heavy-duty aluminum foil
1 pound lean ground beef
½ cup plain bread crumbs
¼ cup milk
2 tablespoons taco seasoning mix
2 baking potatoes, peeled and diced
1 cup salsa
½ cup shredded Cheddar cheese, or to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate. Cut four 12x18-inch sheets of aluminum foil.
  • Mix ground beef, bread crumbs, milk, and taco seasoning mix together in a medium bowl until well blended. Shape into four 4-inch patties. Mix potatoes and salsa in another medium bowl.
  • Place 1 patty onto each piece of foil and top with 1/4 of the potato mixture and 1/4 of the Cheddar cheese. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
  • Place packets, seam-side up, on the preheated grill. Cover the grill and cook, rearranging the packets several times, until patties are cooked through and potatoes are tender, about 25 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

1 pound fully cooked kielbasa, cut into 1-inch pieces
2 small sweet potatoes, peeled and cut into 1/2-inch chunks
1 large sweet onion, cut into 1-inch chunks
4 stalks celery, cut into 1 1/2-inch pieces, plus celery leaves for topping
2/3 cup dried apricots
6 sprigs thyme
3 tablespoons extra-virgin olive oil
1 1/4 cups fresh orange juice (from about 2 oranges)
Kosher salt and freshly ground pepper
1/4 cup sherry vinegar

Steps:

  • Preheat a grill to medium. Toss the kielbasa, sweet potatoes, onion, celery, apricots and 4 thyme sprigs in a large bowl with 2 tablespoons olive oil. Drizzle with 1/4 cup orange juice and season with 1/2 teaspoon salt and a few grinds of pepper.
  • Tear off four 24-inch sheets of foil and fold each in half. Pile the kielbasa mixture on one side of each foil sheet. Fold the foil over and crimp the edges to seal well. Grill the packets, rotating them occasionally so they don't burn, until the vegetables are tender, 18 to 22 minutes.
  • Meanwhile, combine the vinegar with the remaining 1 cup orange juice, 1 tablespoon olive oil and 2 thyme sprigs in a medium skillet; season with 1/4 teaspoon salt. Bring to a boil and cook until syrupy and reduced to about 3 tablespoons, 5 to 7 minutes. Discard the thyme. Open the foil packets, drizzle with the sauce and sprinkle with celery leaves.

4 pounds baking potatoes
2 pounds carrots
1 onion
seasoning salt to taste
½ cup butter
1 ¼ cups sour cream

Steps:

  • Peel and cut up the potatoes and carrots into bite-size chunks. Chop up onion.
  • Combine all veggies in tin foil or foil baking bag. Season with desired amount of seasoning salt and top with butter. Seal foil well (you may need more than one bag, so the vegetables are done evenly).
  • Grill until potatoes and carrots are soft, about 40 minutes (flip bags at least 3-4 times during grilling). Remove from grill and place the veggies in a large bowl and add the sour cream, mixing well.

2 salmon fillets, about 170 g each
1 large orange, halved
1 lemon, halved

Steps:

  • Preheat oven to 400F/200°C To a 12-inch long sheet of foil (I use Reynold's Heavy Duty Non-Stick), add half the potato slices in a pile in the center of foil. Slightly fan out the potatoes so air can circulate. Make sure potatoes are sliced very thin so they cook through in the same amount of time it takes the salmon to cook.
  • Evenly drizzle the potatoes with about 1 tablespoon of olive oil, season with salt and pepper, and repeat process with another sheet of foil and the remaining potato slices.
  • Top each pile of potatoes with 1 salmon filet.
  • Evenly drizzle each salmon filet with about 1 tablespoon olive oil.
  • Squeeze half the juice of the orange over one salmon filet and half the juice over the other filet.
  • Squeeze half the juice of the lemon over one salmon filet and half the juice over the other filet.

2 cups broccoli florets
1/4 cup ranch dressing
1 Tbsp olive oil
2 Tbsp Worcestershire sauce

1/2 tsp black pepper
1/2 tsp sugar
1 1/2 tsp lemon juice
1/2 cup grated parmesan cheese

This is such a hit with everyone in our family. You can do it in the oven or on a grill. Either way, the potatoes come out perfectly done with such a great flavor!

2 large russet potatoes
2 clove garlic, minced
4 Tbsp butter
1/3 c heavy cream
salt pinch (to taste)
pepper pinch (to taste)
1/2 medium onion, diced (optional)

Steps:

  • 1. Preheat oven to 375 degrees (F)(or your grill) Give your potatoes a good scrub with a paper towel or rinse them off a bit and dry. Dice potatoes into cubes. Leaving the skin on. You're gonna need 4 sheets of aluminum foil squares to make the packets. On each of the four squares, place 1 tbsp. of butter (or more if you like). Divide up the cubed potatoes and place on top of the butter on each aluminum foil square. Evenly sprinkle minced garlic over each of the four servings (also, add onion if you're using). Then sprinkle with kosher salt & pepper. Pour a bit of the heavy cream onto each of the potato packets. Evenly distribute the cream as best you can. Feel free to add a bit more cream as necessary. You may need to fold up the sides just a bit to keep the cream from drizzling off the edges. Fold up each of the sides to make a nice little bed for the potatoes, making a square. Long sides come in first then short sides. So none of the butter and cream can escape while cooking. Place potato packets on a baking sheet and cook for about 45 minutes (until fork tender). *If cooking on a grill, cook for about 35-45 minutes but check them at the 30 minute mark in case your grill runs hot. Be careful when opening the packets because the steam is gonna come outta there fast and furious. Now dig in!

1/4 cup unsalted butter, (melted)
4 slices cooked bacon, (thick cut, crumbled)
1 cup freshly shredded cheddar cheese
1/2 cup plain greek yogurt (or sour cream)
freshly chopped chives
Reynolds Wrap® Non-Stick Foil

Steps:

  • Preheat oven to 400 degrees F. Lay out 4 sheets of Reynolds Wrap® Non-Stick Foil, dull side up.
  • To a large mixing bowl, combine the diced potaotes, melted butter, and seasonings. Toss to thoroughly combine.
  • Divide the potatoes amoung the foil packets. To seal: Bring together the lengthwise edges and fold down twice. Fold in the ends two times as well.
  • Place each packet onto a sheet pan, seam side up.
  • Bake for 30-35 minutes or until the potatoes are fork tender. Time will be dependent on how large the pieces are.
  • Switch the oven from bake to low broil. Carefully open each foil packet to garnish with bacon and cheese.
  • Place the sheet pan back into the oven to broil for 3-4 minutes or until the cheese has melted.
  • Remove and top with plain greek yogurt and chives.

POTATO AND CORN FOIL PACKETS

2 yukon gold potatoes, small dice
1/4 cup medium yellow onion, thinly sliced
Approx. 1 1/2 cups fresh corn kernels (2 ears of corn)
2 garlic cloves, minced
3 Tablespoons butter
1 1/2 Tablespoons parsley, finely chopped
Salt and Pepper, to taste

Steps:

  • Cut a piece of aluminum foil approximately 18 inches long (use either heavy duty foil or two pieces). In the center, toss together potatoes, onion, corn, and garlic. Top with butter slices, salt, and pepper. Close packet by pulling up the long edges, folding them together, and then folding in the short sides to seal the edges of the foil packet.
  • Using a grill or an oven set to 375°F, cook for approximately 30 minutes, until potatoes are tender. Toss to combine, mix in parsley, and serve!
