egg. I made this low in fat, but be my guest to use full fat ingredients.

20 ounces tilapia fillets
1/2 cup flour
salt & pepper, to taste
1/4 garlic powder
1 egg, beaten
cooking spray
1 teaspoon butter
1 orange bell pepper, thinly sliced
1 red onion, thinly sliced
2 tablespoons capers
1/2 cup fat free sour cream
4 tablespoons fat-free parmesan cheese
1/4 cup white wine
fresh ground black pepper
cooking spray

Steps:

  • For the fish:.
  • Put the flour, the salt and pepper, and garlic powder in a bowl and stir to mix.
  • Beat the egg in a bowl.
  • Dip each fillet in the FLOUR first to coat, and then the egg. (Note, the egg will slip off the flour a bit, so just turn it a couple times until the egg adheres - then add to the pan).
  • Add the cooking spray and the butter to a large skillet and heat until bubbly.
  • Add the fish to the hot pan and turn the heat to med-high. Cook for about 3 minutes, and turn when it is brown. You really have to watch the fish so it doesn't burn -- Cook another 3 minutes on the other side, until browned (add a little more butter if you need to). When browned remove and keep fish warm.
  • For the peppers and onions:.
  • Coat another large skillet with cooking spray, and heat until hot. Add the sliced onions and peppers and saute until a little browned and soft. (Add a little water if you need to, and turn down the heat if they are browning too quickly).
  • Add the capers and stir to mix and heat through.
  • Add the white wine and cook for about 2 minutes until it is reduced a little. Add the sour cream and the parmesan cheese. Cook until bubbling and the cheese is melted. Grind some freshly ground black pepper over the top.
  • Delicious served over spaghetti squash and with a garnish of fresh parsley.

This recipe came from necessity, as I was so very hungry, sick of chicken, and I didn't want to turn on the oven. My diet is pretty specific right now so this was easy and delicious low-carb lunch when served with a salad. Greek salad with pink grapefruit added really brought out the flavor blend, and fits well with the Mayo Clinic Diet of adding grapefruit to each meal of meat or fish and salad or veggies. I made a single serving so I am leaving it to the maker to multiply.

1 (6 ounce) tilapia fillet, patted dry
salt and ground black pepper to taste
1 tablespoon extra-virgin olive oil
1 teaspoon butter, divided

  • Squeeze lemon juice over tilapia; season lightly with salt and black pepper.
