FRENCH BREAD PIZZA

8 ounces mild Italian sausage, casings removed
1/2 medium red onion, halved and sliced 1/4 inch thick
1 cup jarred pizza sauce
3 cloves garlic, grated
2 sprigs thyme, leaves only
1 long loaf French bread or baguette (about 22 inches long), halved crosswise and cut horizontally
2 cups shredded mozzarella
1/2 green bell pepper, sliced into 1/4-inch-thick strips
1/2 red bell pepper, sliced into 1/4-inch-thick strips
2 tablespoons grated Parmesan
Crushed red pepper flakes and granulated garlic, for serving

Steps:

  • Preheat the oven to 375 degrees F with one rack positioned at the bottom of the oven and another at the top.
  • Cook the sausage in a medium skillet over medium-high heat, breaking up any clumps with a wooden spoon, until some of the fat has rendered and the sausage is brown, 6 to 8 minutes. Add the onions and cook, stirring occasionally, until slightly softened, about 2 minutes.
  • Meanwhile, add the pizza sauce, garlic and thyme to a small saucepan. Heat over medium heat to let the flavors infuse while the sausage and onions cook.
  • Line a rimmed baking sheet with parchment and arrange the bread on top, cut-side up. Spread the tops evenly with the pizza sauce, then sprinkle with the mozzarella. Divide the sausage mixture among the bread pieces, then top off with the green and red bell peppers and Parmesan.
  • Bake on the bottom rack of the oven until the bread is crisp and the cheese is melted, about 10 minutes. Increase the oven temperature to 450 degrees F and move the baking sheet to the top rack. Continue to bake until the cheese is bubbling and the peppers are browned in spots, about 7 minutes.
  • Serve immediately with crushed red pepper flakes and granulated garlic on the side.

One 2-foot-long French bread, cut in half lengthwise
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 cups marinara sauce
8 ounces sopressata, thinly sliced
8 ounces hard salami, thinly sliced
1 1/2 cups grated Parmesan
Two 8-ounce balls smoked mozzarella, sliced
2 cups pitted Kalamata olives, chopped
8 pickled cherry peppers, drained and sliced
4 ounces ricotta salata
1 1/2 cups grated Pecorino-Romano
2 teaspoons red chile flakes
2 cups fresh basil leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the bread halves on a sheet tray. Drizzle the olive oil on each half of the bread, then spread on the marinara sauce evenly. Layer on the sopressata and hard salami by folding and overlapping the slices. Top with the Parmesan and smoked mozzarella.
  • Bake until the cheese is bubbling and the meat is very hot, 8 to 10 minutes. (Finish under the broiler if desired.)
  • Immediately distribute the olives and peppers evenly. Grate the ricotta salata over the top, then sprinkle on the Pecorino-Romano.
  • Sprinkle the chile flakes on top, and top with the fresh basil and a drizzle of olive oil. Cut each half into 8 slices. Serve immediately.

1-ounce dried porcini mushrooms
1 pound cremini or white button mushrooms, stems removed
1/4 cup canola oil
Salt and freshly ground black pepper
Whole head roasted garlic, pulp removed
1/4 cup toasted walnuts
1/4 cup loosely packed fresh flat-leaf parsley
2 teaspoons fresh thyme leaves
3/4 cup extra-virgin olive oil
1/4 cup plus 2 tablespoons grated Pecorino Romano cheese
1 loaf French bread, about 24 inches long, sliced in 1/2 lengthwise
2 1/2 cups grated fontina cheese

Steps:

  • Place the porcini mushrooms in a bowl and cover with boiling water. Let sit until softened, 30 minutes.
  • Heat the grill to high.
  • Brush the cremini or white button mushroom caps with the canola oil and season with salt and pepper. Place the mushrooms on the grill, cap side down and grill until golden brown and slightly charred, 4 to 5 minutes. Turn the caps over and continue grilling until the mushrooms are cooked through, about 5 minutes longer. Remove from the grill, let cool slightly then coarsely chop.
  • Remove the porcinis from the soaking liquid and place in the bowl of a food processor with a few tablespoons of the soaking liquid. Add cremini mushrooms, garlic pulp, walnuts, parsley and thyme in a food processor and process until finely chopped. With the motor running, slowly add 1/2 cup of the olive oil and process until smooth. Add 1/4 cup of the Romano cheese and pulse a few times to incorporate. Season with salt and pepper.
  • Brush the bread on the cut side with the remaining 1/4 cup of olive oil and season with salt and pepper. Evenly spread the pesto over the cut side of each half of bread. Top the pesto with the fontina cheese, return to the grill, cheese side up, close the cover of the grill and cook until the cheese has melted, about 2 minutes. Remove from the grill and sprinkle with the remaining Romano.

Steps:

  • Preheat oven to 425 degrees F.
  • Split bread lengthwise and hollow it out. Cut in half across, making 4 shells for pizzas.
  • Heat a skillet over medium high flame and brown sausage in extra-virgin olive oil. Brown and crumble sausage. Add red bell pepper, onion and garlic. Cook 3 to 5 minutes, add spinach. Remove mixture from heat and season with a pinch of salt and black pepper, to your taste.
  • Transfer to a bowl. Combine sausage and veggies with ricotta, Parmesan, sopressata and pepperoni. Fill bread shells and top with mounded mozzarella and provolone cheeses. Place in hot oven on cookie sheet and bake until cheese melts and bubbles and bread is super crisp, about 10 to 12 minutes. Top pizzas with oregano and hot pepper flakes. Serve immediately, or snack all night!

One 2-foot-long wide loaf French bread, sliced in half lengthwise
1/4 cup herbed garlic butter, melted
4 cups Sunny's 5-Ingredient Chili, recipe follows
1 cup shredded mozzarella (from a block)
1 cup shredded sharp Cheddar (from a block)
16 slices fresh jalapeno (from 1 to 2 jalapenos)
2 scallions, chopped on the bias
1/4 cup chopped fresh cilantro
Hot sauce, for topping
Mexican crema, for drizzling
1 large onion, chopped
2 to 3 tablespoons chili powder
2 1/2 pounds ground chuck
Two 10-ounce cans diced tomatoes and green chiles
One 16-ounce can black, pinto or kidney beans, drained

Steps:

  • For the pizza: Preheat the oven to 400 degrees F.
  • Remove a bit of bread from the inside of each bread half, leaving about 1 inch of bread in the base. Brush the insides and edges with the garlic butter and place the bread on a baking sheet. Bake until golden on the edges, about 10 minutes. Remove from the oven.
  • Evenly distribute the Chili along the length of the bread. Sprinkle the cheese over the top and arrange the jalapenos so there will be one slice on each serving. Bake until the cheese is melted and the edges of the bread are golden, 15 to 18 minutes.
  • For the garnish: Top the pizza with the scallions, cilantro, a few shakes of hot sauce and a drizzle of crema. Slice each half into 8 pieces. Serve immediately.
  • Add 2 tablespoons olive or cooking oil, 2 1/2 teaspoons salt, a few grinds of black pepper and the onion to a large pot over medium heat and cook until tender. Add the chili powder and beef and cook, breaking up the beef into bits, until cooked through. Stir in the tomatoes and chiles and the beans, then cover and cook for 20 minutes. To thicken the chili further, simmer, uncovered, 10 minutes more.

1 tube pillsbury french bread dough (next to the pizza crust roll in the cooler section.)
8 oz 96% lean ground beef (i find this at walmart - 4 gr fat per 4 oz serving)
14 1/2 oz can of fire roasted tomatoes (drained and lightly squeezed dry)
1 small can of sliced mushrooms, drained very well
1 c frozen pepper and onion blend
1 jar(s) ragu homestyle pizza sauce
24 slice hormel turkey pepperoni
3/4 c kraft fat free cheddar cheese - shredded
3/4 c kraft 2% mozzarella cheese - shredded

Steps:

