I'd never heard of this dessert until I ate it in a small hotel at the foot of the French Pyrenees. I came back home and was able to find this recipe on the internet-- I believe a French cuisine website, but the name escapes me. Quick, easy, and yummy, too. Preparation time includes resting time.

8 ounces plain flour
4 ounces sugar
1 teaspoon baking powder
3 eggs
3 tablespoons milk
1 teaspoon vanilla extract
2 1/2 ounces unsalted butter, melted
2 lbs apples or 2 lbs pears, peeled seeded, and chopped

Steps:

  • Sift flour, sugar and baking powder into a bowl.
  • Make a well in the center of mixture and add the eggs, milk and vanilla extract.
  • Mix in well to form a smooth batter.
  • Add 4 TBS of the melted butter.
  • Let batter stand for 30 minutes while preparing the fruit.
  • Pre-heat the oven to 450°F.
  • Butter an 8 inch round cake tin.
  • Stir the fruit into the batter and pour into the tin.
  • Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in the tin for 5 minutes, then turn out onto a wire rack.
  • Serve warm, or cold.

This "custard cake" is simply an oven baked "pancake" so it is also wonderful for breakfast as well as dessert! This "cake can also be made with blueberries, raspberries, peaches or apricots.. so don't be afraid to experiment with your favourite summer fruit. I would also sprinkle "Juicy" fruit with a couple of tablespoons of plain flour to absorb the juice. This dessert may also be made with harder fruit, such as apples, though I saute apple slices in a bit of butter first. This may be served hot, or cold, but is traditionally served lukewarm. Upon seeing the review below, I realized the short coming of this recipe (the original never stated a pan size when I received it) That being the case, I must state that the recipe is for 6 servings only, and the cook must be careful of not using too large a pan or the results will be quite different than intended.

3 cups cherries, pitted
4 eggs
1/2 cup flour
1/4 cup sugar
1/8 teaspoon salt
1 teaspoon vanilla (or kirsch)
1 1/2 cups milk
icing sugar

Steps:

  • Make batter by combining eggs, milk, flour, sugar salt and vanilla in blender or food processor.
  • Process until smooth.
  • Pour batter over top of cherries.
  • Bake in a 350F oven for about 90 minutes.
  • Cake is done when batter has set in a custard like mass and a knife inserted comes out clean.
  • Let cake cool in pan until lukewarm.
  • Sprinkle with icing sugar and serve.
  • Due to the nature of this batter, the cake will fall as it cools-- so don't be alarmed.

1 tablespoon butter (softened)
1 cup milk
1/4 cup heavy cream
2/3 cup flour
3 eggs
1/4 cup sugar
2 teaspoons vanilla
1 teaspoon lemon zest
1/2 teaspoon cinnamon
1/4 teaspoon salt
4 cups apples (tart-sliced)
1 tablespoon powdered sugar

Steps:

  • Preheat oven to 350 degrees; butter a 9x9 pan or 9" pie pan with softened butter.
  • In a large bow; whisk together, milk,cream,flour,eggs,sugar vanilla,lemon zest,cinnamon and salt until it forms a smooth thin batter.
  • Spread 3/4 of the batter onto the botom of the prepared baking dish and bake for 3-4 min., watch the batter closely and remove before it cooks through. It should just (JUST) start to thicken, when it is set, remove from oven.
  • Transfer dish to a heatproof surface and arrange apples in a fan pattern over hot batter.
  • Pour remaining batter over apples; bake 35-40 minutes longer, until knife inserted comes out clean.
  • Sprinkle powdered sugar over finished clafouti, serve warm.

A delicious and easy traditional French pudding; Clafoutis or Clafouti is basically a custard/pancake batter type pudding which is usually baked with fruit. Most seasonal fruits other than cherries work well - such as apricots, raspberries, blackberries etc. I make it with either fresh cherries or with bottled/tinned cherries. I try to bottle some every year, picked from the cherry trees in the garden and put them in Kirsch or Cognac! Serve with creme fraiche or cream & garnish with a cherry on top with some of the reserved liqueur.

