135g pack jelly (raspberry or strawberry work well), broken into pieces
350ml evaporated milk or double cream
squirty cream or freshly whipped cream, to serve (optional)

Steps:

  • Mix the jelly with 250ml boiling water until it has dissolved. Pour into a bowl and leave to cool.
  • Stir through the evaporated milk and pour into an approximately 20cm trifle bowl. Cover and put in the fridge to set overnight. To serve, top with cream, if you like.

This is a delicious fruity mousse with a great plum tang, making good use of pre-stewed plums, especially handy at that time of year when you have too many plums and quite enough jam, thank you very much! The preparation time is mostly waiting time for the mixture to chill sufficiently.

2 cups plums, pitted and sliced
1 tablespoon water
1 (.25 ounce) package unflavored gelatin
½ cup hot water
½ cup white sugar
2 tablespoons lemon juice
½ cup evaporated milk

Steps:

  • Place the plums into a saucepan over medium-low heat, cover, and simmer, stirring occasionally, until the plums are soft, 5 to 10 minutes. If the mixture becomes too thick or starts to burn, add a tablespoon of water. Remove from heat, and allow to cool.
  • Dissolve the gelatin in 1/2 cup of hot water in a bowl, and stir in the cooled plums, sugar, and lemon juice. Mix until the gelatin and sugar have dissolved. Chill the plum mixture in refrigerator until it begins to thicken, about 30 minutes. Whip the evaporated milk in a mixing bowl with an electric mixer until thick, then gently spoon the whipped milk into the plum mixture. Beat again with electric mixer until the dessert is fluffy and well combined. Chill for at least 3 hours before serving.

Flummery occurs in manuscript menus for Scottish feasts as early as the fifteenth century. The ingredients varied but the basis was always soaked cereal, the liquid from which sets to a clear jelly. This is flavoured with orange juice or rosewater and topped with cream and honey, with or without alcohol.

30 ounces cold water
4 tablespoons old-fashioned oatmeal, soaked for 48 hours in the water
6 ounces orange juice
2 tablespoons caster sugar or 2 tablespoons superfine sugar
5 ounces double cream (heavy whipping cream)
2 oranges, zest only
4 tablespoons honey
2 tablespoons good Scotch whisky or 2 tablespoons brandy
5 fluid ounces whipped cream

Steps:

  • Stir the soaked oatmeal and then strain off the liquid into a saucepan.
  • Discard the oatmeal.
  • Add the orange juice and sugar to the liquid, bring to the boil and boil, stirring continuously, for about 10 minutes, or until the mixture is very thick.
  • Allow to cool until tepid and then stir in the double cream.
  • Pour the mixture into one large flat dish or individual dishes and put into the refrigerator to set.
  • Allow approximately 1 hour.
  • When ready to serve, sprinkle with grated orange rind, pour over the honey, then the whisky or brandy and top with whipped cream.

This is a recipe shared with me by my Mom, shared with her by her Mom. Grandmom was the wife of a career Navy man. An incredible woman! The mother of 6 children, lovingly raising the future of the world, loving my Grandfather and supporting our freedom. She would move their children and worldly possessions to be as close to my Grandfather as they could be, whenever and wherever the Navy needed Grandpop. Eventually they settled in NJ, known far and wide for its awesome produce, especially its blueberries. It just reminds me Of Mom and Grandmom's love and devotion to their families. Scoop a biscuit into a bowl and spoon blueberry sauce over biscuit, top with the chilled vanilla pudding, and oh my! Enjoy! Heaven on earth!

1 (3.5 ounce) package instant vanilla pudding mix
2 cups cold milk
2 pints fresh blueberries
½ cup white sugar, or more to taste
2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon white sugar
½ teaspoon salt
¼ cup vegetable oil
1 cup milk

Steps:

  • Whisk the pudding and 2 cups milk together in a bowl until thickened, about 2 minutes. Refrigerate the pudding until serving time.
  • Mix blueberries and 1/2 cup sugar in a large saucepan, and pour in enough water to just barely cover the berries. Bring the mixture to a boil over medium heat, reduce heat to low, and simmer while you make the biscuits.
  • To make drop biscuits, mix flour, baking powder, 1 tablespoon of sugar, and salt together in a bowl. Make a well in the center of the flour mixture, and pour in vegetable oil and 1 cup of milk. Stir until the mixture forms a soft dough.
  • Bring the berry mixture back to a boil, and drop the biscuit dough into the boiling blueberries by heaping spoonfuls. Cover, and simmer over medium-low heat until the biscuit dough is cooked through, about 15 minutes. A knife inserted into a dumpling will come out clean. To serve, scoop a biscuit into a serving bowl, spoon blueberry sauce over, and top with chilled vanilla pudding.

I got this out of an old fashioned cookbook from my Great Grandmother, and the description says; "Flummery, Fool, Grunt, Slump, and Buckle were variations of old English puddings made with fruit. They were also common in early America" I will post 3 of the five variations.