  • 1. preheat oven to 400*. while oven is heating, start frying the ground beef and peppers/onions blend together.
  • 2. while beef is browning, drain tomatoes and mushrooms, and open french bread tube.
  • 3. spray a large cookie sheet with pan spray, and CAREFULLY find the edge of the bread roll (it looks like a "seam"). unroll the bread and lay it on your baking sheet. you may have to "patch a hole or two", or stretch the dough gently to fit your pan.
  • 4. pour the pizza sauce over the dough, then start layering the ingredients, sprinkling the fire-roasted tomatoes, and mushrooms over the whole pizza evenly.
  • 5. take the two shredded cheeses and pour them into a bowl together. mix them up with your hands, then top pizza (this seems to distribute the fat/nonfat cheese more evenly, and the melt on the pizza is good).
  • 6. bake for 15 minutes and cut into 12 large pieces to enjoy! the count for this pizza per slice is: 165 calories, 3.5 grams fat, 19 grams total carbs! serve with a side salad and feel like you've splurged...

Steps:

  • Make the sauce: Heat oven to 450 degrees. Melt the butter in a medium pot over medium heat. Once melted, whisk in the flour and cook, stirring constantly, until starting to turn golden, about 1 minute. Whisk in the milk, a few splashes at a time to start, until evenly incorporated. Bring to a full boil, reduce to a simmer, and cook, whisking occasionally, until slightly thickened and the mixture coats the back of a spoon, about 5 minutes. We took a classic French bread pizza and transformed it into a hearty breakfast fit for any day of the week. Crispy bacon, scrambled eggs, lots of melty cheese and a few dashes of hot sauce make this dish both satisfying and fun!

1 loaf soft French or Italian bread (about 12 ounces), halved lengthwise
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
8 slices bacon (about 6 ounces)
8 large eggs
2 scallions, thinly sliced
1/4 cup prepared spicy mayonnaise, such as Sriracha or chipotle mayo
6 ounces mild Cheddar, shredded on the large holes of a box grater (about 1 1/2 cups)
Hot sauce, for serving

Steps:

  • Preheat the broiler. Cut each piece of bread in half crosswise, then place cut-side-up on a rimmed baking sheet. Brush with the olive oil and season with a pinch each of salt and pepper. Broil until lightly toasted and browned at the edges, about 2 minutes.
  • Meanwhile, cook the bacon in a medium nonstick skillet over medium heat until browned and crispy, turning as needed, 6 to 8 minutes. Remove to a paper towel-lined plate to drain; discard any bacon fat in the skillet.

PESTO AND MOZZARELLA FRENCH BREAD PIZZA

Basil is the classic choice for this alternative to red sauce, but blend in any tender, flavorful herbs or greens like parsley, spinach, or arugula depending on what you have around. This pesto recipe doubles easily and freezes well, too: Transfer the finished pesto to an ice cube tray and freeze until firm. Pop the frozen pesto into a resealable bag, and keep it in the freezer for up to three months. Defrost whenever a pasta or pizza craving calls, though you can certainly use store-bought pesto to make things even easier. Fresh mozzarella creates excellent cheese pulls, but feel free to play around with other soft cheeses: A crumbling of feta or goat cheese would make delicious variations.

An easy no-cook sauce works as a tangy base for pizzas of all kinds. Draining the tomatoes before seasoning ensures the sauce won't create any soggy bottoms, no matter what type of crust you build your pizza on. Use an equal amount of crushed or whole peeled tomatoes instead of diced if that's what you have on hand. Just use your hands to break whole tomatoes up a bit (and drain off any additional liquid). The sauce will keep, tightly covered in the refrigerator, for about 5 days. But feel free to use your favorite jarred marinara in its place. Leftover pizza reheats beautifully in a 350-degree oven until warmed through.