24 -36 drained cherries, in juice or
kirsch
8 ounces fresh cherries, wiped
3 ounces caster sugar
3 tablespoons creme fraiche
2 ounces unsalted butter, melted
1/4 pint milk
2 medium eggs, beaten
3 ounces self-raising flour
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
extra unsalted butter, for greasing
icing sugar, to dust

  • Preheat the oven to 200°C/400°F.
  • Grease a baking tin or tian with a little butter; size about 6" x 9" or 12" long for an oval dish.
  • In a food processor, blend together all the clafoutis batter ingredients, except the cherries.
  • Pour the clafoutis batter into the greased tin or tian.
  • Scatter the cherries into the top of the clafoutis batter.
  • Bake in the oven for about 30 to 45 minutes or until risen and firm to the touch and golden brown.
  • Serve warm with creme fraiche or cream.

I couldn't find my recipe card for clafouti so I decided to look on rzaar, and was surprised with my results. Most of the recipes posted use very little milk and a lot of flour. My grandma is parisian, and this is her recipe for clafouti, it uses a fair amount of milk and little flour. We usually eat it for breakfast because it's pretty healthy (we use low fat milk). You can either use fresh or canned sliced fruit, bing cherries, reconstituted dried fruit, sliced apples, as long as it's not too acidic (pineapple and oranges would not work) I almost always use canned peaches. Sometimes if we really want this to make a hearty breakfast we add a couple more eggs. This isn't very sweet, so add more sugar if you prefer.

1 (20 ounce) can fruit, drained (peaches, pears, or fresh cherries or apples, make sure that the bottom of the pan is pretty covered )
4 -5 large eggs
4 tablespoons flour
4 tablespoons sugar
2 cups milk
2 teaspoons vanilla extract
my grandma adds 1 tbs rum or cognac after the batter is poured over the fruit

Steps:

  • note: I'm not sure if a twenty ounce can is the right size, I usually use the "larger" size can of fruit but I can't remember how big it is.
  • Grease and flour circular deep dish glass pie plate (large).
  • Beat together eggs, sugar and flour.
  • Add the vanilla and milk gradually
  • Arrange the fruit in the bottom of the pan.
  • Pour the batter mixture over the fruit.
  • *optional, strew dots of unsalted butter over the clafouti halfway though baking.
  • Bake at 400 degrees F, for 30 to 40 minutes.

Here is a simple and delicious way to still eat French desserts while on a gluten-free diet. Note that the recipe can also be made lactose-free by substituting the milk for rice milk. Clafoutis are wonderful with any kind of pitted fruits: apricots, cheeries, plums, etc.

75 g chestnut flour
75 g sugar
250 ml skim milk
3 eggs
1 tablespoon vanilla sugar or 1 tablespoon demerara sugar
500 g apricots

Steps:

  • Mix the following ingredients in the exact order: milk, sugar, flour and then finally the 3 eggs. Stir vigourously for 15 to 20 seconds until well combined.
  • Lightly spray an oven-proof dish with cooking spray. Place your apricots in the dish, cut in half stones removed facing up. Sprinkle the fruits with the vanilla sugar.
  • Place fruits in a hot oven (Th 6, 180C). After the first 15 minutes, add the custard mix to the fruits and put back in the over for a further 30 minutes.
  • Can be served warm a la mode or at room temperature.

3/4 cup flour
1 pinch salt
1 lb sweet cherries, pitted

Steps:

  • Butter a 10" deep-dish pie pan and set aside.
  • Beat eggs and sugar until frothy, about 2 minutes.
  • Add milk and vanilla and beat until smooth.
  • Stir in flour and salt.
  • Place cherries in bottom of pie pan and pour batter over cherries.
  • Place pie pan on baking sheet and bake at 375 for 10 minutes.
  • Reduce oven temperature to 350 and bake until top has puffed (it will sink on cooling) and toothpick inserted in center comes out clean, about 35 minutes.
  • Cool for about 20 minutes before serving.
