Tender and fluffy egg casserole filled with fresh peppers, onions, mushrooms, zucchini, cheese, cream, and of course, eggs. Customize with sausage and other seasonal vegetables to feed a crowd or make ahead to freeze for busy nights.

6 oz. frozen spinach (thawed, or 1 pound fresh spinach)
8 oz. ground sausage (optional)
7 large eggs
8 oz. Monterey jack cheese (shredded)
1/4 cup shallot (chopped )
1/4 cup red pepper (chopped )
1/4 cup green pepper (chopped )
1/4 cup mushrooms (chopped )
1/2 cup chopped zucchini
1/2 cup cherry tomatoes (chopped )
1/2 cup heavy whipping cream
3/4 teaspoon dried dill
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Preheat oven to 350˚ F.
  • Drain all excess water from the spinach.
  • In a large saucepan, saute your vegetables and meat in 1-2 T. of butter. Cook on medium high heat until the vegetables are tender and the meat is browned.
  • While the vegetables cool down, get out a large bowl and add your eggs, cheese, spinach, cream, dried dill, salt and pepper. Mix it all together.
  • Add your saucepan ingredients and stir it all together.
  • Pour the casserole batter into a greased or non-stick mini loaf pan or muffin tin, filling them ¾ full.
  • Bake the loaves at 350˚ F for 18-20 minutes or until you see the sides of them pull away from the pan.

Another husband-approved recipe. Made a couple times recently because of how easy it is to make! This recipe is easy to double or triple, but you may have to cook a bit longer if doing so.

1 cup shredded Cheddar cheese
6 eggs, whisked
6 slices bacon, diced
2 slices bread, cubed
⅓ red bell pepper, diced
2 green onions, chopped
3 tablespoons milk
½ teaspoon minced garlic, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Stir Cheddar cheese, eggs, bacon, bread, red bell pepper, green onion, milk, garlic, salt, and black pepper together in a bowl until well-combined; pour into prepared baking dish.

I got this recipe from a bed and breakfast. It is very rich, moist and custardy and is very versatile. I added fresh basil but any herb could be used. Chopped ham would also be good in this casserole.

7 eggs
1 cup milk
2 teaspoons sugar
8 ounces monterey jack cheese, grated
8 ounces cheddar cheese, grated
3 ounces cream cheese, room temperature, cubed
16 ounces cottage cheese, small curd
6 tablespoons butter, room temperature
1/2 cup flour
1 teaspoon baking powder
1 tablespoon fresh basil, chopped

Steps:

  • Beat together the eggs, milk and sugar. Add the cheeses, butter and basil.
  • Mix well then add the flour and baking powder.
  • Pour into greased 9x13 baking dish.
  • Bake in a 325 degree oven for approximately 50 minutes or until knife inserted in the center comes out clean.

1 pound pork sausage
1 (5.5 ounce) package seasoned croutons
1 ½ cups shredded Cheddar cheese
1 cup shredded Swiss cheese
1 cup shredded pepperjack cheese
8 eggs
1 pint half-and-half cream
1 ½ cups milk
1 ½ teaspoons dry mustard
1 tablespoon minced onion
salt and pepper to taste

Steps:

  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • In a lightly greased 9x13 inch baking dish, arrange the croutons in a single layer. Layer with Cheddar cheese, Swiss cheese, and pepperjack cheese. Top with the cooked sausage.
  • In a large bowl, beat together the eggs, half-and-half, milk, mustard, onion, salt, and pepper. Pour into the dish over the sausage. Cover, and refrigerate overnight.
  • The next morning, bake in an oven preheated to 350 degrees F (175 degrees C) for 45 to 60 minutes. Let sit for 20 minutes before serving.
