Steps:
- Heat the oil in a large saucepan over medium heat.
- Add in the onion, carrot, and garlic; cover and cook 5 minutes or until softened.
- Transfer the cooked vegetables into a 6-quart slow cooker.
- Add in the cabbage, potato, beans, stock, and thyme; season to taste with salt and pepper.
- Cover and cook on LOW for 8 hours.
- Just before serving, stir in the liquid smoke (if using), and parsley; taste to adjust seasonings.

- Cook and stir bacon in a large pot until browned, about 5 minutes. Add onion and garlic; cook until soft, about 5 minutes.
- Pick meat off the duck bones and chop. Discard skin and bones. Add duck meat to the pot. Stir in chicken stock, navy beans, cabbage, turnips, celery, thyme, rosemary, and sage. Tie parsley and bay leaf together; add to the pot. Simmer until turnips are tender, about 1 hour.
- Stir potatoes and carrots into the pot; cook until soft, about 20 minutes. Discard parsley sprigs and bay leaf. Season soup with salt and pepper.

FRENCH CABBAGE SOUP FROM DOOR COUNTY, WI
This recipe is a popular soup served at the Summer Kitchen near Ephraim, WI. It is thick and delicious. I've modified it somewhat by adding the thyme and pepper for even more flavor. It freezes very well. For Culinary Quest participants - it's typical of the hearty soups served throughout central Europe.

Steps:
- Make a white roux with 6 tbsp butter and 1/2 cup flour by melting the butter in a medium skillet, stirring in the flour and simmering 3- 5 minutes while stirring constantly.
- Avoid browning.
- Set aside.
- Melt 2 tbsp butter in a stock pot, or Dutch oven.
- Add diced onions and carrots.
- Saute until tender.
- Add chicken broth, diced smoked sausage, diced potatoes and chopped cabbage to the pot.
- Stir and simmer for 20 minutes.
- Add white roux, thyme, salt and pepper to the pot.
- Stir until smooth.
- Simmer for 20 minutes.
FRENCH CABBAGE SOUP
My cousin gave me a cookbook with some French recipes in it for Christmas one year. This recipe was in it and has been a hit with my family ever since. We even sold it to the pool hall for their daily soup special and it was a hit with the general public too. I like a piece of warm french bread served with it.

Steps:
- Chop up all vegetables.
- Place butter in soup pot over medium heat.
- Once melted, add the cabbage, leeks, carrot, turnip, onion, celery and garlic.
- Stir occasionally until the vegetables are tender, but not browned.
- Peel potatoes and cut into large pieces.
- Add potatoes and drained beans to pot.
- Add the water and broth.
- Season to taste with salt & pepper.
- Simmer for 1 hour.
- Cut smoked sausage into small pieces and fry until browned.
- To serve, place a few pieces of sausage in the bottom of your soup bowl and ladle the soup over them.

- Add barley and simmer for another 15 to 20 minutes.
- Remove beef bone and cut off cooked meat.

- Melt butter in a large dutch oven and saute onions, garlic and cabbage for 15 minutes.
- Stir in flour and salt; add broth, water and Worcestershire.
- Cook to a boil; reduce heat and simmer for about 20 minutes.
- Spoon broth mixture into soup crocks, filling crocks about 3/4 full; top with the french bread and swiss cheese.
- Place crocks under a broiler on Low and melt cheese until it bubbles and becomes browned.

- 1. in a lrg pot, place your cabbage, potatoes, turnips. cover them with water to a 1/2 inch above the vegtables. add your butter, salt and peper and garlic.
- 2. cook to boiling then turn down to a simmer. cook till vegtables are tender about 45 min to simmer. when vegtables are tender add your half and half and simmer 10 min more serve hot with crackers of choice