3 cups milk
1/4 cup cornstarch
5 tablespoons sugar
1/4 teaspoon salt
1 egg yolk, beaten
2 teaspoons vanilla extract
1 quart fresh strawberries, sliced

Steps:

  • Blend cornstarch with a little of the milk, stir into a sauce pan containing the rest of the milk, the sugar, and the salt.
  • Bring to a boil and continue cooking over medium heat until mixture becomes thick. (Stir constantly).
  • Stir a cup of the hot milk mixture into the beaten egg yolk.Then stir this back into the saucepan.
  • Continue cooking 2-3 minutes more.
  • Remove pan from heat and add vanilla.
  • Pour into serving bowl.
  • Cover tightly and refrigerate several hours.
  • Arrange sliced berries evenly over top of pudding just before serving.

Flummery (from the Welsh llymru) is a sweet soft pudding that is made from stewed fruit and thickened with cornstarch. Traditional British flummeries were kind of like porridge as they were often oatmeal based and cooked to achieve a smooth and gelatinous texture; often sugar and milk was added and occasionally orange flower water. This recipe was brought over from the British Isles by our first settlers. From the New England chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. I have copied the directions straight from the cookbook, but I believe that I might mix the cornstarch with a little water to avoid lumps.

2/3 cup mccann's irish oatmeal, quick-cooking (not instant)
4 cups strawberries, hulled
5 tablespoons sugar
1 1/4 cups heavy cream (whipping)
2/3 cup plain yogurt or 2/3 cup sour cream
1 tablespoon Irish whiskey
1/2 cup fresh blueberries

Steps:

  • Chill four 8- or 9-ounce stemmed glasses.
  • To toast the oatmeal: Preheat the oven to 350°F Spread it out on a baking sheet. Bake, shaking the pan at 5-minute intervals to prevent burning, for 15 minutes, or until toasted. Remove from the oven and let cool.
  • Put the hulled strawberries in a large bowl and mash, or pulse a few times in a food processor. Stir in 1 tablespoon of the sugar.
  • Whip the cream with an electric mixer until soft peaks form. Fold in the yogurt or sour cream, the remaining 4 tablespoons of sugar, the whiskey, and oatmeal.
  • Spoon 1 to 2 tablespoons of the strawberries into the bottom of each glass. Spoon 1 to 2 tablespoons of the oatmeal-cream mixture over the berries. Repeat the layers.
  • Refrigerate for 1 to 2 hours, or until set. At serving time, divide the blueberries on top of each.

Passionfruit Flummery image

The word flummery derives from the Welsh word 'llymru'. In Scotland, a flummery would include oatmeal; elsewhere in the British Isles, it was a sweet dessert made with fruit. This recipe is one I have adapted from the Australian publication by Reader's Digest of a book jam-packed with traditional Australian recipes: 'Family Recipe Scrapbook: tried and trusted recipes for today's cooks'. I bought the book in preparation for the 2005 Zaar World Tour, so I could track down familiar recipes I've eaten often or heard of but not previously eaten. What I love about the recipes in this book is that from whatever decade or centurey past they come, they have been updated to suit C21st tastes. This recipe harks back to "the days (in Australia) when many people had a passionfruit vine growing over the fence and kept a few chooks in the backyard, (when) this luscious flummery would have been an economical pudding". This is a prepare-ahead dessert, and the preparation and cooking times do not include the 6-8 hours needed for cooling. The probably Scottish origins of this particular flummery recipe are evident from the suggestion that it be served with shortbread biscuits.

1 lemon
1 cup cold water
1/2 cup caster sugar
3 teaspoons gelatin
2 tablespoons boiling water
2 eggs, separated
1/2 cup passion fruit pulp (about 4-6 passionfruit)
shortbread cookie, to serve (optional)

Steps:

  • Peel the rind from the lemon and then squeeze out the juice. Reserve 2 tablespoons of lemon juice. Combine the lemon rind, water and caster sugar in a medium saucepan and cook, stirring occasionally, over a medium heat, until the sugar dissolves and the syrup comes to the boil. Remove from the heat and discard the lemon rind from the syrup.
  • Combine the gelatine and boiling water in a heatproof jug and stir until the gelatine dissolves and the liquid is clear. Add the lemon juice and mix well to combine.
  • Put the egg yolks in a mixing bowl and whisk with a balloon whisk. Pour in the warm syrup in a thin stream followed by the gelatine mixture, whisking constantly until well-combined.
  • Cover and refrigerate until the mixture thickens and begins to set around the edges.
  • Beat the egg whites in a clean bowl until they form soft peaks when the beater is lifted upwards from the mixing bowl. Fold the egg white mixture and the passionfruit pulp into the lemon mixture.
  • Spoon into four 1-cup serving glasses, cover with plastic wrap and place in the refrigerator for 6 hours, or until set.

BASIC FLUMMERY



Basic Flummery image

This recipe is a standard flummery, it's a great starting off point. The jelly can be any flavour you like and you can add different fruit such as passionfruit pulp or chopped up strawberries, it all depends what you like. Also, I prefer low-cal ingredients so I've used equal sugar, lite jelly and skim milk but it works with the regular granualated sugar and whole milk too. This came from my grandmother and I made it because my dad was dieing to have it again.