1 (14-ounce) can petite diced tomatoes, drained
1 garlic clove, grated
1/2 teaspoon kosher salt (Diamond Crystal)
1/2 teaspoon dried oregano
1 tablespoon olive oil
A few grinds of black pepper
1/4 cup olive oil
2 garlic cloves, grated
1 loaf soft French bread, split lengthwise, insides mostly dug out
4 ounces mozzarella, low-moisture and part-skim, or fresh (drained and patted dry, if necessary), grated or torn (about 1 cup)
2 tablespoons grated Parmesan, plus more for serving
2 ounces sliced pepperoni, quartered (about 1/2 cup)
Red-pepper flakes or dried oregano, or both, for serving

Steps:

  • Make the sauce: Heat the oven to 450 degrees with a rack in the middle position. Combine tomatoes, garlic, salt, oregano, olive oil and black pepper in a medium bowl, and stir to combine. Set aside until ready to use.
  • Prepare the pizza: Combine the 1/4 cup olive oil and garlic in a small pot over medium heat. Cook, swirling occasionally, until the garlic starts to sizzle, but doesn't brown, about 2 to 4 minutes. Remove from heat.
  • Place the French bread cut side up on a baking sheet. Brush cut sides with garlic oil. Bake until edges are golden, 5 to 7 minutes.
  • Toss together the mozzarella, Parmesan and pepperoni in a medium bowl. Divide tomato sauce between the two bread halves all the way to the edges and top with pepperoni and cheese.
  • Return to the oven and bake until melted, about 5 minutes. Increase heat to broil and broil (watch carefully!) until the cheese is bubbly and browned in spots, 1 to 2 minutes more. Let cool 5 minutes before slicing and serving. Serve topped with more Parmesan, red-pepper flakes and oregano, if you like.

1 loaf French bread (2 feet long)
1 tablespoon extra virgin olive oil
1 lb sweet Italian sausage
1 small red bell pepper, seeded and chopped
1 small onion, chopped
2 large garlic cloves, chopped
salt
fresh ground black pepper
1 1/2 cups part-skim ricotta cheese
1/2 cup grated parmesan cheese
1/2 lb sweet sopressata, sliced thick from the deli and chopped
3 -4 ounces pepperoni, chopped
10 ounces shredded mozzarella cheese
10 ounces shredded provolone cheese
1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes

Steps:

  • Preheat oven to 425°; defrost spinach in the microwave, 6 minutes on high; wring spinach dry in a clean kitchen towel.
  • Split bread lengthwise and hollow it out; cut in half crosswise, making 4 shells for pizzas.
  • Heat a skillet over med-high heat; add in olive oil, then the sausage; brown and crumble sausage using a wooden spoon.
  • Add in bell pepper, onions, and garlic; cook 3-5 minutes, then add in the spinach.
  • Remove pan from heat; season with salt and pepper; transfer mixture to a bowl.
  • Mix the sausage mixture with the ricotta, parmesan, sopressata, and pepperoni.
  • Fill pizzas with the mixture; top with mounded mozzarella and provolone cheese.
  • Place pizzas on a cookie sheet and bake 10-12 minutes until cheese melts and bubbles and bread is super crisp.
  • Top pizzas with oregano and hot pepper flakes; serve immediately.

1 1/2 c warm water - not hot
1 tsp salt
1 Tbsp sugar
1 Tbsp butter
3 1/2 c all purpose flour
1 pkg active dry yeast
CORN STARCH GLAZE
1/2 c cold water
1 tsp cornstarch

Steps:

  • 1. Preheat oven 375° Bake Time: approximately 20 minutes. My oven cooks hot and yours may need more or less cooking time.
  • 2. Combine the warm water, butter, salt, and sugar. Using water that is very warm will slowly melt the butter while combining. Sprinkle the yeast on top of your liquids mixture. (I own a Kitchen Aid and attach the dough hook and the batter guard.) Add your flour - I add all at once due to running my dough hook on low. Otherwise stir in the flour until it is a slightly sticky ball and knead. (With the Kitchen Aid run the dough hook adding flour until the batter no longer sticks to the bottom of the mixing bowl.)
  • 3. I usually knead the dough around 5 minutes. Well-kneaded dough should feel smooth and elastic. Press your fingertip into the dough; it should spring back. Butter a bowl, turning the dough to completely cover. Cover with a clean towel and let rise until doubled.
  • 4. Once dough is doubled remove and place on a slightly floured board. Knead in flour to feed it one more time before baking. Roll it into a a 12x15 rectangle after working additional flour into the dough.
  • 5. FRENCH BREAD: Roll up from long side and pinch the final seam together. Place seam side down on greased and cornmeal dusted baking sheet or use the Silicone Baking Mats. Cover with a clean towel or plastic wrap and let rise 45 minutes.
  • 6. SANDWICH ROLLS/BAGUETTES: Cut the rolled out dough into squares appropriate to your needs. Place on a greased baking sheet, cover with plastic wrap or a clean towel and let rise 45 minutes.
  • 7. CORNSTARCH GLAZE: NOTE: This is a typical mixture that professional bakers use to get that characteristic sheen on breads. I keep this mixture in my refrigerator to use on all the breads I bake. Save any glaze leftovers. 1/2 cup cold water 1 teaspoon cornstarch In a small saucepan, with a small whisk, stir together water and cornstarch. Heat mixture to a gentle boil. Stir, reduce heat, until mixture thickens and is translucent. Cool. Brush on loaf about 10 minutes before baking is finished and again 3 minutes before bread is completely done.
  • 8. When the bread is cooked, remove from oven and place the bread on a wire cooling rack to cool. Let baked loaf cool for 30 minutes before cutting (this is because the bread is still cooking while it is cooling). Makes 1 large loaf, 12 sandwich rolls, or 16 inch pizza crust.

1 French baguette
6 -7 green olives
1 ounce shredded mozzarella cheese
1/2 summer squash, sliced
1/2 sweet red pepper, julianned
1 carrot, julianned
1/2 onion, sliced
1 tablespoon olive oil
salt
pepper

Steps:

  • Heat up your grill. I used a George Foreman grill. If you do not have a grill, you can use a hot skillet.
  • Put your veggies in a bowl. Add olive oil, salt and pepper. Toss to coat.
  • Put veggies on hot grill until they're nice and carmelized.
  • Put your French bread in the oven until it's crispy on the outside.
  • Slice your French bread in half. Place your olives on the bread and top with Mozzarela cheese. Put under the broiler until the cheese melts.
  • Top with veggie mix.
  • Enjoy.
  • Feel free to customize by adding tomato sauce or a different mix of veggies, etc.

1 (8 ounce) container chive & onion cream cheese, softened
canola oil cooking spray
12 ounces cherry tomatoes, sliced
1 cup shredded cooked chicken
1 (8 ounce) can pineapple, tidbits drained
1 jalapeno pepper, halved, seeds removed and sliced
2 garlic cloves, finely chopped
1/4-1/2 cup red onion, thinly sliced
1/3 cup roasted red pepper, coarsely chopped (the kind in the jar)
1 cup shredded mozzarella cheese
kosher salt & fresh ground pepper
dried red pepper flakes, to taste and (optional)

Steps:

  • Heat oven to 450 degrees F.
  • Slice bread horizontally in half.
  • Spray each cut side with canola oil.
  • Place bread cut side up on cookie sheet.
  • Bake for 5-8 minutes or until lightly browned.
  • When it cools enough to handle, but still warm, spread cream cheese evenly over bread.
  • Add sliced cherry tomatoes and chicken.
  • Season with salt and pepper.
  • Sprinkle with 1/3 cup of the cheese.
  • Add the pineapple, peppers, garlic and onions.
  • Sprinkle top with remaining cheese.
  • Bake for 12-15 minutes or until cheese is melted and bread is heated through.
  • NOTE: If you don't like your vegetables crisp, you can microwave them for about 60 seconds to soften them before adding to the pizza.

2 tablespoons tomato paste

1 teaspoon ground fennel or 1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon crushed garlic
1/8-1/4 teaspoon cayenne pepper
salt and black pepper

Steps:

  • Preheat oven to 450f degrees.
  • Cut bread loaf in half widthwise, then each half again lengthwise to create 4 roughly equal pieces.
  • Place the bread, cut side up, on a dry baking sheet.
  • Place remaining ingredients in a food processor or blender, blend until they form a smooth paste.
  • Spread the mixture evenly over the bread.
  • Bake until tofu mixture is hot and bread toasted, about 10 to 15 minutes.
  • Cut each pizza into individual slices.
