THE best super soft peanut butter cookies (seriously though, the actual best). Sink your teeth into that perfectly soft and chewy texture and you'll see why these are the only peanut butter cookies you'll ever need!

1 ½ cups flour
1 teaspoon baking soda
¼ teaspoon salt
¾ cup creamy peanut butter
½ cup butter (room temperature)
¾ cup brown sugar
¼ cup granulated sugar ((plus 2 tablespoons for rolling))
1 large egg
1 ½ teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees and very lightly grease a baking sheet or line with a baking mat.
  • In a medium bowl whisk together flour, baking soda, and salt. Set aside.
  • In a large bowl cream together butter, peanut butter, brown sugar, and 1/4 cup granulated sugar for 2-3 minutes until light and fluffy. Mix in egg and vanilla until blended.
  • Add dry ingredients to wet ingredients and mix until combined (do not over mix). Roll dough into balls (two regular size cookie scoops or about 3 tablespoons, the balls should be fairly big - this is the key to a super soft texture!)
  • Roll cookie dough balls in remaining 2 tablespoons sugar, then place on baking sheet 2-3 inches apart. Use a fork to gently press a criss-cross pattern into each cookie dough ball, only pressing ball down about half way.
  • Bake for 8-9 minutes - DO NOT OVER BAKE. The cookies should just begin to crack on top. Allow to cool 1-2 minutes on baking sheet, then transfer to a cooling rack. Store in an airtight container at room temperature up to 5 days (they are softest on day 1 and 2!).

1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 large eggs eggs
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons baking soda

Steps:

  • Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
  • In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
  • Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

My Grandma and Mom made these cookies often when I was growing up and I have been making them for my kids for 20 years! I have tried many other peanut butter cookie recipes, but this one is still our favorite. Crispy, but a light texture . . . they almost melt in your mouth!

1 cup softened butter
1 cup creamy peanut butter
1 cup sugar
1 cup brown sugar
2 large eggs
1 cup carnation powdered milk
2 1/2 cups flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt

Steps:

  • Cream butter and peanut together in a large bowl.
  • Add sugars and eggs, mix well.
  • Sift together dry milk, flour, baking powder, baking soda and salt, stir into butter mixture.
  • Let dough stand 15 minutes.
  • Roll into balls, about the size of a walnut and place on a slightly greased baking sheet.
  • Flatten with a fork, dipped in flour, criss-cross fashion.
  • Bake at 375 degress for 10-12 minutes.
  • Watch closely and remove when tops just start to brown.
  • Wait about 5 minutes before removing from baking sheet. Cool on racks.

We wanted a super peanut buttery treat but found that store-bought peanut butter made the cookies a bit gummy when we used more than 1 cup. So we ground roasted peanuts ourselves and added that to the batter for an additional boost of flavor. Honey and melted butter add richness and create a soft and chewy cookie with an irresistible crackled exterior. We topped the dough balls with raw sugar for extra crunch and a hit of sweetness that balances the salt of the peanuts.

3/4 cup salted dry-roasted peanuts
1 1/2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking soda
3/4 teaspoon kosher salt
1 1/2 cups packed light brown sugar
1/4 cup granulated sugar
1 cup creamy peanut butter (do not use "natural" peanut butter)
2 large eggs
1/2 stick (4 tablespoons) unsalted butter, melted and cooled

Steps:

  • Position a rack in the center of the oven and preheat to 375 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Process the peanuts in a food processor until very finely ground; it should be the consistency of almond flour. Whisk together the ground peanuts, flour, baking soda and salt in a medium bowl.

1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 cup packed light-brown sugar
2 large eggs
1 1/2 cups smooth peanut butter

Steps:

  • Preheat oven to 350 degrees. Whisk flour, baking soda, and salt in a medium bowl.
  • Put butter and sugars into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, 2 to 3 minutes. Mix in eggs, then peanut butter.
  • Reduce speed to low. Add flour mixture in 3 batches, mixing until just combined after each addition. Cover with plastic wrap, and refrigerate 30 minutes.
  • Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing about 1 1/2 inches apart. Press cookies with fork tines to flatten and create a cross-hatch pattern. Bake until golden brown, 14 to 16 minutes. Let cool on sheets 5 minutes. Transfer cookies to wire racks to cool completely.