2 ounces irish oatmeal
1 cup heavy cream
4 tablespoons honey
1/4 cup Irish whiskey
2 teaspoons lemon juice
1 -2 cup berries (optional)

Steps:

  • Toast the almonds and oatmeal in a pan until slightly browned. Set aside.
  • Whip the cream until smooth, but not stiff.
  • Warm the honey VERY slightly, so that it will run easily.
  • Fold the honey, whiskey, half of the toasted almonds & oatmeal, half the berries if using them & the lemon juice into the cream.
  • Mix thoroughly but lightly, and spoon into tall individual glasses. (looks lovely in wine or champaign glasses).
  • Sprinkle the remaining almonds/oatmeal and berries on top.
  • Chill and Serve.

APPLE & RHUBARB FLUMMERY WITH STRAWBERRY SYRUP

Popular early 20th century British desert, modernised to commemorate the 70th anniversary of the D-Day landings. Creamy, fruity, jelly like desert which is impossible to find the recipe for online!! Semolina gives it a wonderful texture

Steps:

  • Start with the flummery. Heat apple and rhubarb with 50g of the caster sugar over a medium heat until softened. About 8-10 minutes. Blend to a fine purée.
  • In a seperate saucepan, heat milk with lemon zest slowly until boiling. Simmer for 3 minuted to infuse. Strain mixture through a sieve to remove zest and return milk to the pan.
  • Add in the semolina and the fruit purée and cook until thickened. About 10 minutes.
  • Once thickened, remove from the heat. Take the gelatine sheets out of their water and squeeze out any excess water. Add gelatine to the semolina mixture. Whisk well to incorporate fully and dissolve gelatine.
  • In a bowl, whisk egg yolkd and 100g caster sugar until creamy. Stir into the semolina.
  • Fill a large, deep baking dish with cold water and lots of ice. Stand the pan into the cold water and chill for about 10 minutes.
  • In a large mixing bowl, whip the double cream, being careful not to over whip.
  • Once the semolina mixture has cooled slightly, fold in the whipped cream, carefully until fully combined. Do this slowly ensuring the air in the whipped cream cream isn't lost.
  • Pour the flummery into dariole moulds, filling right to the top and set in the fridge for 3-5 hours.
  • In the meantime, make the syrup. In a saucepan, bring together the water and caster sugar to boil.
  • Add the strawberries and shredded mint then cook for 5 minutes over a medium heat, until softened. Remove from heat and blend the syrup to a purée.
  • Return the syrup to the pan and cook for a further 8-10 minutes until thickened slightly. Remove from heat, set aside & fully cool.
  • Once the flumerries have fully set, use a thin bladed knife to scrape around the insides of the moulds. Dip the moulds into luke warm water for 10 seconds and then turn upside down onto serving plate. (You may need to shake the mould, like you would a bottle of ketchup, whilst holding the bottom to free it from the mould) Pour over some strawberry syrup. Garnish with a sprig of fresh mint and a sprinkling of icing sugar

1 cup half and half
3 eggs yolk
1 teaspoon vanilla extract
1 quart strawberries reserve a few nice berries for garnish
3 to 4 tablespoons sugar

Steps:

  • In a medium saucepan, mix sugar, cornstarch and salt until no lumps remain.Stir in milk and half-and-half until smooth. Stirring constantly over medium heat, bring to a boil and boil for 1 minute or until thickened. Remove from heat.In a small bowl, beat egg yolks until smooth. Gradually stir about one-third of the hot mixture into the egg yolks, then stir back into hot mixture in saucepan. Over low heat, cook and stir for 3 to 4 minutes or until thick and glossy (do not boil). Remove from heat.Stir in vanilla. Pour flummery into a shallow bowl. Place a piece of waxed paper or plastic wrap directly on surface to prevent a skin from forming. Refrigerate for 2 1/2 hours or until chilled.Rinse, hull and slice berries into a medium bowl. Sprinkle with sugar and toss to coat berries and dissolve sugar. Beat flummery with a wire whisk until smooth and glossy. Pour into a shallow decorative bowl. Garnish with the whole berries in a decorative fashion. Serve immediately. Pass sliced berries separately.MW To Microwave: In a 2-quart glass bowl, mix sugar, cornstarch and salt until no lumps remain. Stir in milk and half-and-half until smooth. Microwave at 100% power (700 watts) for 9 minutes or until bubbly and thickened, stirring every 3 minutes to keep the mixture uniformly smooth. Quick-cooking tapioca turns canned peaches and sugar into a sweet, soft flummery pudding, an old-fashioned British dessert.

Number Of Ingredients 4

1 can (15-1/4 oz.) peach slices, undrained
1/4 cup sugar
2 Tbsp. MINUTE Tapioca
1/2 cup water

Steps:

  • Reserve several peach slices for garnish, if desired. Mash peaches in saucepan. Stir in sugar, tapioca and water. Let stand 5 minutes.
  • Cook on medium heat, stirring constantly, until mixture comes to full boil. Pour into serving bowl or individual dessert dishes. Place plastic wrap on surface of dessert.
  • Refrigerate 2 hours or until ready to serve. Garnish with reserved peach slices and fresh mint leaves, if desired.
