1 cup Gold Medal™ all-purpose flour
1/2 cup packed brown sugar
1/4 teaspoon salt
1/2 cup butter, cut into small pieces
6 apples, peeled, thinly sliced
3 tablespoons packed brown sugar
1 teaspoon ground cinnamon
2 teaspoons lemon juice
1 box Betty Crocker™ Super Moist™ yellow cake mix
1 1/3 cups water
1/3 cup oil
3 eggs

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom and sides of 13x9-inch pan with baking spray with flour.
  • In medium bowl, stir together flour, 1/2 cup brown sugar and the salt. With pastry blender or fork, cut in butter until mixture is crumbly. Set aside.
  • In a large bowl, gently stir together Apple Mixture ingredients; set aside.
  • In large bowl, beat Cake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • Arrange apple mixture evenly over cake batter and sprinkle with Topping.
  • Bake 45 to 50 minutes. Cool completely, about 2 hours.

1 1/4 c. all-purpose flour
1 tsp. baking powder
1/4 tsp. kosher salt
2 large eggs
1/2 c. (1 stick) butter, melted and cooled
3/4 c. plus 1 tbsp. granulated sugar, divided
3 tbsp. dark rum
1 tsp. pure vanilla extract
3 medium sweet-tart apples (such as Granny Smith or Honeycrisp), peeled, cored, and chopped

Steps:

  • Preheat oven to 350° with a rack in the middle position; lightly coat an 8" round cake pan with cooking spray. In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, whisk eggs until foamy. Add melted butter, 3/4 cup sugar, rum, and vanilla and whisk to combine. Add dry ingredients and stir with a wooden spoon or rubber spatula until evenly incorporated. Fold in apples. Transfer batter to prepared pan. Sprinkle top with remaining 1 tablespoon sugar.
  • Bake until golden and a toothpick inserted in the middle comes out clean, about 55 minutes. Let cool 15 minutes before inverting onto a cooling rack to cool completely.

1 cup all-purpose flour, spooned into measuring cup and leveled-off
1 teaspoon baking powder
¼ teaspoon salt
1 stick (½ cup) unsalted butter, at room temperature
⅔ cup granulated sugar, plus more for sprinkling over cake
2 large eggs
1 teaspoon vanilla extract
3 tablespoons dark rum
2 baking apples, peeled, cored and cut into ½-inch cubes (I like Honeycrisp, Fuji or Granny Smith) (3½ - 4 cups chopped)
Confectioners' sugar (optional), for decorating cake

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Grease a 9-inch springform or regular cake pan with butter or nonstick cooking spray. If using a regular cake pan, line the bottom of the pan with parchment paper and grease again.
  • In a small bowl, whisk together the flour, baking powder and salt.
  • Using a handheld mixer with beaters or a stand mixer with the paddle attachment, cream the butter and granulated sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well and scraping down the sides of the bowl after each addition. Beat in the vanilla and rum. Don't worry if the batter looks grainy at this point; that's okay. Add the flour mixture and mix on low speed until just combined. Using a rubber spatula, fold in the chopped apples.
  • Scrape the batter into the prepared pan and even the top. Sprinkle evenly with 1 tablespoon of granulated sugar. Bake for about 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean. Allow the cake to cool on a rack in the pan. Once cool, run a blunt knife around the edges of the cake. If using a springform pan, remove the sides. If using a regular cake pan, carefully invert the cake onto the rack, remove the parchment paper, then gently flip the cake over and place right-side-up on a platter. Using a fine sieve, dust with confectioners' sugar (if using). Cake can be served warm or room temperature, plain or with lightly sweetened whipped cream or vanilla ice cream.
  • Freezer Friendly Instructions: The cake can be frozen for up to 3 months. After it is completely cooled, wrap it tightly with aluminum foil or freezer wrap. Thaw overnight on the countertop before serving.

1 ¼ teaspoons ground cinnamon
¼ teaspoon ground nutmeg
1 cup white sugar
¾ cup milk
½ cup biscuit mix (e.g. Bisquick)
2 eggs
2 tablespoons butter
1 cup biscuit mix (e.g. Bisquick)
½ cup chopped walnuts
⅓ cup light brown sugar
3 tablespoons butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 10 inch pie pan.
  • In a large bowl, mix apples, cinnamon and nutmeg together; turn mixture into pan. In a separate bowl, beat sugar, milk, 1/2 cup biscuit mix, eggs and butter until smooth. Pour over apples.
  • To Make Streusel: In a small bowl, stir together 1 cup biscuit mix, nuts, brown sugar and butter; mix until crumbly. Sprinkle streusel over top of pie.

In any case, it's a simple, excellent cake with a tender crumb, subtle spicing and soft pockets of fruit. Serve it plain, or with a dollop of ice cream, whipped cream or crème fraîche.

1/4 teaspoon baking soda
1/4 teaspoon kosher salt
2 ounces/57 grams unsalted butter (1/2 stick), softened
1 cup/200 grams granulated sugar

1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1 large egg
2 cups diced apples (from about 2 apples)

3/4 cup butter
4 eggs
1 tablespoon sugar, with
1 -2 drop vanilla
1/8 teaspoon salt
1/8 teaspoon baking powder
1 1/2 cups flour
3/4 cup sugar
3/4 cup brown sugar
1 lb apple (Golde delicious or Granny Smith)
powdered sugar (For dusting decoration)
2 tablespoons apple juice (optional)

Steps:

  • Melt the butter, let it cool down a bit while you peel your apples. Peel and Slice the apples thinly.
  • Put your sugar, eggs, vanilla sugar, butter, salt and apple juice in a bowl and mix with a handheld electric mixer until foamy.
  • Pour the flour, baking powder, and salt into the batter and mix until smooth.
  • Add about 3/4 of your apples to the batter and stir until mixed. Pour the batter into a greased and floured round cake pan and smooth the top. Add the rest of the apples by arranging them on top of the batter. Bake at 375 degrees for about 50-60 minutes, checking it at about 35. If the top is getting too dark, cover with foil and contiue cooking.
  • Allow the cake to cool for about 1 hour and dust with powdered sugar and serve.
